Determination Of Polyphenol Oxidase (Ppo) Activity, Anthocyanin Contents And The Phytonutrient Changes In Blueberry Juice As Influenced By Different Processing Methods, Jelena Stojanovic

Inhibition of blueberry PPO activity by sodium benzoate, potassium sorbate and potassium metabisulfite and their influence on degradation of individual anthocyanins in an extract was studied. Maceration of blueberries was carried out at 55ºC for 1h with the addition of 0.1% sodium benzoate or with blanching pretreatment at 90ºC for 1min. After maceration pretreatments the extracted juice was processed with traditional hot fill pasteurization, high hydrostatic pressure (HHP) and pulsed electric field (PEF). Sodium benzoate and potassium metabisulfite were very effective PPO inhibitors in concentrations of 0.1% and 10ppm, respectively. Potassium sorbate was the weakest inhibitor, with 50% PPO remaining. …

Mattie Bradley was hired as the Food Service Director/Cafeteria Manager for the Weiner School District, Weiner, AR in 1996. She was a local restaurant owner who decided to sell her business and retire. When the local school district found itself in need of a Food Services Director, Ms. Mattie’s reputation as an excellent cook and manager got the attention of the school district and she was immediately offered the position. Working within the guidelines of the Arkansas School Nutrition Program, Mattie and her staff provide wholesome meals, both breakfast and lunch, to over 300 students daily. For many students these …

Youth Assets And Sexual Activity Among Hispanic Youth, Sharon Rodine, Roy F. Oman, Eleni Tolma, Cheryl B. Aspy

Journal of Youth Development

Hispanic females, ages 15-19, experienced the highest birth rates and smallest decline in birth rates over the past decade compared to youth of other racial/ethnic groups. This study’s purpose was to investigate relationships among a series of protective factors, or youth assets, and sexual activity in the Hispanic/Latino youth population. Data were collected from Hispanic youth and their parents (N=232 youth/parent pairs) in randomly selected households using in-person, in-home interview methods. Independent variables were nine youth assets; “never had sexual intercourse” was the dependent variable. Data were analyzed using logistic regression analysis. The purpose of the study was to describe the personal experience of individuals undergoing cancer treatment in an outpatient clinic by examining their perceived supportive care needs. The theoretical basis of the study lies in Alfred Adler's holistic view of human beings as unique and indivisible (1927/1954). Six individuals recently diagnosed with cancer were recruited from the same regional outpatient cancer clinic located at a major university medical center. A semi-structured interview process with open-ended questions was utilized to understand how people individually and collectively experience cancer and cancer treatment. Diabetic cardiomyopathy, a heart muscle disease independent of micro-/macro-vascular complications, is manifested by prolonged action potential duration and prolonged cardiac contraction and relaxation. Several rationales have been postulated for the pathogenesis of diabetic cardiomyopathy including reactive oxygen species generation, although the precise mechanism is still undefined. My central hypothesis is that oxidative damage is the ultimate cause of diabetic cardiomyopathy. In vivo: Mice with cardiac-specific overexpression of the antioxidant metallothionein (MT) were made diabetic with the β-cell toxin streptozotocin (STZ) and isolated myocytes were studied. Preparing Teens For Success: Building 21st Century Skills Through A 4-H Work-Based Learning Program, Theresa Ferrari, Nate Arnett, Graham Cochran

There is widespread concern that youth lack the skills essential for job success and are entering the workplace unprepared. To address issues of workforce preparation, Extension educators at an urban 4-H education center created the Job Experience and Training (JET) program, a work-based learning program for teens. JET is conducted over a six-month period, culminating in an eight-week summer work experience in collaboration with a local park district. Supervisors and teens completed a performance appraisal measure based on SCANS workforce skills at two points during the program. Social And Environmental Risk Factors For Hypertension In African Americans

This study tests the hypothesis that disparities of hypertension risk in African Americans is related to lead exposure, perceptions of racism, and stress, among urban (Roxbury, MA) and rural (Gadsden, FL) communities. Analysis of preliminary data from Phase I reveal 60% in Gadsden and 39% in Roxbury respondents self-reported having hypertension. In Gadsden 80% people did not know if their residence contained lead paint, compared to 45% in Roxbury. In Gadsden County, 58% of respondents reported experiencing racial discrimination in different settings compared with 72% in Roxbury. In regression analyses high cholesterol emerged as a significant predictors of hypertension in …

Applying The Framework: Positive Youth Development And Restorative Practices, Nancy Riestenberg

This article compares the framework of positive youth development and school connectedness with the practices of restorative measures applied to harm and rule violations in schools. Formal school discipline practices of in- and out-of-school suspension have the unintended outcomes of increases in maladaptive behaviors, with drawl or avoidance of school staff, stigma among peers and poor academic achievement, among others. Restorative practices provide accountability for harm, as well as the opportunity to guide youth in their development, regardless of their experience as an offender, victim or bystander. Essential oil of leaves of Cinnamomum chemungianum was obtained by hydro distillation and analyzed by GC-MS. The major components of the oil were Benzyl benzoate (66.36%), α-Terpine-4-ol (9.83%), Linalool (19.63%), and caryophyllene oxide (6.6%). Two compounds of the oils remained unidentified. The in vitro antibacterial activity was performed by agar disc diffusion method. It showed that maximum inhibition zone activity against staphylococcus aureus.

Wild plants play a vital role in the health security of Himalayan inhabitants and contribute significantly to their diet. In this report we investigated the nutritional composition of Artemisia maritime growing at high altitudes in the Himalayas. Aerial parts of the species showed the maximum amount of Vitamin C (228.09 mg/100 g), followed by phenolics (196.70 mg/100 g) and total carbohydrate (46.93 mg/100 g). The calorific value was approximately 254.91 mg/100 g in dry aerial parts of the species. As far as the nutritional composition is concerned, potassium content (1753.53 mg/100g) was highest as compared to nitrogen (1366.24 mg/100 g) …

Applying Experimental Economics To Obesity In The Family Household, Mariah D. Ehmke, Travis Warziniack, Christiane Schroeter, Kari Morgan

The objective of this study is to identify experimental economic tools that can be employed to explain the role of economic behavior in overweight and obesity in the household. We identify three economic experiments that can be used to understand how parent-child economic relationships relate to obesity. Loss aversion experiments are discussed as a tool to understand challenges some individuals face in achieving a healthy diet. Finally, testbed experiments are introduced as a means to test and understand new policies and incentives for better health at the household level.

Though access to primary care protects health and cuts costs, this report shows there aren't enough primary care doctors and nurses at health centers to meet the need, with some areas having almost none – a situation that cannot be solved just by expanding health insurance coverage. The report indicates the availability of a primary care workforce depends on where you live, and primary care clinicians are not locating in areas that need them most, especially low-income communities. The study includes state-level projections of growing patient needs expected to stretch the health care system in years ahead. It was conducted …
