Faculty Publications

The Physical Activity Questionnaire for Older Children (PAQ-C) is a validated self-report measure of physical activity widely used to assess physical activity in children (8-14 years of age). To date, however, the instrument has been validated in largely White Canadian samples. The purpose of the present article is to determine the pscyhometric properties of the PAQ-C for African American, European American, and Hispanic children. Two studies were conducted in which independent samples were administered the PAQ-C, along with varying indices of cardiovascular fitness, fatness, and psychological measures related to physical activity. Results showed that the reliability and validity of the …

A Dairy-Based Espresso Beverage Manufactured Using Three Different Coffee Bean Roasts, Charles A. Boeneke, John U. Mcgregor, Kayanush J. Aryana Feb 2007

A Dairy-Based Espresso Beverage Manufactured Using Three Different Coffee Bean Roasts, Charles A. Boeneke, John U. Mcgregor, Kayanush J. Aryana

Faculty Publications

The objective of this study was to evaluate the effects of coffee bean roast on the acceptability of a dairy-based espresso drink. Espresso coffee was made from freshly ground coffee beans with light-medium roast, between roast (between medium and dark) and dark French roast in order to show the influence of roasting on flavor. Samples were prepared by blending skim milk, soft-serve ice cream mix, ice and fresh espresso extracts. No significant differences (P < 0.05) were detected in total solids and fat content among treatments. Viscosity for the light-medium roasted beverage was significantly (P < 0.05) higher than the others. The beverage pH increased with increased darkening of roast. The beverage made with the light-medium roasted coffee had significantly (P < 0.05) higher preference scores for coffee flavor and overall flavor than beverages made with the between and French roasts. The between and French roasted treatments were shown to have a more intense coffee flavor by trained sensory panelists. Consumers in this study preferred a less intense coffee flavor. © 2007, Blackwell Publishing.

Food Insecurity And Subsequent Weight Gain In Women, Sonya J. Jones, Edward A. Frongillo Jr.

Faculty Publications

Objective: Cross-sectional data indicate that a relationship between household food insecurity and overweight exists among women in the USA. Cross-sectional data cannot determine if food insecurity leads to overweight as some have hypothesised. The purpose of the present study was to examine the relationship of food insecurity with subsequent weight gain in women using data from the Panel Study of Income Dynamics (PSID).

Design, setting and subjects:Panel data from the 1999 and 2001 PSID, a nationally representative sample of households, were analysed using multivariate regression procedures.

Results: Average weight gain among all women (n=5595) was 1.1 kg …

Climate Correlates Of 20 Years Of Trophic Changes In A High-Elevation Riparian System, Thomas E. Martin Feb 2007

Climate Correlates Of 20 Years Of Trophic Changes In A High-Elevation Riparian System, Thomas E. Martin

Wildlife Biology Faculty Publications

The consequences of climate change for ecosystem structure and function remain largely unknown. Here, I examine the ability of climate variation to explain long-term changes in bird and plant populations, as well as trophic interactions in a high-elevation riparian system in central Arizona, USA, based on 20 years of study. Abundances of dominant deciduous trees have declined dramatically over the 20 years, correlated with a decline in overwinter snowfall. Snowfall can affect overwinter presence of elk, whose browsing can significantly impact deciduous tree abundance. Thus, climate may affect the plant community indirectly through effects on herbivores, but may also act …

Root Lesion And Burrowing Nematodes In Western Australian Cropping Systems, Vivien Vanstone Feb 2007

Root Lesion And Burrowing Nematodes In Western Australian Cropping Systems, Vivien Vanstone

Bulletins 4000 -

Nematodes are common soil pests that feed on the roots of a wide range of crop plants in all agricultural areas of Western Australia, irrespective of soil type and rainfall. Nematodes multiply on susceptible hosts. Consequently, as nematode populations increase, crop production is limited. Cereal yield losses due to nematodes in Western Australia are in the order of 5 to 15 per cent per annum, but individual losses as high as 40 per cent have been recorded.

Mountain Beaver Home Ranges, Habitat Use, And Population Dynamics In Washington, W. M. Arjo, R. E. Huenefeld, D. L. Nolte

United States Department of Agriculture Wildlife Services: Staff Publications

The mountain beaver (Aplodontia rufa (Rafinesque, 1817)), endemic to western North America, is the only extant member of the family Aplodontidae. Limited information on movements and habitat use throughout the species' range is available. We radio-collared 41 mountain beavers to determine home ranges, dispersal, habitat use, and population densities on two managed forest sites in coastal Washington. Both sites were recently harvested for timber. The Donovan site (16.6 ha) was treated with herbicide before seedling planting and the Sylvia site (8.9 ha) was not treated. Mountain beaver home ranges (Donovan: 4.18 ± 0.81 ha; Sylvia: 1.39 ± 0.4 ha) …

Promoting Healthy Lifestyles Among Grandparents Raising Grandchildren In Riverside County, Chutima Ganthavorn, Joe S. Hughes

Journal of Extension

The project reported here sought to increase healthy eating and physical fitness among grandchildren and grandparents using a two-pronged approach: 1) increased fruit and vegetable consumption and 2) increased physical activity. Families consisting of grandparents and grandchildren met at a community center for eight Saturdays to participate in educational activities to increase their knowledge of the benefits of fruit and vegetable consumption and increased physical activity. Among the families completing the program, desirable changes were observed in both fruit and vegetable consumption and increased physical activity. However, a larger study involving more participants is needed to confirm these results.

Small Businesses And The Community: Their Role And Importance Within A State's Economy, Glenn Muske, Michael Woods, Jane Swinney, Chia-Ling Khoo

Journal of Extension

As communities focus on economic development, the common response has been the recruitment of outside industry. Left out has been the support for existing micro businesses and entrepreneurs. The research reported here explored the contributions of these smallest of the small business within the economy. For the study, 1,224 Oklahoma households were included. The research found that more than one in every five households owned and operated such a business. These businesses generated substantial gross income and employed at least one other person. These findings support including micro businesses in a comprehensive economic development plan.

Prevalence And Severity Of Anemia In Pediatric Hemodialysis Patients., Afshin Azhir, Jafar Nasiri, Alaleh Gheisari

Saudi Medical Journal

OBJECTIVES: To determine the prevalence and severity of anemia, and to identify independent predictors for anemia in children on hemodialysis. METHODS: We conducted this cross sectional study on 25 children aged 7-20 years receiving hemodialysis from September 2005 to January 2006 in Isfahan University of Medical Sciences, Isfahan, Iran. RESULTS: A total of 22 (82%) patients had hemoglobin (Hb) level of <11 g/dL (anemia) and 12 (48%) patients had Hb values <8 g/dL (severe anemia). The mean age was 15.5 ± 3.7 years. Mean time on hemodialysis was 20.44 ± 15.25 months. Anemia was more common and severe among children who were on dialysis <6 months. There was an inverse relation between severity of anemia and duration of hemodialysis (r=-0.465, p=0.019). Nearly all patients were treated with recombinant human erythropoietin (rHuEPO). Children with severe anemia received a slightly higher dose of erythropoietin (r=0.202 p=0.09). There was a correlation between serum albumin and Hb level (r=0.511, p=0.01). Intact parathyroid hormone (iPTH) levels were >200 pg/mL in 16 patients (66%) and >400 pg/mL in 9 patients (37.5%). There was a reverse correlation between iPTH level >200 pg/mL and Hb level (r=-0.505, p=0.046). CONCLUSIONS: The prevalence of anemia in our study appears to be …

Evaluation Of A Group Administered 24-Hour Recall Method For Dietary Assessment, Amanda R. Scott, Debra B. Reed, Karen S. Kubena, William A. Mcintosh

Journal of Extension

A group administered 24-hour food recall was developed by the Expanded Food and Nutrition Education Program of Texas to expedite dietary assessment of clients. The study reported here evaluated the group recall and an individual recall method. Data for one meal collected with the use of dietary recalls, either group of individual, were compared to observational data. Results suggest that the group recall may be at least as effective as the individual recall to estimate dietary intakes of subjects. The group recall method could be used by programs such as EFNEP to simplify and expedite dietary assessment of clients.
