Cooking For Kids!, Krystal Fullilove May 2006

Cooking For Kids!, Krystal Fullilove

Renée Crown University Honors Thesis Projects - All

My thesis, “Cooking for Kids!”, follows the current trends in exploring the problem of childhood obesity. The epidemic of childhood obesity has been steadily climbing for the past two decades. The number of obese children has reached its highest ever with over 9 million children and adolescents being classified as overweight or obese. The weight problem stems from decreased physical activity in children and eating foods that are not nutritious.

My personal answer to the obesity problem was to create a cookbook for children ages 8-13. I intended for parents to use the cookbook as a way to teach the …

The Food Fight Between The United States And Europe: Why Gmos Divide The West, Sarah A. Delude May 2006

The Food Fight Between The United States And Europe: Why Gmos Divide The West, Sarah A. Delude

Renée Crown University Honors Thesis Projects - All

Genetically Modified Organisms (GMOs) have quickly become an abundant source of food, especially in the United States. But as GMOs have grown, Europeans have raised major concerns over health and environment issues posed by GMOs. In 1998 the European Union imposed a moratorium restricting the approval of any new GMOs in Europe. But the United States saw this as a block to free and fair trade and has taken a case up with the World Trade Organization to resolve the matter. The final decision is past due, but the EU has already lifted the moratorium. Instead, it has imposed rules …

Sausage-Making, Pigs' Ears, And Congressional Expansions Of Federal Jurisdiction: Exxon Mobil V. Allapattah And Its Lessons For The Class Action Fairness Act, Adam N. Steinman May 2006

Sausage-Making, Pigs' Ears, And Congressional Expansions Of Federal Jurisdiction: Exxon Mobil V. Allapattah And Its Lessons For The Class Action Fairness Act, Adam N. Steinman

Faculty Scholarship

The year 2005 witnessed two watershed developments in federal jurisdiction: the U.S. Supreme Court's decision in Exxon Mobil Corp. v. Allapattah Services, Inc. and the enactment of the Class Action Fairness Act (CAFA). Allapattah and CAFA raise the same fundamental question: how should courts interpret a statute whose text would expand federal jurisdiction far beyond what Congress apparently intended? In Allapattah, the Court confronted this question in resolving an aspect of the supplemental jurisdiction statute that had deeply divided both the judiciary and academia. CAFA's expansion of federal jurisdiction over class actions will require courts to struggle with this question …

Catalase Activity Mediates The Inhibitory Actions Of 24,25 Dihydroxyvitamin D3, Sven L. Peery May 2006

Catalase Activity Mediates The Inhibitory Actions Of 24,25 Dihydroxyvitamin D3, Sven L. Peery

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

The steroid hormone 1,25-dihydroxyvitamin D3 [1,25(OH)2D3] rapidly stimulates the uptake of phosphate in isolated chick intestinal cells, while the steroid 24,25-dihydroxyvitamin D3 [24,25(OH)2D3] inhibits the rapid stimulation by 1,25(OH)2D3. Earlier work in this laboratory has indicated that a cellular binding protein for the 24,25(OH)2D3 is the enzyme catalase. Since binding resulted in decreased catalase activity and increased H2O2 production, studies were undertaken to determine if pro-oxidant conditions mimicked the inhibitory actions of 24,25(OH)2D3, and anti-oxidant conditions …

Development Of Innovative, Quick-Cook Legume Products: An Investigation Of The Soaking, Cooking And Dehydration Characteristics Of Chickpeas (Cicer Arietinum L.) And Soybeans (Glycine Max L. Merr.), Aoife Gowen May 2006

Development Of Innovative, Quick-Cook Legume Products: An Investigation Of The Soaking, Cooking And Dehydration Characteristics Of Chickpeas (Cicer Arietinum L.) And Soybeans (Glycine Max L. Merr.), Aoife Gowen

Doctoral

The primary goal of this research was to create new alternatives to the legume products currently available to consumers, i.e. canned and dry beans. Chickpeas and soybeans are well established in the Irish consumer market and possess excellent nutritional quality, such as high protein, fibre and phytochemcial content, low cholesterol and low glycaemic index (G.I.), and therefore have potential for classification as functional foods. The first stage of the research culminated with the development of quick-cook chickpeas and soybeans that could be stored in the chill cabinet or freezer. Water intake and textural attributes during soaking were investigated. Using non-linear …

Resisting Deep Capture: The Commercial Speech Doctrine And Junk-Food Advertising To Children, David Yosifon May 2006

Resisting Deep Capture: The Commercial Speech Doctrine And Junk-Food Advertising To Children, David Yosifon

Faculty Publications

The present Article is more precisely dedicated to analyzing, from a critical realist perspective, the wisdom and constitutional viability of one possible policy response to the obesity crisis: a ban on junk-food advertising to children.

This Article seeks not only to show that an effective junk-food advertising ban could pass constitutional scrutiny, but also to demonstrate, through the rigor of a constitutional analysis, the wisdom of such an approach to this substantial social problem. Simultaneously, my purpose is to show, in the context of a difficult First Amendment question, that the critical realist approach to legal theory is capable of …

Defining, Identifying, And Addressing Antisocial Behavior In Children Ages 4-7: The Perspectives Of Selected Elementary Principals In A Midwestern City School District, Audre Lynn Zaroban May 2006

Defining, Identifying, And Addressing Antisocial Behavior In Children Ages 4-7: The Perspectives Of Selected Elementary Principals In A Midwestern City School District, Audre Lynn Zaroban

College of Education and Human Sciences: Dissertations, Theses, and Student Research

Children and youth are becoming involved in violent behavior at ever-younger ages. Early appearing behavior problems in a child’s school career are the single best predictor of delinquency in adolescence, gang membership, and adult incarceration. The purpose of this research was to identify successful interventions used by selected elementary principals which positively changed antisocial behavior in a kindergarten child. Face-to-face interviews were conducted with six elementary principals. The participants were chosen based on their district’s view of their success and were also chosen due to the low social economic status of the children in their building. Seven themes emerged from …

The Effects Of Pre-Natal Exposure To Arsenic On Gene Expression In Fetal Rat Brain, Darryl L. Kelly May 2006

The Effects Of Pre-Natal Exposure To Arsenic On Gene Expression In Fetal Rat Brain, Darryl L. Kelly

Theses (Pre-2016)

The purpose of this study was to examine the effect of arsenic exposure during gestation on the expression of specific marker genes associated with cell proliferation and oxidative stress. Arsenic is a naturally occurring substance that can be found in soil and / water. Drinking water is the primary source of arsenic exposure, via underground wells or rainwater. A potential source of arsenic in our environment is a byproduct of copper smelting arsenic occurs naturally in copper ores. Both the experimental as well as epidemiological evidence suggests that arsenic exposure is a risk factor for various human diseases including cancer. …

Silicon Uptake In Hydroponically Grown Wheat, Ibukun Aladejana May 2006

Silicon Uptake In Hydroponically Grown Wheat, Ibukun Aladejana

Theses (Pre-2016)

Microbial contamination of hydroponics systems continues to be a major concern in life support experimental trials. Research shows that when silicon is readily available to monocotyledonous plants, it plays a large role in their growth, mineral nutrition, mechanical strength and resistance to fungal disease. Also, omission of silicon from solution cultures may lead to distorted results in experiments on inorganic plant nutrition, growth, development and responses to environmental stress. Silicon has been shown to accumulate in tissues of various dicotyledonous plants, for example, cucumber and in monocotyledonous plants for example rice and wheat. However, it remains unclear whether or not …

Down Regulation Of Dna Repair Genes Coupled With Oxidative Stress Exposed To Modelled Microgravity, Gulbanu Hashim May 2006

Down Regulation Of Dna Repair Genes Coupled With Oxidative Stress Exposed To Modelled Microgravity, Gulbanu Hashim

Theses (Pre-2016)

Research has shown that microgravity induces oxidative stress. In this study, we examined the testis from 6-8 weeks old BALB mice exposed to the ground hind-limb unloading model for 7 days. This model has been shown to simulate a microgravity environment. Total RNA was isolated from the testes of both treatment and control groups and Quantitative Real-Time PCR was performed to analyze the expression of genes controlling DNA excision repair pathways. Manganese superoxide dismutase (MnSOD) gene was examined to detect oxidative stress; and the PCNA (Proliferating Cell Nuclear Antigen) gene expression was analyzed to detect repair synthesis as well as …

Secondary N-Nitrosocarbamate Anions: Structure And Alkylation Reactions. A Dft Study, Vladimir Benin

Chemistry Faculty Publications

The current article reports theoretical studies (DFT: B3LYP/6-31+G(d)) on the structure and alkylation reactions of the anions of some secondary N-nitrosocarbamates, a class of ambident nucleophiles whose chemistry has been little explored. Several anions (1–4), with an increasing size of the carbamate alkyl (aryl) group were investigated, in an attempt to establish the influence of the size of that group on the thermal stability and regioselectivity of alkylation of the title anions. The conclusion is that thermal stability and the mode of reaction are affected significantly only in the presence of very large and branched carbamate groups. The thermal …
