A Comparison Of Consumer Sensory Acceptance And Value Of Domestic Beef Steaks And Steaks From A Branded, Argentine Beef Program, K. M. Killinger, Chris R. Calkins, W. J. Umberger, D. M. Feuz, Kent M. Eskridge Jan 2004

A Comparison Of Consumer Sensory Acceptance And Value Of Domestic Beef Steaks And Steaks From A Branded, Argentine Beef Program, K. M. Killinger, Chris R. Calkins, W. J. Umberger, D. M. Feuz, Kent M. Eskridge

Department of Animal Science: Faculty Publications

To determine consumer sensory acceptance and value of branded, Argentine (grass-finished, aged 30+ d) and domestic (U.S. grain-finished beef, aged 9 d) strip loins were paired based on similar Warner- Bratzler shear force values (P = 0.34) and similar marbling levels (P = 0.82). Consumers in Chicago, IL, and San Francisco, CA (n = 124 per city), evaluated one pair of Argentine and domestic steaks, and had the opportunity to participate in a silent, sealed-bid auction to purchase steaks matching the taste panel samples. Consumers were categorized into three groups based on overall acceptability ratings: 1) those who found Argentine …

Effects Of Food Quality On Growth And Carcass Composition In Lambs Of Two Breeds And Their Cross, R. M. Lewis, J. M. Macfarlane, G. Simm, G. C. Emmans

Department of Animal Science: Faculty Publications

The effects offood quality, breed type and sex (ram and ewe) on Iamb growth and carcass composition, and their changes throughout growth, were measured. The three breed typeswereScottish Blackface (B; no. = 24), Suffolk (S; no. = 28) and their reciprocal crosses (X; no. 33). The lambs had free access to a nutritionally non-limiting food, H, or a bulky food, L. Each lamb was scanned using X-ray computed tomography to measure the weights offat, lean and bone in the carcass at three degrees of maturity (0·30, 0·45 and 0·65) in live weight. Women’S Work, Child Care, And Helpers-At-The-Nest In A Hunter-Gatherer Society, Raymond Hames, Patricia Draper Jan 2004

Women’S Work, Child Care, And Helpers-At-The-Nest In A Hunter-Gatherer Society, Raymond Hames, Patricia Draper

Department of Anthropology: Faculty Publications

Considerable research on helpers-at-the-nest demonstrates the positive effects of firstborn daughters on a mother’s reproductive success and the survival of her children compared with women who have firstborn sons. This research is largely restricted to agricultural settings. In the present study we ask: “Does ‘daughter first’ improve mothers’ reproductive success in a hunting and gathering context?” Through an analysis of 84 postreproductive women in this population we find that the sex of the first- or second-born child has no effect on a mother’s fertility or the survival of her offspring. We conclude that specific environmental and economic factors underlay the …

Comparisons Of Angus, Charolais, Galloway, Hereford, Longhorn, Nellore, Piedmontese, Salers, And Shorthorn Breeds For Weight, Weight Adjusted For Condition Score, Height, And Condition Score Of Cows, Jesus Arango, L. V. Cundiff, L. Dale Van Vleck

Department of Animal Science: Faculty Publications

Breed differences for weight (CW), height (CH), and condition score (CS) were estimated from records (n &#;&#;12,188) of 2- to 6-yr-old cows (n &#; 744) from Cycle IV of the U.S. Meat Animal Research Center’s Germplasm Evaluation (GPE) Program. Cows were produced from mating Angus and Hereford dams to Angus, Hereford, Charolais, Shorthorn, Galloway, Longhorn, Nellore, Piedmontese, and Salers sires. Samples of Angus and Hereford sires were 1) reference sires born from 1962 through 1970 and 2) 1980s sires born in 1980 through 1987. The mixed model included cow age, season of measurement and their interactions, year of birth, pregnancy-lactation …

Biotin Deficiency Decreases Life Span And Fertility But Increases Stress Resistance In Drosophila Melanogaster, Anette Landenberger, Hadise Kabil, Lawrence G. Harshman, Janos Zempleni

Lawrence G. Harshman Publications

Biotin deficiency is associated with fetal malformations and activation of cell survival pathways in mammals. In this study we determined whether biotin status affects life span, stress resistance, and fertility in the fruit fly Drosophila melanogaster. Male and female flies of the Canton-S strain had free access to diets containing 6.0 (control), 4.8, 2.5, or 0 pmol biotin/100 mg. Biotin concentrations in diets correlated with activities of biotin-dependent propionyl-CoA carboxylase and biotin concentrations in fly homogenates, but not with biotinylation of histones (DNA-binding proteins). Propionyl-CoA carboxylase activities and biotin concentrations were lower in males than in females fed diets …

Nf04-606 Deep Fat Frying Turkeys, Carol J. Plate Jan 2004

Nf04-606 Deep Fat Frying Turkeys, Carol J. Plate

University of Nebraska-Lincoln Extension: Historical Materials

Deep fat frying began in the southern part of the United States and has gradually spread nationwide. Turkeys are the most common food prepared by this method. However, chicken, turkey parts (breasts, wings and thighs), and Cornish game hens may be deep fat fried. Deep fat frying results in a juicy product because the hot fat seals the outside and the skin becomes crisp.

This NebFact talks about the equipment, ingredients, preparation, frying, and safety of deep fat frying turkeys and other poultry.

Coping With Hard Times In Nw Iceland: Zooarchaeology, History, And Landscape Archaeology At Finnbogastaðir In The 18th Century, Ragnar Edvarsson, Sophia Perdikaris, Thomas H. Mcgovern, Noah Zagor

School of Global Integrative Studies: Faculty Publications

During a cooperative archaeological project in NW Iceland (Strandasýsla) involving the Icelandic National Museum and Hunter College of the City University of New York.1990 season, a small rescue excavation at the site of Finnbogastaðir generated a quantifiable collection of animal bones dating to the early modern period, mainly to the 18th century. The 18th c was a period of hardship in much of Iceland, with widespread tenantry, adverse climate, and degradation of many terrestrial landscapes posing severe challenges to poor farmers- perhaps most intensely in the Vestfirðir. The animal bone collection from Finnbogastaðir reflects a multi-stranded subsistence economy involving seals, …

The Right To Health, Sarah Friedmann Jan 2004

The Right To Health, Sarah Friedmann

Human Rights & Human Welfare

In the human rights discourse and practice the right to health has been and continues to be a contentious arena. Primarily located within legal frameworks that focus on civil and political rights, the right to health is more frequently being used to challenge abuses of health by invoking social and economic rights, even though this places the right to health on slippery terrain that is not as internationally accepted as civil and political rights.

Access To Health, Natalie Huls Jan 2004

Access To Health, Natalie Huls

Human Rights & Human Welfare

Access to health is an often-overlooked aspect of the right to health. Without practical access, the right to health becomes an empty promise. International human rights conventions and declarations do not directly mention access to health, but the above comment on the International Covenant on Economic, Social, and Cultural Rights does address the issue.
