This study compared the effect of packaging method (0.4% carbon monoxide, 80% oxygen or vacuum), storage time (7, 14 and 21 days) and internal cooking temperature 49, 57, 66, 71 and 79°C) on color and thiobarbituric acid (TBA) values of top sirloin steaks and ground beef patties. Ground beef was obtained from 3 different sources (chuck, loin and trim). All samples were stored at 2°C for 7, 14 and 21 days.

The effects of 1,25(OH)2D3, PTH and 25(OH)D3 on phosphate or calcium uptake were studied in cultured, adherent chick enterocytes over a period of 10 min after hormone addition. Time course studies of cells treated with 130 pM 1,25(OH)2D3 showed an increase in 32P uptake as early as 3 min. Similar studies with 65 pM bPTH(l1-34) resulted in an increase in 45Ca uptake only if the cells had been cultured in serum. (OH)D3, which is not firmly established as an active metabolite of vitamin D, was shown to increase …

This study examined factors that influence marital satisfaction in couples raising a child with cerebral palsy. The theoretical frameworks for this study were drawn from family systems theory and the social ecology model.

Twenty-eight married couples raising a child between the ages of 3-17 years, with a diagnosis of cerebral palsy, comprised the sample for this study. Participants were classified as raising a child who is mildly/moderately or severely impaired by cerebral palsy. Participants were recruited through referrals of professionals working in local organizations that provide services and support for persons with disabilities and their families.

Research on parenting is increasingly being studied from a biological perspective. An understanding of the biological mechanisms leading to individual differences in maternal behaviors can help direct research toward more focused intervention resulting in closer mother-infant attachment relationships, and therefore, positive child outcomes. This research was a preliminary study that tested mothers' ability to taste a harmless chemical, 6-n-propylthiouracil (PROP), in relation to their responses to a questionnaire about the emotional investment they experience towards their infant. The Ayuquila River watershed is important to western Mexico because of its biodiversity, physiography, fisheries resources, and water production. However, human activities are continuingly affecting natural resources within the basin. Soil erosion, as result of land use change, agriculture in steep land, extensive grazing activities and forest fires; and water diversion and pollution of the Ayuquila River are two relevant issues that have affected the natural resources of this watershed.

Physicians' Health Promotion Practices For Mexican American Patients At Risk For Type 2 Diabetes, Holly Day Mcfarland

The relationship between physicians' perceptions of Mexican American patients at risk for Type 2 diabetes and the subsequent care they provide was studied. Primary care providers responded to questionnaires about their health promotion practices. A 2x2 analysis of variance was used to identify differences in reported treatment of patients that accounted for both ethnicity and risk. Results indicated Hispanic patients received less time with their providers than Caucasian patients regardless of risk for Type 2 diabetes. Both groups received about the same reported care in terms of information gathered for diagnosis, diagnosis made, and treatment regimen prescribed. Data also suggested …

Obesity has reached epidemic proportions in American society. However, not enough attention has been given to weight change by temporal and dynamic detailed social characteristics, controlled for unobserved heterogeneities nested in county and state. Using the National Longitudinal Survey Youth (NLSY79), this study examined weight change and its development into unhealthy conditions like being overweight or obese, in relation to change in social characteristics including life course events. This study also examined the social characteristics of remaining at a normal weight through all time intervals over a 19-year period. Spruce beetle outbreaks are the primary biotic disturbance affecting forests in the Intermountain spruce-fir zone. Major snow avalanches can produce large quantities of host material for spruce beetle colonization; however, few studies have examined the influence of avalanche disturbance on outbreak initiation. The purpose of my research was to investigate potential relationships between these two disturbance agents. In the first study, I used dendro-ecological analyses to date major avalanche years on the Wasatch Plateau in south-central Utah, and then determined what climate factors were associated with avalanche occurrence. The sagebrush steppe is one of the most extensive vegetation types in the western US and an important habitat for wild and domestic herbivores. When sagebrush dominates, however, forage and habitat quality decline. Although sagebrush is nutritious, its forage value is reduced by terpenes. A better understanding of how terpenes limit intake is vital for increasing consumption of sagebrush and for enhancing and maintaining biodiversity in the sagebrush-steppe.

Research on the efficacy of drug courts for substance-abusing criminal adult offenders has generally found reduced recidivism rates, and both actual and potential cost savings to the public. However, outcome research on juvenile drug courts has been limited. Furthermore, little research has examined variables that may be predictive of outcome in this population. This study reports graduation and rearrest rates for a sample of juvenile drug court participants in Salt Lake City, Utah. The relationship between religion and eating concerns is receiving increasing empirical attention. The current investigation sought to examine the relationship between eating attitudes and religious orientation, utilizing the fourfold typology of religious orientation. A curvilinear relationship was found between religious orientation and eating attitudes among a subclinical college population and a clinical population of individuals receiving inpatient treatment for eating disorders, particularly among extrinsically orientated individuals with diagnosis of bulimia nervosa.

This paper examines this plethora of questions and attempts to move the theory of human development in Africa beyond the traditional confines of its macroeconomic and political propositions. The paper assesses the concept of human development within the broader discourse on the role of human rights in global development, highlighting the overall African context of the subject. Against the backdrop of remarkably increasing scholarly efforts aimed at establishing human development as a human rights question, this paper evaluates the capacity of existing and emerging human rights frameworks relevant to Africa, and identifies viable trajectories for result-oriented human development actions.

The Use Of Habit Reversal Training In The Treatment Of Trichotillomania: A Single Subject Design, Courtney M. Jones

The purpose of this study was to explore the effectiveness of self-monitoring and a multicomponent behavioral intervention on the treatment of Trichotillomania (TTM). The subject in this study was a 12-year-old African American female who has demonstrated hair-pulling behavior for several years. The interventions that were implemented were journaling and Habit Reversal Training (HRT). The types of measurements that were used were direct observation, daily logs, and standardized questionnaires. The standardized assessments were the Multidimensional Anxiety Scale for Children (MASC, March, 1998) and the Trichotillomania Severity and Impairment Scales (Swedo et al., 1989). Effect Of Cryptobiotic Crust Type On Microarthropod Assemblages In Piñon-Juniper Woodland In Central New Mexico, S. L. Brantley, U. L. Shepherd

Cryptobiotic crusts make up an important part of the ground cover in arid systems. Along with their roles of retarding soil erosion and enhancing soil fertility, crusts may also be supporting local and regional arthropod biodiversity. We inventoried arthropod species in mossy, lichen, and mixed (lichen and mossy) cryptobiotic crusts at 2 sites in central New Mexico piñon-juniper habitat. We collected 240 crust samples and used a heptane flotation technique to extract the microarthropods. We found 39 species of microarthropods and small macroarthropods, with significantly fewer species on lichen. Species richness was higher in March than in August, but diversity …

Feeding Behavior And Performance Of A Rabbitbrush Leaf-Beetle (Trirhabda Lewisii) Feeding On Chrysothamnus Nauseosus Regrowth After Fire, Ann L. Herzig, Cynthia Skema

Western North American Naturalist

Fire often positively affects the growth and nutrient content of plants regrowing after a burn. These changes have been associated with preferential feeding by herbivores in burned areas. In this study in southeastern Wyoming, Chrysothamnus nauseosus Pursh (rubber rabbitbrush) regrowing after a fire produced new shoots with a distinct growth form. Shoots were longer than those on unburned control sites and had longer leaves with longer internodes between leaves. We conducted feeding trials to detect whether C. nauseosus shoots regrowing after fire were nutritionally superior to shoots from unburned plants for the specialist leaf beetle, Trirhabda lewisii Crotch (Coleoptera: Chrysomelidae). …

Selection Of Ants By The American Black Bear (Ursus Americanus), Janene Auger, Gary L. Ogborn, Clyde L. Pritchett, Hal L. Black

Western North American Naturalist

We examined selection of ants as food by black bears (Ursus americanus) in Utah by comparing the genera of ants we sampled from study plots in 5 vegetation types with those found in bear scats. In the plots we found 641 ant colonies representing 18 genera. Five genera comprised 85% of all colonies sampled: Formica, Lasius, Camponotus, Tapinoma, and Myrmica. Thirteen genera were found in scats, but 99% were composed of the same 5 listed above. Limited utilization of some ant genera by black bears may reflect body size, colony size, nest type, and presence or absence …

Nonfat dry milk (NDM) and powdered whey beverages are available at the retail level, packaged in No. 10 cans in a reduced oxygen atmosphere to prolong shelf life. The objective of this research was to determine the sensory and nutritional quality of these dried milk products at the time of purchase. In the 10 brands tested, wide variation existed in headspace oxygen, can seam quality, sensory quality, and vitamin A (with 6 of 10 brands entirely lacking the vitamin).
