Enzymatic Nixtamalization: An Improved Corn Masa Flour Production Process, Deepak Sahai, David S. Jackson

Department of Food Science and Technology: Public Access Records

A major concern during commercial masa or instant masa flour production is the proper disposal of the excess waste water generated from the nixtamalization process. Nixtamalization causes partitioning of corn solids between nixtamal and waste water. It has been estimated that corn solids loss during nixtamalization varies between 5-14% depending on corn type & quality. Nejayote waste is highly alkaline, with high chemical and biological oxygen demands (BOD & COD) and is considered an environmental pollutant. A typical corn nixtamalization facility processing 200 US tons of corn every day, uses over 50 gallons of water per minute and generates nearly …

The Frat was the official member publication of the National Fraternal Society of the Deaf (NFSD). First established in 1902, the publication ran for just over a century, until its closure in 2006.---NFSD was an insurance business established in 1901. Its purposes were to provide insurance to mainly Deaf members, to serve as an advocate for the Deaf, and to provide community service and recreational opportunities through divisional activities. The existing insurance coverage was transferred to the Catholic Order of Foresters in 2005. The NFSD disbanded in 2007.---The Frat's main purpose was to keep members apprised of the activities of …

What is a well-intentioned astronomy instructor to do? There is no argument that experience with the real world is desirable in any astronomy course, especially the introductory classes that fulfill the science distribution requirements at many colleges and universities. Though it is a simple matter to take students out of doors, show them the motions of the Sun, Moon, and stars, and have them squint for a few seconds at Saturn's rings through a telescope, these activities represent only a small portion of the subject matter of modern astronomy. The Exploration Of Utilization Of Traditional Chinese Medicine Among People With Spinal Cord Injury In Central Taiwan, Hong-Li Lee, Liu-Ing Bih

Rehabilitation Practice and Science

People with spinal cord injury often asked help to manage the symptoms such as spasticity, inco-ntinence of sphincter or paresthesia with combination of Western medicine and traditional Chinese medicine. In order to explore the popularization of, perceived effectiveness of traditional Chinese medicine, and difficulty to be faced when utilizing traditional Chinese medicine among people with spinal cord injury in central Taiwan, we collected and analyzed 115 effective questionnaires of them who had ever used Chinese medicine after injury. The results showed: the ways utilizing traditional Chinese medicine most were prescribed Chinese herbs (27.4%), acupuncture (25.6%) and Chinese massage (20.0%), the …
