Latter-day Saint (LDS) families with two parents and two children between the ages of 6-16 were recruited to participate in a weekly nutrition Family Home Evening (FHE) study and randomized into either a control group or an intervention group. Each family had to complete a nutrition screener prior to and after completing 6 weekly FHE lessons in the family's home environment. Online nutritional instruction was given to the intervention group for their FHE lessons, while the control group studied typical religious topics. Data taken from the nutrition screener were collapsed into a healthy or unhealthy diet score by averaging scores …

The wild turkey is endemic to North America and has played a role in human cultures past and present. However, with the turkey's elusive behavior some aspects of its ecology are challenging to understand. Diet is one of these difficult aspects to study. The purpose of this study was to determine the diet selection of wild turkeys in central Utah using non invasive stable isotope technology. We hypothesize that turkey diet is highly specific, that consumption of specific plant species correlates with the needs of the individual turkey, and that stable isotope analysis will reveal patterns in annual dietary intake. …

Chlorella vulgaris was cultured in microbioreactors using Bold’s Basal medium at varying nitrogen and phosphorus concentrations to define nitrogen and phosphorus utilization standards. Nutrient concentration was varied between 137 mg/L to 7.33 mg/L NO3-N and between 55.2 mg/L to11.0 mg/L PO4-P in five test scenarios. All were grown under a constant photoperiod at 22±2 °C and a mixture of 4 to 10% carbon dioxide/air. Maximum yield and growth rate occurred with the highest initial nitrogen and phosphorus concentrations. The micro-alga Chlorella vulgaris was cultivated under a variety of environmental conditions in various culture media solutions to assess and optimize growth rate and biomass productivity. Efforts during this work investigated growth parameters at the micro-scale in an air-lift bubble system with the goal of interpreting performance characteristics that can be applied to a larger serpentine tubular Photo-bioreactor. Maximum growth rates and biomass yields were 0.65 d-1 and 2.003 g biomass/L and achieved in seven days using urea in de-ionized water under a 24:0 Photoperiod (Light:Dark). A large percentage of Americans own pets which may impact their health. This study examines pet ownership’s effect on well being in older adults looking at race/ethnicity. A sample of 6,565 older adults (>60) was selected from the Third National Health and Nutrition Survey. Pet owners comprised 28.3% of the sample. The theories of symbolic interaction and social integration were used to examine pet ownership’s effect on physical components of well-being. The descriptive results showed statistically significant differences in age, education, income, and marital status between pet owners and non-pet owners. The need for improved treatment for patients with eating disorders is indicated from outcome studies and clinicians' reports. In order to understand the patient's motivation to engage actively in treatment, as well as the factors that contribute to successful outcome, it is important to attend to patients' perspectives on treatment. The author critically reviewed studies on patients' views and 10 key treatment elements were identified: the therapeutic relationship, provision of social support, collaborative treatment, focus on emotions, focus on underlying issues, inclusion of psychoeducation, therapist's knowledge of EDs, behavioral interventions, appropriate use of medication, and therapist's competence in family dynamics. …

This study examines the overall results of the Physical Fitness Test (PFT) and the six fitness areas of the PFT, academic achievement, demographics and self perceptions and the potential impact on students' performance on the PFT. While academic expectations are increasing, the adolescent obesity rate is also increasing, producing a decline in the fitness levels of adolescents. There are a variety of assessment instruments available today that are widely used to assess the intellectual abilities of children. Specific considerations should be made when using these instruments to assess the deaf and hard-of-hearing population. This critical review of the literature begins with a brief overview of the D-HH population, a general history of intellectual assessment, and assessment considerations that are specific to the D-HH population. Information obtained from available literature regarding the internal consistency of six assessment instruments is presented. What is happiness? What creates or leads to the experience of happiness? Questions like these are fundamental in understanding human functioning in terms of strengths, psychological resiliency, positive emotions, and well-being. However, many question whether current definitions of well-being are shaped by Western Euro-centric perspectives of happiness, negating "other" patterns of well-being (Ryff, Keyes, & Hughes, 2003). The mortality rate due to behavioral causes among veterans diagnosed with chronic post-traumatic stress disorder (PTSD) is much higher than the rate found among the normal population. In particular, veterans diagnosed with chronic PTSD die more frequently from conditions related to substance abuse, such as Hepatitis C, blood diseases, violence, aggression, and suicide. In addition, rates of behaviorally-related diseases such as obesity, diabetes, and heart disease are high among veterans diagnosed with chronic PTSD. The agents that induce apoptosis in cancerous cells are considered as potential candidates for cancer therapy. Inositol polyphosphates, the naturally occurring compounds, regulate diverse cellular processes including induction of apoptosis in certain cancerous cells and hence can be considered as potential anticancer agents. The aim of this research dissertation was to establish firmly the role of inositol polyphosphates in induction of apoptosis by examining their mechanism of action. Purpose: The substantial impact of indoor air quality and environmental hazards in the home on one’s health has long been recognized in the field of public health. This cross-sectional study investigates the risk between home based hazards, specifically lead, and respiratory health in children. The objective of this study is to examine the extent to which children testing positive for blood lead exposure are at an increased risk for having poor respiratory health. This thesis assesses climate change during the Hypsithermal Climatic Interval through the analysis of freshwater mussel remains from archaeological sites in Eastern North America. Modern climate data was used as a model to test the mosaic consequences of climate change. Freshwater mussels: can be used as indicators of precipitation by examining changes in overall size through time: larger mussels are found in larger streams, while smaller mussels are found in smaller streams. Breast and prostate cancer incidence and mortality have been steadily decreasing. Reasons for these reductions may be related to increased rates of cancer screening and other factors such as improvements in diet, including consumption of fruits and vegetables. We wanted to determine if individuals who get screened for breast and prostate cancer are more or less likely to consume adequate servings of fruit and vegetables. An estimated 39 million m3 of timber was damaged across the Southeast Forest District of Mississippi due to Hurricane Katrina. Aggregated forest plot-level biometrics was coupled with wind, topographical, and soil attributes using a GIS. Data mining through Regression Tree Analysis (RTA) was used to determine factors contributing to shear damage of pines and wind-throw damage of hardwoods. Results depict Lorey’s Mean Height (LMH) and Quadratic Mean Diameter (QMD) are important variables in determining the percentage of trees and basal area damaged for both forest classes with sustained wind speed important for wind-throw and peak wind gusts for shear. Effects Of Various Fumigants And Alternative Processing Methods On The Safety, Volatile Composition, And Sensory Quality Of Dry Cured Ham, Ramandeep Kaur Sekhon

Randomized complete block designs with three replications were utilized to evaluate the effects of fumigation with sulfuryl fluoride (SF) (0, 12, 24, 36 and 72 mg/L), phosphine (PH3) (0, 200 and 1000 ppm at 48 hr), methyl bromide (MB) (0, 4, 8, 16, and 32 mg/L for 48 hr), carbon dioxide (CO2) (0, 60% at 48 hr and 60% at 96 hr) and ozone (O3) (0 ppm and 175 ppm for 48 hr) on the volatile flavor compound concentrations in dry cured ham. Fluoride and SF concentrations increased (P < 0.05) in dry cured hams as SF fumigation concentration increased, but all samples contained fluoride and SF concentrations below the legal limits of 20 and 0.01 ppm, respectively. Also, as phosphine fumigation concentration increased, the residual concentration of phosphine also increased in the hams (P < 0.05), but all samples contained levels that were lower than the legal limit of phosphine in stored food products (0.01 ppm). Minimal differences existed in the presence and concentration of aroma active compounds in fumigated hams when compared to the control. Triangle tests indicated that consumers could not discern (P > 0.75) between the control hams and the fumigated hams. This study …

Preservation of giant pandas, Ailuropoda melanoleuca, is a worldwide concern. This study was designed to examine dietary and reproductive challenges associated with panda management. Phytoestrogens are natural plant compounds that mimic estrogen and often negatively impact mammalian reproduction. Phytoestrogens in bamboo, the panda’s primary food source, is unknown. Here, estrogen radioimmuno- and receptor-binding assays revealed estrogenic activity in three species of Phyllostachys bamboo. These results present indirect evidence of phytoestrogenic mimics in bamboo, but their relevance is still unknown. Grain sorghum provides energy-rich seeds for waterfowl. I conducted experiments in 22 sorghum fields in Arkansas, Mississippi, and Louisiana during falls 2006 – 2007 to evaluate abundance of ratoon grain (i.e., second crop after harvest), waste grain, and natural seeds. I also conducted surveys of wintering waterfowl in flooded croplands and moist-soil wetlands to evaluate if ducks and geese differentially used habitats. Fertilized plots in 2007 produced >4 times more ratoon grain (x = 219.57 ± 39.65 [SE] kg/ha) than other treatments. An in vitro continuous culture rumen fermentation experiment was conducted to evaluate digestibility of annual ryegrass either fed alone or annual ryegrass supplemented with hay, corn, or soybean hulls. Nutrient disappearance of feedstuffs offered were not different (P > 0.05) as a percentage of the diet however there were differences (P < 0.05) in amounts of individual nutrients digested for each treatment. Ammonia-N concentrations of culture samples were less (P < 0.05) for vessels fed corn as a supplement however there was no difference (P > 0.05) among vessels fed either ryegrass alone or supplemented with hay or soybean hulls. This may indicate a more efficient use of available nutrients from annual ryegrass when corn was supplemented.

To better understand the facets of nutrient utilization, a series of in vivo and in vitro studies were undertaken to elucidate the effect of supplementation on utilization of moderate-quality bermudagrass hay and to identify mechanisms to evaluate the role of rumen bacterial populations on feedstuff utilization. By building an expected utility maximization model for integrators contracting with growers of varying bio-secure levels, one can investigate the relationship between the bio-secure choice of the poultry industry and their production performance. Approximately 63 percent of the U.S. adults are overweight or obese, however all groups are not affected equally. Little research has observed the obese compared to the overweight. This study aims to examine how measures associated with health differentially influence overweight and obesity. Data from the 2007 BRFSS were analyzed using logistic regression to assess variations due to socioeconomic, demographic, and health risk measures on overweight and obesity.
