Carboxymethyl pachymaran (CMP) is a carboxymethylated modification product of the water-insoluble polysaccharides from Poria cocos. It has many biological activities such as immune regulation, antibacterial, anti-inflammatory, anti-tumor, anti-oxidation, liver damage protection and intestinal flora regulation. It has a wide application prospect in functional food, active molecular carrier, medicine and other fields. In this paper, the research of CMP at home and abroad in recent years was focused, the biological activity, preparation, identification and application development of CMP were reviewed, and the future development direction of CMP was prospected.

Cultivated meat, as an innovative substitute for conventional meat, is widely recognized as an effective solution to challenges such as meat supply shortages, environmental impacts, and animal welfare concerns. Based on the production technology used, cultivated meat can be categorized into three types: plant-based meat, cell-cultured meat, and microbial protein meat. This review explores the production processes and sensory quality enhancement techniques for these three types of cultivated meat, analyzes their respective technological advantages and challenges, and provides a forecast on the future development trends of cultivated meat products.

The natural vegetable oil known as Korean pine seed oil is well-known for its high content of being various unsaturated fatty acids, including oleic, linoleic and pinopuric acid. It has been proved that Korean pine seed oil has several physiological benefits such as lowering blood lipids, enhanceing immunity, anti-inflammation, anti-oxidation, enhancing insulin sensitivity, and anti-tumor. This review summarized the extraction methods and pharmacological effects of Korean pine seed oil in recent years, and put forward good suggestions for its application in edible oil and industrial production.

Objective: Explore the cryoprotective mechanism and structure-activity relationship of antifreeze peptides derived from silver carp parvalbumin. Methods: Using differential scanning calorimetry and molecular dynamics simulation to compare activity, structure and mode of action of two typical peptides. Results: Pv-AFP 1 (KAADSFNH KAFFAKVG) had a stable α-helix structure, while Pv-AFP 2 (KAADSFNHKAF) tended to exhibit random coil. The thermal hysteresis activity of Pv-AFP 1 was 0.87 ℃, which was higher than Pv-AFP 2 (0.74 ℃). Methods: The content of γ-aminobutyric acid (GABA) and the activity of glutamate decarboxylase were used as indicators to study the effect of enrichment conditions on GABA content. Based on the optimal parameters, GABA content in each part of the grain was analyzed to reveal the migration law of GABA. Methods: Oat coarse grains, oat flakes, and oat flour were respectively produced through mechanical progressing methods such as steel cutting, table pressing, and grinding. Objective: Determine the appropriate soymilk concentration and slurry depth to provide a theoretical reference for the efficient and high-quality production of yuba. Methods: The effect of soymilk solids concentration and slurry depth on the yield, film-forming rate, nutrient contents, mechanical properties, cooking loss rate, and rehydration ratio were investigated. Objective: This study aimed to prepare a kind of mushroom paste with Lentinus edodes, Pleurotus eryngii and Agaricus bisporus as raw materials by enzymolysis with cellulase. Methods: The response surface method was used to optimize the optimal enzymatic hydrolysis process of the mushroom paste with amino acid nitrogen content as the index. Results: The optimal enzymolysis conditions were as follows: enzyme dosage 0.6%, pH 6, enzymolysis temperature 50 ℃, solid-liquid ratio 1∶30 (g/mL). Because of high moisture content, blueberries are susceptible to disease and insect infestation leading to corruption and deterioration, which has serious influence on the shelf life of blueberry fruits. This article summarizes the cause mechanism of postharvest quality deterioration of blueberry fruits and the research progress of blueberry preservation technology at home and abroad, mainly including physical, chemical and biological preservation methods; and emphasizes the application of biological methods in the postharvest preservation of blueberries.

Objective: The preparation method of matrix reference materials of bifenthrin and cyhalothrin pesticide residues in green tea was established. Methods: Green tea samples were sprayed with biphenylthrin and cyhalothrin. The samples were crushed, screened, homogenized and bottled. After the homogeneity and stability tests, the quantity value was determined by three laboratories, and the uncertainty was evaluated. Results: The amount values of bifenthrin and cyhalothrin in green tea were (0.185±0.019 7) and (0.207±0.046 6) mg/kg with k=2, and the confidence interval was 95%. Objective: Obtaining hhigh-yield pprotease-pproducing bacterial resources through fermentation of advantageous protease-producing strains derived from Shiping stinky tofu. Methods: Single-factor and response surface experiments were used to optimize the culture medium and fermentation conditions. Using casein as the substrate, the effects of temperature, pH, metal ions and organic reagent on the protease activity and stability of strain JX-11 were investigated using enzymology techniques. Objective: The objective of this study is to investigate the heavy metal content in sediment and various organs of Hunan lotus seed in a planting area, as well as to explore the characteristics of heavy metal accumulation and transfer in Hunan lotus seed. Methods: A typical planting area in Hunan Province was selected for this research. The contents of Cd, Cr, Pb, Ni, Cu, Zn and Mn were measured using an inductively coupled plasma emission spectrometer. Objective: A surface evaporation concentration device were designed to concentrate thermosensitive feed liquid at low temperature under normal pressure with low energy consumption. Methods: Based on an introduction to the working principle of the device, the basic equations of the device were given. The changes of volumetric evaporation flux and energy saving ratio with flow rate of the feed liquid, feed liquid temperature, sweeping gas flow rate, sweeping gas temperature were calculated and analyzed. Objective: This study aimed to solve the problems of yellowing, discoloration and quality preservation of broccoli after harvesting. Methods: Broccoli was fumigated with chlorine dioxide gas at different mass concentrations (0,0.2, 0.5, 1.0, 1.5, 2.0 mg/L) at 23 ℃, and the sensory, color, yelination grade, physiological and biochemical indexes and related browning enzyme activities of broccoli were determined after 0,2,4,6,8 days of storage. Objective: This study aimed to demonstrate the potential immunomodulatory activity in mice of rice immunopeptide GBP1 (NSVFRALPVDVVANAYR) screened previously. Methods: Animal experiments were conducted to investigate the immunomodulatory mechanism of GBP1 peptide. RNA-Seq was used to sequence the transcriptome of mouse spleen tissues before and after GBP1 peptide treatment, and the molecular mechanism of GBP1 peptide immunomodulatory effect was explained. Objective: This study aimed to determine the extraction solvent and compare the distribution of functional ingredient and antioxidant activities in different parts of Penthorum chinense pursh. Methods: the total phenolic content, total flavonoid content, antioxidant capacity and individual phenolic compounds content in Penthorum chinense pursh were determined and analyzed. Results: The total phenolic content, total flavonoid content increased and then decreased with the increase of solvent concentration. The seven main phenolic compounds (catechin, rutin, pinocembrin-7-O-glucoside, quercetin, kaempferol, pinocembrin and thonningianin A), ABTS radical scavenging ability, and ferric ion reduction ability were the highest in 80% ethanol extract.
