Of this individualistic type if George Meredith, one of the greatest of the nineteenth century writers, if not foremost among them.

The most important non-protein nitrogenous constituents of milk are urea, creatinine, creatine, and uric acid. Urea is the diamide of carbonic acid and is the chief end-product, so far as nitrogen is concerned, of the physiological metabolism of the proteins of the foods and tissues. It has long been considered a matter of greatest importance to ascertain in what organ or tissues urea is formed. This paper is involved in a study of the intrigues of Kentuckians for the securing of the Mississippi River as a free waterway for the marketing of their produce and the consequent improvement of the condition of Kentuckians in every way. The conspiracies of such men as Blount and Burr have not been included because there was no real and vital connection of Kentuckians with their schemes. It is known that carbohydrates on oxidation break into fragments which later are oxidised, or reduced, according as the conditions of the bodily functioning may favor, and it is in this process or reaction of the carbohydrate molecule that the formation of pyruvic acid probably takes place. From this point the pyruvic acid molecule on being fully oxidised would give the products carbon dioxide and water, and partial oxidation would give carbon dioxide and other products.

This problem originated in an attempt to make methyl glyoxal in quantity. Several methods of making methyl glyoxal are mentioned in the literature but in none of them is acetone used as a starting point. Since this seemed a new field it was decided to chlorinate acetone hoping to obtain some product which might be easily converted into methyl glyoxal. Technical acetone was purified and dry chlorine was passed through this warm acetone in the presence of sunlight. During the process three distinct steps were noticed in the reaction. The Crow Creek Indian Reservation is located in South Dakota, bordering the east side of the Missouri River, about forty miles below Pierre, the Capital. In fact, a part of Hughes county lies in the Big Bend District of the reservation, and the south end of Hyde County and the west end of Buffalo County make up the rest of it - in all 313,304,23 acres or 489.5 square miles - about 13.5 townships. As far as I have been able to determine from the scant literature at hand, no attempt has been made as yet to determine the percentage of non-protein nitrogen in milk by a procedure simple enough for use as a clinical method. This problem was suggested to me by Dr. Charles J. Robinson, with the request that I should base my method on some of the methods of determination of the non-protein nitrogen portion of other physiological fluids.

The observation of butter under different storage temperatures is interesting because of its practical bearing upon the factory phase of the dairy industry. Admittedly butter must be stored. It is consumer steadily. It is produced in varying quantities. It is a perishable product. Economic conditions have created the butte store house whereby uneven supplies may be more evenly distributed. Under all practical storage conditions butter deteriorates. Chemical changes occur, more or less pronounced, injuring the quality and thereby affecting the market value. So far as the author has been able to find, there are no published analyses showing the relative composition of the most important used meat proteins, beef, pork and mutton, the Osborne and co-workers have published analyses of the water insoluble proteins of the muscle substance of ox, chicken, fish, and scallop. This paper gives the results of analyses, by the Van Slyke method, of the water insoluble fat-free proteins of beef, pork, and mutton.

The analyses reported here were accordingly undertaken when a somewhat unusual opportunity for obtaining chylous fluid presented itself, with the object of adding to the data already published, confirmation or correction of the usually accepted ideas regarding the composition of chyle. A growing interest has manifested itself within the past two or three years in "phytin" and "phytic acid", and in some of the compounds of the latter. Posternak first isolated this substance from the seeds of the red fir, pumpkin, pea, bean, white and yellow lupine and potato. Patten and Hart obtained the substance from wheat bran, and Hart and Tottingham found it in corn meal, oats and barley. The organic phosphorus materials obtained by alcoholic precipitations of aqueous or dilute acid extracts from these various sources are not identical, but ultimate analyses show a fair degree of similarity. The earliest quantitative analyses of food materials which we have found are those of potatoes reported by George Pearson in England, 1795. In 1805, Einhoff made similar analyses of potatoes. He also determined several of the constituents of the ash. Liebig and his associates Playfair, Boeckman and others, in the latter half of the last century, made analyses of foods using methods similar to those now in use.
