Smallholder agriculture is highly susceptible to climate variability and change. According to recent projections by the Intergovernmental Panel on Climate Change, this sensitivity would likely increase in the coming decades, with more erratic rainfall, prolonged dry periods, shorter growing seasons, and seed germination failures. In the African context, the mechanisms through which these ecological stressors would affect seed security are poorly understood. Drawing upon a case study of semi-arid Ghana, this study examines climate change impacts on seed security among smallholder farmers. Soybean [Glycine max (L.) Merr.] yield has increased over time by introduction of newer varieties and improved agronomic practices. However, grain protein concentration has been decreasing at the same time. New field studies in 2018 and 2019 investigated inseason crop management practices effect such as use of foliar protection application, fertilizer application, different maturity length or different planting dates on grain yield and grain quality. Human gut microbiota is comprised of thousands of species which fall into two major categories or “enterotypes” based on dominating bacteria: “Bacteroides” and “Prevotella”. Bacteroides enterotype dominates the microbiota of the western population because of a high protein and fat diet, whereas Prevotella enterotype is dominate in the gut of the eastern population because of a high carbohydrate diet. The microbial attachment and colonization on separation membranes lead to biofilm formation. Some selective isolates within the biofilm constitutive microflora acquire resistance and emerge predominant over prolonged use of the membrane. Thus, proving the cleaning and sanitization protocols to be ineffective in adequately removing resilient biofilms. This subsequently leads to selecting microbial resistance within the constitutive microflora to almost all antimicrobial treatments and hence, creates a need to develop novel alternative strategies to control biofilm formation on membrane surfaces. Concussions represent a serious public health concern due to their severe short and long-term consequences. Many adolescents participate in sports that involve the chance of injuries such as concussions. Concussive injuries can be difficult to describe because most symptoms involve non-physical indicators such as impaired cognition, altered behavior, or sleep disturbances. Symptoms can also be influenced by age, gender, and previous history of concussions. The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. Purpose: To determine if there is a relationship between physical education/activity wellness policy comprehensiveness and strength and the observed physical activity (PA) environment.
Methods: The Wellness School Assessment Tool 2.0 (WellSAT 2.0) was used to evaluate the quality of written wellness policies. The School Physical Activity and Nutrition Environment Tool (SPAN-ET) was used to evaluate the school environment. Pairwise correlations and one-way ANOVAs were used to determine if written wellness policy quality affects the school PA environment. Data are presented as mean ± SD and significance was set at p ≤ 0.05.

Biological Nitrogen Fixation is the process of conversion of atmospheric dinitrogen into ammonia which is performed by symbiotic as well as free-living diazotrophic bacteria. A previous project to isolate free-living nitrogen fixing bacteria from a natural prairie yielded Streptomyces which grew on nitrogen free medium. Genome sequencing of three isolates revealed the presence of a second 16S rRNA gene sequence aligning with Bacillus, however repeated streaking only yielded Streptomyces colonies. The aim of this research was to characterize the interaction of three Streptomyces isolates that grow under nitrogen-free conditions, and appeared to be associated with Bacillus. Purpose: The purpose of this study is to assess the relationship between principal priorities, written wellness policies, and school wellness policy implementation. Methods: Principal priorities of nutrition and physical activity, written wellness policy quality and degree of policy implementation were assessed in 95 schools from eight states using the principal priorities questionnaire, the Wellness School Assessment Tool (WellSAT) version 2.0, and the Wellness School Assessment Tool for Implementation (WellSAT-I), respectively. The objectives of this thesis project were to 1) characterize the influence of finishing system (grain-finished vs. grass-finished) on carcass characteristics, meat quality, the nutritional composition, and consumer preference for bison meat 2) evaluate the effectiveness of beef camera grading technology on grain- and grass-finished bison carcass characteristics, and 3) characterize the influence harvest systems (on-ranch vs. commercial facilities) on animal stress response, carcass characteristics, meat quality, and consumer preference of bison heifers. Objective: To quantitatively assess coaches perceived confidence in coaching rural wellness coalitions and to qualitatively determine barriers and facilitators to success in coaching rural wellness coalitions.
Design: A mixed methods design was utilized with quantitative (scorecard) and qualitative (key informant interviews) methodologies.
Setting: Six rural South Dakota wellness coalitions.
Participants: Extension wellness coalition coaches (n=7), one previous and six current.
Intervention: A component of the broader SDSU Extension 1416 Centers for Disease Control (CDC) and Supplemental Nutrition Assistance Program Education (SNAP-Ed) intervention.

Maintaining acceptable levels of dough strength is an important goal in the development of new HRSW cultivars. Rising temperatures in the Arctic may affect vegetation, which in turn can affect herbivores, such as caribou, that rely on these plants for forage. Several plant traits contribute to forage quality, including digestibility, nitrogen content, and antiherbivory secondary compounds, but the effect of temperature on these traits individually and combined is unclear. Glyceollin is a secondary metabolite produced under stress conditions by soybean to act as a plant defender to pathogen attack. The antimicrobial nature of glyceollin makes it a promising natural alternative to antibiotics if incorporated into livestock feed. However, production of glyceollin is highly variable, dependent on soybean variety, and fungal elicitor used as inoculum. Our study compares two fungal spore elicitors, Trichoderma reesei and Aspergillus sojae on soybeans of diverse maturity level, and fungal susceptibility to determine highest glyceollin titer. As a result of their extended shelf-life, dried dairy ingredients constitute a significant category produced for global markets. During the development of dairy ingredients, several drying trials are typically conducted to determine optimum drying conditions. The results of these trials can be critical in determining optimum dryer design. However, these trials can be expensive and time-consuming. An alternative that has recently been developed using a new technique called single droplet drying (SDD). The blood-brain barrier (BBB), formed by the endothelial cells of the brain capillaries, inhibits the penetration of many therapeutic compounds into the brain. Liposomes, which have unique physicochemical characteristics, have been widely investigated for the drug delivery system across BBB. In the current study, FITC-dextran was used as a model drug that encapsulated in a liposomal formulation to investigated its ability to overcome the blood-brain barrier for targeted brain delivery of therapeutic agents.
