Freeze-drying has been generally regarded as the mildest method known for drying meats, but even this process has caused undesirable changes in meat quality. The texture of rehydrated freeze-dried meat has been found to be tougher and drier than untreated meats. In addition, the meat may have a "woody" texture. Apparently something has occurred during the freeze-dry process that reduced the water-holding capacity of the meat. This has been reflected in the meat's inability to become fully rehydrated. Sodium hexametaphosphate (SHNP) has been used successfully to increase the water-holding capacity of meat and fowl. No study has been conducted to …

The purpose of this study was two-fold: {A) To obtain information concerning the influence of sodium phenobarbital on the hepatic microsomal enzyme system which reduces adenosine triphosphate in adult male and female rats; (B) To measure the development of hepatic adenosine triphosphatase activity of newborn and infant rats. Intraperitoneal administration of 30 to 150 mgm./Kq. of sodium phenobarbital for three to five days to adult male and female rats did not increase adenosine triphosphatase activity. These findings are rather pertinent since many enzyme systems are stimulated by much lower dosage levels of enzyme inducers, such as sodium Phenobarbital, over a …

The purpose of this study was to investigate the effect of interval training in a warm environment and the effect of interval training in a cold environment on cardiovascular endurance, and to compare the effects of interval training in the two environments. There will be no significant difference in the improvement of cardiovascular endurance in comparing interval training in a warm temperature environment to interval training in a cold temperature environment.

Carp constitutes one of South Dakota's relatively untapped natural resources. Mis-named a trash fish, it represents a largely unappreciated source of high biological protein food. Little research has been developed to date concerning this vigorous and adaptable fresh-water fish. In Asian and European countries the carp has long been cultivated as a desirable food fish. Introduced into the waters of this country however, the carp competed so successfully against game fish that it soon lost favor. This study was undertaken to investigate the possibility of using the fluorescent antibody technique to rapidly demonstrate and estimate enterotoxin concentrations in food and culture media. The correlation between degree of cell fluorescence and enterotoxin production of organisms grown under varying environmental and nutritional conditions was shown.

The need for runoff facilities at animal feeding operations has just been recognized in the past few years. Concern has been expressed by water pollution control officials in regard to the pollution potential of animal wastes. As a result, regulations to reduce pollution from feedlot sources are being formulated. South Dakota and several states are in the process of drawing up similar regulations. Ammonia is produced by the working muscle of exercising mammals and cellular metabolic process of resting mammals. Normally relatively minute blood ammonium-nitrogen (BAN) levels are present because mammals have efficient systems for excreting ammonia or converting it to non-toxic end products. Impaired or inadequate detoxification process allow elevated BAN levels with excessive ammonia production. Above normal BAN levels produce deleterious effects which are well known to many research fields. When impaired or inadequate detoxification process occur in an exercising mammal, deterioration of performance is manifested in physical exhaustion and fatigue. Studies designed to investigate the factors affecting stored energy levels of baby pigs at birth and changes on energy sources during early neonatal life were conducted over a three year period. During the three years 604 newborn pigs representing 85 different litters were partially or completely analyzed chemically at ages ranging from 0 to 72 hours. Various treatments of the dam during gestation and treatment of the newborn pig were utilized. Attitudinal differences among farm operators were studied in relation to wetlands, drainage, and waterfowl production within selected sections of four South Dakota counties. The counties involved were Marshall, Day, Codington and Brookings. The interview schedule which was used included personal, social, and economic characteristics of the farm operator and his farm operation. Also included were a series of knowledge and attitude questions pertaining to wetlands, drainage, and waterfowl production. Through the use of a Likert-type scale, the degree of favorableness toward 26 statements in relation to wetlands, drainage, and waterfowl production was recorded. Experiments were conducted in a study of in vitro boar semen storage. Yorkshire boars and Yorkshire-Hampshire crossbred gilts were used and were fed a 16.0% crude protein ration. The sperm-rich fraction of all ejaculates was collected by the gloved-hand technique at a minimum of 48-hr intervals. One experiment involved separating the seminal plasma from the spermatozoa cells within 30min after ejaculation by centrifugation (550 g for 7min) followed by two washings with a glucose-bicarbonate solution. The cells were resuspended in a glucose-bicarbonate solution. The cells were resuspended in a glucose-bicarbonate solution and in glucose-bicarbonate solution plus 20% egg yolk. Percent …

Low protein diets were formulated for experiments with laying hens and turkey poults. The diets were supplemented with equal amounts of protein and different feedstuffs while maintaining equal calculated levels of selected amino acids. Single trails were also reported for factorially applied amino acid supplements to turkey starter and cage-layer diets. The three-year studies indicated that a typical corn-soy layer diet diluted with glucose monohydrate to 9.4 percent protein was deficient in methionine, lysine and tryptophan. Attempts to further improve the rate of egg production by additional supplements of arginine, isoleucine, valine, or diammonium citrate were not successful. The low …

Accurate evaluation of dairy production records is essential if dairymen are to establish and maintain profitable dairy herds and efficient culling programs. Improper record evaluation may result in. saving breeding stock that otherwise might be eliminated. Many factors may influence the validity of individual production records. Adjustment factors, currently in use by the United States Department of Agriculture (USDA) for sire and cow evaluations, are generally accepted as removing the majority of these influences. Studies designed to investigate the accuracy of predicting total edible portion weight from a pork carcass were conducted over a two-year period. One hundred fifty crossbred pigs of prominent Hampshire-Yorkshire breeding weighting an average of 203.2 ± 5.1 pounds were used in this study. The pigs were 160.8 ± 11.0 days of age at slaughter, had an average of 1.39 inches of carcass backfat and 4.51 square inches of longissimus dorai area. Percent Fraction 1 protein, total soluble protein, and the lipoproteins of birdsfoot trefoil, white clover, and four varieties of alfalfa (Teton, travois, vernal, ladak) were investigated in relation to ruminant bloat using polyacrylamide gel electrophoresis. The plants were grown in a growth chamber under two daylengths and harvested at the bloom, bud and prebud stages of growth. No statistical difference in percent fraction 1 protein, measured as a percentage of the total soluble protein, could be detected among birdsfoot trefoil and three varieties of alfalfa. Gout is one of the earliest disease entities to be described in medical writings. Hippocrates noted familial distribution patterns and described its classic symptomatology in the 5th century B.C. Empirical treatment employing colchicine was advocated by Alexander of Tralles in the 5th century A.D. A better understanding of the complex association between clinical manifestations of gout and uric acid, carbohydrate and lipid metabolism has made rational treatment possible only very recently. Ample experimental and clinical data now available show a definite association between disorders of purine metabolism resulting in hyperuricemia and frequent concomitant hyperlipidemia. Research involving the black-footed ferret (Mustela nigripes) and black-tailed prairie dog (Cynomys ludovicianus) was conducted during 1968 and 1969. Eighteen prairie dog burrows were excavated in 1968 and 1969. Burrow systems ranged from 13 to 109 feet long and 3 to 14 feet deep. Fifteen of the burrows exhibited dome-shaped entrances leading to a gradually descending passageway which made an abrupt vertical ascent to a crater-shaped entrance. Nest chambers were found in 6 burrows. Earthen plugs created by prairie dogs in burrows after ferret departure ranged from 9 to 33 feet long. Eighty-two ferret scats were recovered. Ring-necked pheasant (Phasianus colchicus) use on state-owned game production areas was compared to that on privately-owned areas in east-central South Dakota. Four 80-acre and four 160-acre tracts of state lands were paired with private areas of the same size having the same amount of wetland and were selected from aerial photographs taken before the purchase of the state-owned areas. None of four nests were successful on private areas in 1968 and three of five nests were successful on game production areas. Black bullheads, Ictalurus melas (Rafinesque), were grown experimentally from July 25, 1969, through October 21, 1969. The fish, collected from Lake Poinsett, were grown in five cages each with a water volume of 2.6 m³ and five cages each with a volume of 3.86 m³. The larger cages contained nearly 60 percent of the total 323 m³ of water volume in the cages. No significant difference in fish growth between the two cage sizes were observed. Fish in large cages gained 204.4 Kg and were fed 1550.8 Kg of food, for a food conversion of 6.60. Fish in smaller cages …

Ochratoxin is a toxin produced by fungus Aspergillus ochraceus Wilh. This is one of the poisonous metabolites, like aflatoxin, which when ingested by livestock, poultry, and human beings could produce toxigenic effects—so-called mycotoxicoses. The fungus A. ochraceus is widely distributed in nature and often found in soil and vegetation. The purpose of this experiment was to determine the need for vitamin A and vitamin D supplements with rations composed of various levels or corn silage and corn grain when fed to cattle. Early investigations with vitamin D demonstrated that the reduced intensity or sunlight during the winter months resulted in decreased cutaneous formation of vitamin D and that dark- skinned animals synthesized less vitamin D than light skinned animals under given conditions of light intensity.
