Little is known of the elderly's ability to use a food frequency questionnaire to describe their dietary intake. This study examines the elderly's ability to reliably describe their diets and how age, education, cognitive status, and gender may affect their ability to complete and return a food frequency questionnaire. The reproducibility of the questionnaire was tested by a repeated administration among 85 participants 65 years of age and older from the Preston, Idaho, area. Correlation coefficients between nutrient scores from the first and second administration ranged from 0.48-0.79 (total population), 0.44-0.88 (males), and 0.39-0.86 (females). Biogeographic patterns of animals are shaped by biotic interactions, such as competition, and by abiotic factors, such as climate. Interaction Of The Human Serine Protease Inhibitor Alpha-1-Antitrypsin With Cryptosporidium Parvum, John Russell Forney

The human serine protease inhibitor (serpin) alpha-1-antitrypsin (AAT) was studied for potential interaction with components of the protozoan parasite Cryptosporidium parvum. A homogenate prepared from C. parvum oocysts was incubated with purified human AAT, and complexes formed between the serpin and components of the homogenate were detected using an enzyme-linked immunosorbent assay (ELISA). Serpin:parasite infections were effectively blocked by preincubating AAT with a cognate target enzyme, porcine pancreatic elastase, prior to performing the ELISA on the homogenate. The Anorexia Bulimia Inventory, a recently developed self-report questionnaire for the assessment of eating disorders, addresses two major limitations found in existing self-report eating disorder inventories. First, it comprehensively assesses the diagnostic symptoms of both bulimia and anorexia nervosa; and second, it assesses the frequently cooccurring problem areas (e.g., depression, anergia) that may be targeted in treatment planning for eating disorders. Although initial research on the psychometrics of the instrument appears promising, no research has yet investigated its factor structure. This research investigates the protein interactions that occur when soy protein is added to milk and subjected to renneting or heating. Milk was fortified with 20% soy protein and enzymic coagulation studied at 35°C at various pH's and CaCl2 levels. The first part deals with the interaction between milk and soy proteins during rennet-induced milk coagulation. The first goal was to determine how soy proteins affected milk coagulation. Lactic acid bacteria have been reported to be used as a health adjunct in food for u many years. However, these health benefits have not been proven. and how these bacteria pass through the digestion process and remain viable in the human intestinal tract is still not clear. The aim of this work was to isolate mutants from Lactobacillus acidophilus or Bifidobacterium bifidum that could tolerate the conditions of the digestion process (low pH and bile conduction) and to characterize these isolated mutants.

Common methods for determining mineral absorption by the body are invasive and frequently utilize radioisotopes. In experiment one. rats were given a dose of radiolabeled ferrous sulfate. Relative absorption was estimated by changes in serum iron and by appearance of the radiotracer in the serum. There were no differences in relative absorption determined by the methods, although the low overall absorptions by the iron-replete rats may have decreased the sensitivity.
In experiments two and three. iron and magnesium supplements were given orally to 12 women age 19-25. Each subject received iron and magnesium supplements once each week for 5 weeks. …

This research project was divided into three parts. In the first part, heme, nonheme, and total iron methodologies for meats were evaluated. The accuracy, precision, and specificity of each method were determined by spike recoveries of heme and nonheme iron, and by analysis of National Institute of Science and Technology standard reference materials. The most reliable and practical methods were then used to determine the total, nonheme, and heme iron contents of various meats before and after cooking. Extra lean (3.3% fat) and lean (20.0% fat) hamburgers in three pH groups (≤ 6.0; 6.01-6.49; 6.50-6.92) were evaluated for cooking-temperature profile, total process lethality, and physical properties after cooking to 71°C by double-side frying on an electric grill. Neither cooking-temperature profile nor cooking time was affected by hamburger fat content or pH. Double-side frying to 71.1°C internal temperature was adequate for more than 6-log destruction of viable E. coli O157:H7 and Salmonella at the geometrical center of extra lean and lean hamburgers. Compliance with the strict dietary regimen for the dialysis patient can be very challenging. Many foods are limited from the diet of a renal patient because of the high potassium content. The physiological consequences of failure to follow a diet prescription can be fatal for the dialysis patient. In an effort to improve patient compliance with nutritional protocols, several potato cooking methods and centrifugation of tomato sauce were investigated for their effects in reducing potassium content.
All methods with a 24-hour soak were found to be significant in reducing potassium content of potatoes (P < 0.05). However, some of the methods in which the potatoes were not soaked were also found to be effective in reducing potassium content. Slice thickness and volume of cooking water used were found to be two important factors in determining potassium loss. The 4-mm sliced potatoes, which had a mean potassium value of 84 mg/100 g, lost more potassium than the 8-mm potatoes with a mean potassium value of 182 mg/100 g (P < 0.05). Furthermore, the potatoes cooked in 10 times the amount of water lost more potassium (124 mg/100 g) than those cooked in only 5 times the amount of water (148 mg/100 g) (P < .005). Soaking in cold versus hot water, agitation of the soak water, or the addition of chemical chelators to the soak water were not shown to be any more effective in reducing the potassium content than the other methods. Sensory data indicated that participants did not have a strong taste preference for potatoes cooked by any one particular method (P < 0.05).

Chitin is a polysaccharide derived from the shell of crustaceans. Chitosan is a deacylated chitin derivative and ChitoRich™ is a chitosan-based formulation. Chitosan is known to inhibit dietary fat absorption. ChitoRich™ and chitosan were evaluated for their ability to control fat absorption in growing rats.
Forty-eight rats (about 150 g) were fed for 4 weeks on 12 different diets containing two levels of vegetable shortening (15 and 5%) and fiber (5 and 2.5%) with cellulose, chitosan, or ChitoRich™ as the dietary fiber sources.
Rats fed ChitoRich™ ate less and gained less body weight than rats fed the other fiber sources. …

With aging, there is a putative loss of taste and smell that may lead to decreased food enjoyment. We determined the relationships among age, detection, and recognition thresholds for taste and smell, and preference for flavored milk.
Ninety young (20-40 years) and 90 elderly (over 64 years) subjects evaluated chocolate mint-, lemon-, or strawberry-flavored milk. Detection and recognition thresholds were determined for sucrose and for the assigned flavor in milk systems. Sucrose was dissolved in milk, and flavors were dispersed in milk with flavor identification. Preference was determined using a 9-point hedonic scale to evaluate all combinations of five sucrose …

Early introduction of cow's-milk-based infant formulas, in particular the ABBOS epitope of bovine serum albumin (BSA), has been implicated as an autoimmune trigger in the pathogenesis of insulin dependent diabetes mellitus (IDDM). A direct enzyme-linked immunosorbant assay (ELISA), using polyclonal anti-BSA antibodies, was developed to determine the BSA content of cow's milk and 15 infant formulas. Powdered high-whey (60%) formulas averaged 41 mg BSA/100 ml; 2% milk contained 52 mg BSA/100 ml; and the high-casein formulas averaged 13 mg/100 ml. This study was conducted to determine the effects of season and auction and produce marketing systems on prices received by farmers for livestock sales and the effect of price on cattle numbers sold in KADD. Livestock population, carrying capacity, and stocking rate were estimated. Data were analyzed using pie charts, regression methods, and analysis of variance.
There was no significant difference (P=.06) between cattle prices per kilogram during the wet season and after harvest. During the wet season, significantly more cattle were sold than after harvest (P< .001) to purchase food and farm inputs, and pay school fees and medical bills. Market price was only a secondary factor.

Crops grown in sandy soils require frequent irrigation. As a result, nitrogen (N) fertilizers. such as ammonium sulfate((NH4)2SO4), are leached from the rooting zone of crops. This loss of N increases N fertilizer use and the potential for nitrate (NO3-) contamination of water. Ammonium-loaded clinoptilolite (NH4+-Cp) may reduce this N leaching, increase N fertilizer use-efficiency, and prevent NO3- contamination of water while sustaining normal crop growth.

The 1994 Beaver Mountain fire ignited the canopies of subalpine fir, Abies lasiocarpa, and spread ground fire into adjacent Douglas-fir forests, Pseudotsuga menziesii var. glauca. Despite shorter flight seasons due to lower annual temperatures and persistent snow, the Douglas-fir bark beetle, Dendroctonus pseudotsugae Hopkins, attacked a range of moderately fire-injured host conifers. Logistic regression models illustrated that in 1995 associated bark beetles selected large diameter Douglas-fir with 60-80% bole char, 60-80% crown volume scorch, and 50-70% probability of mortality due to fire. To date, little research has been conducted that might provide clinicians with an understanding of the critical factors that may aid clients' recovery. Such factors may be used by clinicians to better motivate clients to collaborate in treatment. The purpose of this study was to identify some of the critical factors that women with eating disorders believed were crucial in prompting or facilitating their recovery. Lifestyle changes from traditional diet and activities to modem diets high in fat and sugar, and sedentary habits have increased inherited health risk for diabetes and obesity among Native American youth. Nutrition education and physical activity programs have been recommended to help reduce health-risk factors. The pathogenesis of autism has proven difficult to characterize. However, in many recent studies, it is suggested that the onset of this disorder is the result of multiple etiological factors, which include genetic, immunologic, and viral elements.
Possible immunological influences found in subpopulations of patients with autism include decreased lymphocyte responsiveness, reduced natural killer cell activity, abnormal response to rubella vaccine, abnormal immune response to brain tissue, and decreased plasma levels of the fourth component of complement(C4). These aberrations and others imply a possible autoimmune mechanism in some cases for the development of autism.

The evaluation of ammoniation of mature grass (1/3 Festuca sp, 1/3 Bromus and 1/3 Dactylis sp) as a basal diet for pregnant ewes and its effects on ruminal fermentation were studied. Ammoniation increased the forage dry matter intake (DMI), crude protein (CP), and gross energy digestibility. Ruminal pH and total volatile fatty acid were not affected by ammoniation (P > .05). Individual VFA concentrations were affected significantly.
In a third experiment, ammoniated wheat straw was evaluated as a basal diet for wintering pregnant ewes. Ammoniated straw replaced grass hay in the diet. Dry matter intake was not different (P > .05). Final …

This study reports the characteristics of home visitor training based on the results of a national survey of nominated best practice home visiting programs that service children with disabilities and their families. Two hundred thirty-six programs were nominated by their state's director of Maternal-Child Health and/or their state's Part H Coordinator as community-based programs that have had success integrating home visiting services into their community's overall system of care for children eligible for Part H services and/or special health care needs. The return rate of the survey was 85%, and these 193 programs serve as the basis for this study. …

The goal of the present study was to verify whether four purported risk factors predate the development of eating disorder symptoms, particularly bulimia nervosa. An isotopic dilution method was used to test the effects of osmotic potential, (𝛹s), upon nitrification, ammonification, N-immobilization, and nitrous oxide production rates in soil at solute concentrations encountered in Penoyer soil. A nitrification potential assay was also performed to approximate maximum nitrification rates.
Nitrification potential rates in soil slurries exponentially declined in response to decreased osmotic potential. A new innovative product, stewsticks, made with beef, pork, spices, and dehydrated vegetables, was developed as a nutritious snack. Lactic or citric acid was added at pH 5.2 or 4.6 to both meatsticks and stewsticks. Meatsticks and stewsticks were prepared by mixing ingredients until a cohesive mass was obtained. This mixture was then extruded into sticks that were cooked to about 50% of original weight. Sticks were then cut to desired length, packaged, and stored. Then meatsticks (beef, pork, and spices) were compared to stewsticks for appearance, texture, flavor, and overall acceptability.

Sterile ceramic plates and the surface of beef steaks were inoculated with the pathogenic microorganisms Listeria monocytogenes, Campylobacter jejuni, Escherichia coli and Salmonella typhimurium. Samples were also inoculated with nonpathogenic microorganisms Clostridium sporogenes ATCC 7955, Pseudomonas aeruginosa, and Bacillus stearothermophilus. Concentrations of organisms in the pure culture used to inoculate the samples were selected within the range of 106 to 108 colony forming units/ml (CFU/ml). Samples were treated with ultra-high temperature (UHT), and· the surviving organisms were recovered and counted. Meat samples were exposed to 1100°C for 22 seconds.

This study investigated the manufacturing procedures and texture attributes of direct acid set of an unripened, shelf-stable cheese variety produced by the combined technologies of ultrafiltration and ultra-high temperature processing. Product evaluation included physical and chemical properties such as gel strength, syneresis, pH, moisture, protein, and fat. Whole milk was concentrated by ultrafiltration to 30, 35, and 40% total solids. Preliminary studies were undertaken to investigate whether or not added iron (0, 35, 880 ppm of iron as ferrous fumarate) and fat type (corn oil, beef tallow, or menhaden oil) influenced the oxidation of the rat diet during storage. Iron level affected thiobarbituric acid (TBA) values only in the menhaden oil diets. Storage for 4 d did not affect TBA values of the diets. Neither food intake nor body weight of the rats was affected by the different diets, suggesting all diets were equally acceptable to rats.

The initial aim of this work was to evaluate processing conditions for extended shelf life (ESL) milk to have a shelf life at refrigeration temperature of 60 d. Milk was processed on a pilot-scale ultra-high-temperature processing plant and evaluated for microbial and sensory quality over 60 d at 7°C storage. Results of this study showed that lower process temperatures were preferable to minimize cooked flavors and that the minimum safe processing temperature was 134°C for 4 s as determined by the destruction of bacterial spores in the processed milk.
