A crossover design study was conducted to determine if reducing pain, by using alternative sites off the finger tip, would increase testing frequency and improve clinical outcome as measured by glycosylated hemoglobin. Subjects with type 1 and type 2 diabetes tested with the FreeStyle alternative-site meter (group 1) or tested with their original meter (group 2). After 3 months the subjects used the alternate meter. Testing frequency and blood glucose concentrations were recorded for the month before the study began and monthly thereafter. Glycosylated hemoglobin was tested initially, at the crossover point, and at study conclusion. Insulin users increased testing …

This study was undertaken to determine the effect of oxygen absorber packets (OAP) (AGELESS Z.300 E) in improving the shelf-life of selected dried food products, including dried potato pearls, dried sliced apple, dried carrot, white rice, nonfat dry milk, all purpose flour, rolled oats, and wheat. Items were stored at four different temperatures (-20, 10, 21, and 29.5°C) over a period of 24 months with observations at 6-month intervals. Hunter colorimeter, thiobarbituric acid reactive substance (TBARS) germination rate, gluten weight, and volume were parameters used as quality indicators of various dried foods.

Since the catabolism of amino acids in cheese results in the formation of most volatile flavor compounds, a proper intracellular pool of amino acids must be established in order to produce a desirable flavor production in cheese. Generation of this pool of amino acids requires complex interactions among casein and its derivatives, proteolytic enzymes, and transport systems in the associated bacteria, including lactococci. In this project, we hypothesized that casein hydrolysis by the extracellular proteinases of Brevibacterium linens BL2 modulates the expression profile of proteolytic related genes in Lactococcus lactis spp. lactis IL1403.

Over the past decade, demand for recreation has increased as part of Alaska's doubling growth in tourism. Along the Chilkoot River, near Haines, fishing and bear viewing have become increasingly popular. I investigated the ecological and behavioral interactions there between brown bears, salmon, and humans between 2000 and 2002. In the literature on plant respiration, there are two viewpoints concerning the source of respiratory control: supply (photosynthate availability) or demand (temperature dependent) limitations. While different studies indicate the primary dependency for respiration is either the supply or demand side, the two paradigms cannot both be true. The relative importance of each paradigm may depend on a number of factors including period of time during which respiration is measured, phase of plant development, environmental conditions, and species.

The human immunodeficiency virus (HIV) reduces the number of healthy immune cells in the human body. When the immune cells drop below a certain level, the person is diagnosed as having acquired immunodeficiency syndrome (AIDS), which increases the likelihood of opportunistic infections. As a result, people living with HIV/AIDS (PLWH/A) have an elevated need for medical and support services. HIV/AIDS needs assessments identify unmet needs, and the results are used in the allocation of resources. Agrobacterium tumefaciens and A. rhizogenes are the causal agents of gall or hairy root disease, but normally the bacteria do not cause disease in wheat. However, both bacteria grew without inhibition when exposed to intact or wounded wheat roots or embryos, and they colonized wheat root surfaces to levels similar to dicotyledonous plants. A. tumefaciens and A. rhizogenes induced 23% cell death after a 1-h exposure to wheat embryo cells grown in 7.4 mM O2, while the extent of cell death at 2.1 mM O2 was 8%. Aphids are morphologically simple. Their numerous hypothesized convergent reductions, such as reduced siphunculi length in association with ant attendance, have made it difficult to define morphological synapomorphies that are necessary for phylogenetic studies. Thus, I used molecular characters both to reexamine the phylogenetic relationships of Cavariella and Pterocommatinae within Aphididae, and to further map host associations and life cycles onto these phylogenies to better understand the evolutionary lability of host alternation within Aphididae. This study tracked the chronology and severity of Myxobolus cerebralis infection and related it to survival of age-0 kokanee to determine whether M. cerebralis represented a significant agent of morality in the population. Environmental conditions and losses to predation were identified and linked to age-0 kokanee survival to identify other sources of mortality in the population. We attempted to track survival of age-0 kokanee from the outmigration into the reservoir until the end of the first growing season in September of each year. One of the least controlled defects in Swiss cheese is development of splits. Split defect is characterized by fissures or cracks in the body of the cheese that can be as short as 1 cm in length or long enough to span a 90-kg block. This defect appears during refrigerated storage after the cheese is removed from the warm room. Swiss cheese with splits is downgraded because it is unsuitable for use on high-speed slicing equipment (up to 1,000 slices per minute).

A retrospective chart review was conducted on pediatric patients at the Intermountain Cystic Fibrosis Center who had a percutaneous endoscopic gastrostomy (PEG) placed between 1993 and 1999. Height velocity improved significantly in the group of patients with a PEG placed; however, pulmonary function declined more significantly over time.
Questionnaires regarding attitude toward PEG placement were sent to patients enrolled in accredited cystic fibrosis centers in the mountain west region and to their parents. The overall response rate was 54.25% for the PEG questionnaire and 24% for the non-PEG questionnaire. Ninety-six percent of the patients with a PEG reported that weight …

Amino acids derived from the degradation of casein in cheese serve as precursors for the generation of desirable and undesirable flavor compounds. Microbial degradation of aromatic amino acids is associated with the formation of aroma compounds that impart putrid-fecal, barny-utensil, and floral off-flavors in cheese, but pathways for their production had not been established. This study investigated Tyr and Phe catabolism by Lactobacillus casei and Lactobacillus helveticus cheese flavor adjuncts under simulated Cheddar cheese-ripening conditions (pH 5.2, 4% NaCl, 15°C, no sugar). 1,25-dihydroxyvitamin D3 [1,25(OH)2D3] has been shown to promote phosphate transport rapidly in the perfused duodenal loop, relative to controls, reaching treated/av basal at T = 40 min = 1.82 ± 0.42 and 1.11 ± 0.21, respectively.
By using isolated chick enterocytes, studies were undertaken to determine whether 1,25(OH)2D3 has a direct effect on isolated intestinal cells that is manifested by either enhanced uptake or extrusion of phosphate.

Heat-induced Escherichia coli BL21 cell lysate (10 mg protein) was applied to immobilized ɑ-casein (45 mg/g beads) or β-casein (30 mg/g beads) column. After removing a majority of nonspecifically bound proteins with 1 M NaCl, the molecular chaperones were eluted with cold water, 1 mM Mg-ATP, or 6 M urea. Protein is an important component of bone, but the role of dietary protein intake in osteoporosis remains controversial. The Utah picture-sort food frequency questionnaire was found to produce a useful estimation of usual dietary intake in the elderly. This method of dietary assessment was used in a population-based case-control study to examine the relationship between protein intake and risk of osteoporotic hip fracture in elderly Utah residents. Analyses of risk of hip fracture across increasing quartiles of protein intake were stratified by age-group. The effect of chemical parameters on cheese structure and functionality was studied by modifying the calcium, salt content, and pH of cheese. Cheese blocks were high-pressure injected from zero to five times with water, solutions of different salts, or an acid solution 14 d after manufacture. Successive injections were performed 24 h apart. After 40-42 d of refrigerated storage, cheese structure was studied by using scanning electron microscopy and digital image analysis, and cheese functionality was characterized by texture profile analysis and melting test.

Recent studies suggest aromatic amino acid catabolism by starter lactococci and flavor adjunct bacteria have a significant impact on off-flavor development during Cheddar cheese ripening. We hypothesized that a flavor adjunct bacterium, Brevibacterium linens BL2, produces off-flavor compounds from aromatic amino acid metabolism that will have a detrimental impact on cheese flavor.
The mechanism of tryptophan (Trp) catabolism in Brevibacterium linens BL2, was investigated in a chemically defined medium during incubation in laboratory conditions (no carbohydrate, pH 6.50, 220 rpm, 25°C) and cheese-like conditions (no carbohydrate, 4% NaCl, static incubation, l5°C). Recent research indicates that 2% to 4% of the population meet diagnostic criteria for the newly proposed binge eating disorder, and that it is much more common (30%) among the treatment-seeking obese. Recent years have seen changes in ecological conditions, ownership patterns, and political-legal forces that affect the sustainability of Western range livestock production. Enterprise diversification and implementation of improvements are advocated as ways for ranchers to cope with marginal returns from ranching while better managing resources. However, relatively few ranchers make such substantive changes in their operations, and previous research suggests that rates of adoption may be especially low in Utah.

This study examined parental and teacher expectations of kindergarten readiness of Latino children. The perceptions of Latino mothers, Latino fathers, and kindergarten teachers were analyzed and compared. Specifically, parents' and teachers' responses were compared in three areas: perceptions of what parents can do to prepare children for kindergarten, priorities for requisite kindergarten entry skills, and rankings of the importance of specified skills to be emphasized in kindergarten. Differences between kindergarten teachers' expectations for nonnative English-speaking children and native English-speaking children were also examined.

The present study examined whether there was a relationship between daughters' eating disorder symptomology and maternal food control and health-conscious eating attitudes. Eighty-eight females with a continuum of eating disorder behaviors (DSM-IV eating disorders through nondieters) and 74 of their mothers participated. Participants completed the Anorexia Bulimia Inventory, two subscales from the Eating Disorder Inventory, the Three Factor Eating Questionnaire, the Family Environment Scale, the Maternal Food Control and Meal Preparation Scale, and the Marlowe-Crowne Social Desirability Scale.
Results indicated that, in general, daughters' reported eating disorder symptomology and perceived familial control were related. Some of the more specific …

This study sought to investigate the role of the C55 undecaprenol lipid carrier in the production of exopolysaccharide (EPS), the effect of exopolysaccharide producing (EPS+) starter cultures on the viscosity of Mozzarella cheese whey, and the possible protective characteristics of capsular EPS against freezing and freeze drying. Androgen receptor (AR) gene CAG polymorphisms may be associated with body shape, and are associated with certain breast and prostate cancers. In addition, body shape is associated with risk for a variety of diseases, including heart disease, diabetes, and certain forms of cancer. The CAG repeat in exon l of the AR gene was quantified using Perkin Elmer Applied Biosystems GeneScan analysis software in 96 and 59 healthy Caucasian men and women, respectively, who were over the age of 50 years. No study, to date, has systematically examined the interplay of social contact, depression, functional disability, and cardiovascular health when examining the relation between religious activity and all -cause mortality. This study used Cox regression models as well as a series of structural equation models to elucidate these relations and resultant mortality over a 5-year period. This sample included 3,607 persons, age 65 and older, who participated in the Cache County Study on Memory in Aging, and who were not demented. I studied the behaviors, movement dynamics, habitat relationships, and population characteristics of Rocky Mountain mule deer (Odocoileus hemionus) using urban and rural winter ranges in Cache Valley, Utah, from January 1994 to February 1998. There were 2 goals to my research endeavors. The first was to assess how and why the behaviors and demographic characteristics of urban deer differed from those of rural deer. The second was to assess the scale-dependent responses to habitat and the scale-dependent patterns of habitat use by deer living in each area. Plant and animal wastes degrade in soils to form relatively stable humified compounds, which form ion complexes that affect the bioavailability of elements in the soil solution. Hydroponic studies with wheat and rice were conducted to characterize the effect of humic acid (HA) on phosphorus (P), iron (Fe), fluorine (F), and iodine (I) bioavailability. Ferrihydrite [Fe(OH)3] precipitation was greater on root surfaces without HA or synthetic chelates. Oxides such as ferrihydrite strongly adsorb P and provide exchange sites for metals. HA reduced this precipitate and increased P and Fe uptake.

Nitrogen is the only plant nutrient taken up as both a cation (NH4+) and anion (NO3-). Nitrate is considered the "safe" form of N and NH/ is generally thought to be toxic, especially at high levels. High NH4+/NO3- ratios are thought to be toxic because they result in a rhizosphere pH low enough to damage root membranes, induced cation deficiencies, and build-up of NH3 caused by delayed NH/ assimilation.
