Sagebrush plant communities are among the most threatened in North America. This project had two goals: to test how increased temperature affects native and nonnative forb species common to the Western sagebrush region and to evaluate land manager beliefs about changes in their ecosystems, including those affecting forb species.

Native forbs Sphaeralcea munroana, Crepis acuminata, Linum lewisii, Penstemon palmeri, and Oenothera pallida and non-natives Erodium cicutarium and Lactuca serriola were each subjected to two treatments: experimental warming using open-top chambers and a control. High-pressure needleless injection (HPNI) is a process where small-diameter, high-velocity burst of liquid, penetrate foods at pressures ≤ 10,000 psi. The potential of HPNI as an enhancing technique for meat was studied. In study 1, HPNI translocated surface E. coli O157 into the interior of beef eye-of-round subprimals with an incidence of 40 (±7), 25 (±8), and 25 (±8)% for meat that had been surface-inoculated with a four-strain cocktail at 0.5, 1, and 2 log10 CFU/cm2, respectively. Obesity results from a complex interaction between diet, physical activity, and the environment. The purposes of this study were to identify behaviors associated with resilience to childhood obesity, and to compare the sensitivity of the Figure Rating Scales (FRS) in reflecting Body Mass Index (BMI).

Fifty health professionals in nutrition and 35 low-income, parent-and-child pairs completed the study. Children aged 6-11, perceived as “normal-weight” by their parents, were recruited. Five children had a measured BMI above the 85th percentile. Using a picture-sort method, each participant responded to a series of questions about 13 childhood obesity-related messages. The HIV/AIDS epidemic is currently one of the greatest health challenges being faced by many developing nations, especially countries of Sub-Saharan Africa. It is estimated that more than 25 million Sub-Saharan Africans are infected with the disease, with more than 2.8 million new infected cases in 2006. Mortality from the disease is high, with an estimated 2.1 million having already died from the disease. Women are more likely to be infected with the disease, and account for more than half of all global HIV/AIDS cases. This study investigated the use of extrusion technology and fat replacers to produce high protein, low fat Cheddar cheese. In chapter 3, four different fat replacers were tested at the highest concentration level of each, as recommended by the manufacturers for low fat cheese, to investigate the change in cheese texture and optimize extruder conditions. In addition, the press time/pressure combinations of the extruded cheeses were optimized. The fat replacers and extruder conditions that were effective in improving the texture of low fat cheese were then used in chapter 4.

Although healthy relationship initiatives are becoming more common, relatively little is known about the processes and outcomes of these initiatives. This study uses a phenomenological qualitative approach to examine the experiences of Family and Consumer Science (FCS) extension agents in the implementation of couple and relationship education in the Utah Healthy Relationship Initiative. Data were collected through quarterly report forms submitted by extension agents describing successes and barriers to their work. Successes in the project related to collaborative partnerships, attendance/participation, and positive outcomes for participants. Breast cancer is the most common non-skin cancer in women and the second most common cause of cancer-related death in U.S. women. Despite numerous advances in treatment strategies against breast cancer, the presence of undetected distant metastasis of the primary tumor remains the main cause of mortality. Current screening and detection methods such as mammograms are simply not sensitive enough to detect formation of metastasis. Lifestyle behaviors have been associated with better cognitive status and reduced risk of dementia. However, only individual or combinations of a few lifestyle behaviors have been studied. The present study examines the association between lifestyle behaviors and cognitive status in older adults including six lifestyle behaviors: cognitive activities, social activities, physical activities, religious involvement, diet, and alcohol consumption.

Salmonella is a food-borne pathogen that leads to substantial illness worldwide. The clinical syndromes associated with Salmonella infection are enteric (typhoid) fever and gastroenteritis, in healthy humans. Typhoid fever is caused by host-adapted S. Typhi and S. Paratyphi. Gastroenteritis is caused by serovars usually referred to as non typhoidal Salmonellae (NTS). In recent years, an increasing number of outbreaks due to NTS, despite increased efforts in food safety, were reported because of persistence of Salmonella in the food chain. Piñon and juniper tree species have species-specific climatic requirements, resulting in unique distributions and differential responses to climate change. Piñons and junipers co-dominate the arid woodlands of North America as groups with widespread hybridization. Two piñons, Pinus edulis; P. monophylla, and four junipers, Juniperus deppeana var. deppeana; J. monosperma; J. occidentalis; J. osteosperma, are endemic to the midlatitude interior west and form three groups of hybridizing sister species, P. edulis-P. monophylla; J. deppeana var. deppeana-J. monosperma; J. occidentalis-J. osteosperma. Flavor lexicons are used in sensory evaluation to determine the flavor profile of a food product. The objective of this study was to develop a flavor lexicon for cooked beef, which can then be used in various projects relating to beef quality such as studies investigating animal diet, marinating, ageing, or other enhancements. Few studies have evaluated structured, long-term, family-based, weight management programs in children. This study’s purpose was to determine if completion of such a program resulted in reduced body mass index (BMI) z-scores and improved lifestyle habits.

An observational study overtime from 2008-2010 was conducted with 89 overweight/obese children. Subjects were divided into two groups, compliers (completed ≥ 7 intervention classes) and non-compliers (completed < 7 intervention classes.) The LiVe program, a 12-month structured, multi-component, family-based program, served as the study intervention. Anthropometric measurements and a written survey on lifestyle habits were used to obtain changes over 12 months in anthropometric, nutrition, activity, and behavior habits for subjects.

Descriptive statistics, chi square, analysis of co-variance, and a mixed model logistic regression were used to determine anthropometric and lifestyle habits change over time as well as differences between age, gender, and compliance groups. No demographic differences …

Quaking aspen (Populus tremuloides) clones within close proximity to one another can exhibit drastically different levels of browsing by ungulates. The objectives of this study were to (1) determine interclonal differences in plant chemistry between adjacent clones exhibiting different degrees of herbivory which may influence the browsing behavior and patterns of ungulates, and (2) determine if correlation exists in the levels of salicortin and tremulacin between current year's suckers and current year's growth on older trees. The growing season for vegetable crops is limited by freezing temperatures in arid high elevation climates such as northern Utah. Logan, Utah (41.73 N, 111.83 W, 1382 m elevation) has a short, variable growing season with an average frost-free period of 135 days. Extending the growing season provides growers with an opportunity to extend revenue into a normally unproductive period and benefit from out-of-season price premiums. This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey.

A number of studies have demonstrated the ability of free fatty acids to activate taste cells and elicit behavioral responses consistent with there being a taste of fat. Here I show for the first time that long chain unsaturated free fatty acid, linoleic acid, depolarizes taste cells and elicits a robust intracellular calcium rise via the activation of transient receptor potential channel type M5. The linoleic acid-induced responses depend on G protein-phospholipase C pathway indicative of the involvement of G protein-coupled receptors in the transduction of fatty acids. Milk fat globule membrane surrounds the fat droplets of milk. It is a biopolymer containing primarily membrane glycoproteins and polar lipids which contribute to its properties as a possible neutraceutical. The aims of the studies were to determine if dietary milk fat globule membrane: (1) confers protection against colon carcinogenesis; and (2) promotes gut mucosal integrity while decreasing inflammation compared to diets containing corn oil or anhydrous milk fat.

My research provided new information concerning the management, ecology, and conservation of greater sage-grouse (Centrocercus urophasianus). I report the results of an experiment using strategic intensive sheep grazing to enhance the quality of greater sage-grouse brood-rearing habitat. Although forb cover, an important component of brood-rearing habitat, responded positively to the grazing treatment, the response of other habitat variables was suppressed because the plots were not protected from domestic and wild herbivores during the years following the treatments. Young's schema theory offers a theoretical approach that relates negative childhood experiences, temperament, and early maladaptive schema, to the experience of negative affect and/or depression in adulthood. However, despite the widespread use of schema therapy in clinical practice, little research has explored the pathways theorized by Young. This study explored the pathways posited by Young and colleagues looking at the direct and indirect relationships among negative childhood experience, temperament, early maladaptive schema, and the experience of negative affect in adulthood. Two independent studies were conducted to assess the effects of feeding condensed tannin (CT)-containing forages to continuous cultures to evaluate their impacts on ruminal fermentation and digestibility, with an emphasis on methane (CH4) and ammonia-N (NH3-N) production. In Chapter 3, treatments consisted of: 1) 100% alfalfa hay (AH), 2) 50% AH and 50% birdsfoot trefoil hay (dry matter (DM) basis; AHBFTH), and 3) 100% birdsfoot trefoil hay (BFTH). Aflatoxin M1 (AFM1) is frequently found in milk and dairy products. It is a metabolite formed in cows from aflatoxin B1 (AFB1), contained in animal feeds. In cheese production AFM1 distributes between curds and whey. In this study, cows were fed 64 µg/AFB1/d for the high treatment, and 5 µg/AFB1/d for the low treatment, to obtain milk contaminated with AFM1 over the 0.5 µg/L and under 0.05 µg/L restrictions, respectively. This study was designed to observe the effects of selenium from plant material in sheep after a single, oral dose. Purified sodium selenite and selenomethionine were given as positive controls. The plant Symphyotrichum spathulatum (Western Mountain Aster) was collected, analyzed for selenium content, and administered orally to sheep at varying doses according to body weight. Clinical signs were observed for 7 days during which time whole blood, serum, and expired air were collected. Following euthanasia, tissues were collected for histopathological analysis and mineral analysis.

Unleached root-zones represent an environmental ideal by eliminating wasteful leaching of nutrients and water. NASA grows plants in space in unleached root-zones, incorporating polymer-coated fertilizer (PCF) into a ceramic media (Turface or Profile). However, lack of growth productivity in space has led to the need for research to improve the nutritional and physical environment of the root-zone, which is the objective of this research.
