Consumer demand for organic products has shown double-digit growth in recent years encouraging the development of a wider range of goods (Greene, 2017). Americans with an annual household income under $30,000 actively purchase organic foods at nearly the same rate as households with over $75,000 in annual incomes, 42% versus 49% (Greene et al., 2017). Previous research observed the adoption of organic farming practices on a combination of different grains, fruits and vegetables, meat, and dairy products from across the globe. The goal of this study was to investigate feedlot performance and meat quality of calves born to cows that underwent a nutrient restriction during the second trimester of gestation which may be occurring in the Intermountain West. Thirty-four angus influenced calves from the same sire were used for this study. The calves were born from cows that were separated into either a maintenance group, and kept on an irrigated pasture, or a restricted group, that was placed on an unirrigated pasture and allowed to lose one body condition score during the second trimester of pregnancy. Prior work by our research group showed that the total Western diet (TWD), a rodent diet which models the typical American diet, promoted the development of colon tumors when fed to mice. Other researchers previously showed that vancomycin, an antibiotic that changes the gut microbiome composition, causes differential changes in the severity of colon inflammation and CRC. Our goal was to determine the combined effects of feeding the TWD and vancomycin treatment on colitis and CRC, and if these factors interact. Rumen protected Methionine (MET) and Lysine (LYS) are critical for milk protein synthesis in dairy cows. N-acetyl-L-methionine (NALM) is a MET derivative that consists of L-Met protected with an acetyl group that is attached to the α-amino group.N-acetyl-L-lysine (NALL) is a LYS derivative that is similarly protected. Researchers at Utah State University created a school intervention called the FIT Game that has successfully increased children’s vegetable intake during lunchtime. The aim of this project was to create a home aspect to the FIT Game for parents that would increase the availability of vegetables within the home. Studies within this thesis discuss the development and revision of parent newsletters for the FIT Game program, as well as the implementation and assessment of the revised newsletters. Results from the assessments indicate that providing parent newsletters is not enough to change the vegetable availability at home.

The Western Dairy Center at Utah State University funded this project to investigate cheese research using concentrated milks. Concentrated milk was provided by the South Dakota State University and starter culture for this study was prepared and donated by Vivolac Cultures Corporation, Greenfield, Indiana.

The project initiated as a continuation of a previous study on effects of protein concentration, coagulum cut size and set temperature on curd moisture loss kinetics while stirring during cheesemaking. It was aimed at determining the extent to which pH drop prior to draining and final cheese moisture when using microfiltered concentrated milk.

The loss of large apex predators, and their subsequent reintroduction, has been identified as a substantial driver on the structure and function of ecological communities through behavioral mediated trophic cascades (BMTCs). The reintroduction of wolves (Canis lupus) to Yellowstone National Park (YNP) has served as foundational case study of BMTCs. In our system, it has been suggested that wolves have established a ‘landscape of fear’ in which the primary prey, elk (Cervus elaphus), now avoid risky places, which ultimately led to the recovery of the vegetation community. Michigan’s Food, Agriculture, and Resources in Motion (FARM) Science Lab is a 40-foot mobile classroom outfitted with 10 learning stations including scientific equipment and iPads. This quasi-experimental study analyzed preexisting data provided by Michigan Agriculture in the Classroom to evaluate the effectiveness of the FARM Science Lab mobile classroom as a method of teaching agriculture-themed, standards-based lessons to third- through fifth-grade students in order to increase their understanding of agriculture. In industry, antioxidants are added to prevent changes that affect quality due to oxidation, such as the development of off flavors, unacceptable odors and discoloration. New resources that are familiar to consumers and may work as antioxidants should be studied.

The changes in antioxidant activity were determined for four freeze-dried native wild berry powder species in Utah, including skunkbush (Rhus trilobata), chokecherry (Prunus virginiana), river hawthorn (Crataegus douglasii) and silver buffaloberry (Shepherdia argentea), during cold storage (-20 °C) for 6 months. The Fueling Station at Utah State University was created to provide pre-workout fueling and post-workout recovery foods to the Utah State University athletes. The athletes use an online survey to mark what foods they selected after each visit to the Fueling Station.

There is a large amount of research on the lack of sports nutrition knowledge in collegiate athletes, but there is little information on the dietary intake of athletes, the education of athletes, and the education of macronutrient timing in athletes.

Our understanding of how the world works is shaped through countless interactions with things in it. These interactions are our first exposure to science. Through them, we learn that heavy things are hard to push and books do not fall through tables. Our interactions are also shaped by the rules of the groups to which we belong (e.g., families, religious organizations, athletic teams). These rules lead us to accept that some things cannot or should not be done, limiting our interactions with the world. Woodpeckers create nesting cavities for other birds and animals in forests. This creates dynamic interactions between both woodpeckers and these other animals. Using video cameras, we documented direct behavioral interactions between nesting woodpeckers and other animals in the Eastern Washington Cascades during the 2015 and 2016 breeding seasons. Additionally, we offered 937 students in a General Biology laboratory course to participate in this original research opportunity and described and the impact the experience had on the participants as well as the researchers.

Climate change in the East African country of Uganda is causing severe variations in the once predictable seasonal weather patterns that farmers had come to depend on. This, in combination with social and economic challenges, has significantly increased the vulnerability of farmers who make up the majority of Uganda’s population. The Western Dairy Center at Utah State University funded this project as part of its BUILD Dairy program with support from the dairy farmers of Idaho, to investigate the problem of splits that form in cheese during storage. The bacteria, Lactobacillus wasatchensis had previously been identified as a cause of unwanted gas production in cheese and the defects then make the cheese unsuitable for cutting into slices.

The 1996 welfare reforms were part of a bipartisan consensus led by Democratic President Bill Clinton and a Republican Congress about the downfalls of the existing United States welfare system. Under these reforms, Temporary Assistance for Needy Families (TANF) replaced Aid to Families with Dependent Children (AFDC), which was an entitlement program that had been in effect since 1935. Similar to AFDC, TANF intended to serve as a safety net that provides cash assistance to needy families, but it also aimed to reduce government dependence by attempting to instill values in welfare recipients through stricter work requirements and eligibility criteria. …

Health disparities exist between rural and urban areas but geographic comparisons of mental health are less studied and conclusive. Maternal depression has not been examined by region or rurality in the United States but might be influenced by geographic locations due to the variance of social support and healthcare available in some locations compared to others. The research focuses on (1) whether rurality increases a mother’s risk of experiencing depression and (2) if region impacts a mother’s risk of depression. This study was completed to better understand pronghorn antelope (Antilocapra americana) populations found throughout Idaho. Antelope were studied in three separate and distinct study areas. The Big Desert, Camas Prairie, and Little Lost and Pahsimeroi valleys were all selected as study sites. Idaho Department of Fish and Game (IDFG) is concerned with current pronghorn populations found throughout Idaho. Pronghorn are a valued big game species found in Idaho. Increasing pronghorn populations in Idaho is a focus of IDFG.

The composition of the gut microbiome can be affected by environmental factors, such as diet. The Western dietary pattern is associated with microbiome dysbiosis and adverse health outcomes, including obesity and metabolic disorders. Despite a persistent increase in South Korea’s divorce rate, our understanding of the economic determinants of divorce in South Korea is very limited. In particular, the relationship between nonstandard employment and divorce has received little attention, even though the number of nonstandard employees has rapidly increased in recent years. This paper examines the extent to which one’s employment type is associated with marital dissolution in South Korea, using nationally representative longitudinal data (the Korea Welfare Panel Study from 2007 to 2013). Cattle are responsible for greenhouse gas emissions such as carbon dioxide, methane and nitrous oxide. In particular, the cow-calf phase of production accounts for approximately 80 percent of the total beef production system greenhouse gas emissions. Tannins are chemical compounds found in certain forages and they have the potential to help reduce these negative environmental impacts. Thus, given that the cow-calf phase often relies on feeding hay, feeding tannin-containing hays may represent a significant mitigation practice.

We chose to use a healthy behavior program called the “FIT Game” that has successfully increased FV consumption among elementary-aged children over short periods of time. The purpose of this research study was to compile regional profiles of the consumers who intend to consume grass-fed beef in the U.S. and to create marketing strategies that would assist producers in marketing their product to consumers. The researcher sent an online survey to a panel of 484 consumers across the U.S. to learn about their perceptions of and intention to purchase grass-fed beef.

The decline in greater sage-grouse (Centrocercus urophasianus; sage-grouse) populations across western North America has been primarily attributed to loss and fragmentation of their sagebrush (Artemisia spp.) habitats. This habitat loss is largely the result of increased human activities, with grazing by domestic livestock as the most predominant land use across the sagebrush ecosystem in North America. Impulsivity takes many forms, one of which is termed impulsive choice. Impulsive choice entails preference for an outcome due to its immediacy relative to more optimal outcomes that take longer to come to fruition. For example, one may wish to have another serving of a decadent dessert after dinner—but doing so may undermine a longer-term goal of improved health and nutrition. If having the extra serving becomes a habit, the consequences of that choice compound and may lead to, for example, obesity.
