The relationship between the fluoride content of the enamel and dentine of deciduous teeth and the number of tooth lesions/mouth was compared to fluoride treatment in Logan, Brigham City, Helper and Milford, Utah. Bone measurement data was obtained on the second metacarpal bones of the mothers of the participating children from the same communities except Brigham City.
The fluoride treatment in the communities were as follows: Logan has no fluoride added to the domestic water supply but some children received fluoride treatment through tablets, drops, etc. Milford has water which naturally contains 0.8 ppm fluoride, Helper and Brigham City have …

This study compares insect and cattle consumption of crested wheatgrass (Agropycon spp.) on a site in Sterling Ranch, Utah County, Utah. The hypothesis tested is that insect consumption in general, and specifically consumption by Labops hesperius Uhler, significantly reduces total available cattle forage.
Labops and grasshoppers were probably the major cause of secondary damage at the study site, while the impact of thrips is unknown. A detrimental impact on range was suggested by the data, as insects consumed forage equivalent to 2.8 animal units per month, while cattle consumed forage equivalent to 2.1 animal units per month at the …

This study examined the food interactions between Utah prairie dogs (Cynomys parvidens, Allen) and cattle (Bos taurus). During 1974 and 1975, three prairie dog colonies near Panguitch, Utah, were studied intensely: "Oldfield" was chosen to represent colonies near fields of alfalfa (Medicago sativa); "Lowercrested" was chosen to represent colonies below 2,200 meters above sea level (a.s.l.) which were not near alfalfa, and "Uppercrested" was chosen to represent colonies above 2,200 meters a.s.l. which have been planted with crested wheatgrass.

A study on the influence of nutrition education experiences was conducted in the Child Development Preschool Laboratory at Southern Utah State College in Cedar City, Utah, with thirty-two preschool children. Sixteen of the children were exposed to nutrition experiences through food activities and stories.
It was found that the sixteen children who were involved in the fifteen nutrition experiences significantly increased their knowledge of nutrition concepts and further modified their own personal food choices. The control group, which was not exposed to nutrition activities, made no significant change in knowledge of nutrition concepts and no modification of personal food choices. …

Characteristics of consumers who used unit pricing were compared to consumers who did not use unit pricing. A numerical rating was developed to aid the researcher in classifying consumers into two extreme groups, "usually" and "seldom." The sample consisted of 50 shoppers who usually and 50 shoppers who seldom used unit pricing. Data was collected at a local supermarket where unit pricing is provided.

Attitudes of primiparous women toward childbirth were studied longitudinally as they varied with the intervention of childbirth education classes before delivery; and as they varied with the experience of labor and deli very and having a baby in the home after delivery. An anxiety scale was used measuring anxiety toward labor, delivery, the parenthood role, and stress on the marriage relationship. Measurement on the anxiety scale was taken prior to childbirth education when primiparous mothers ranged from 4 months to 7-1/2 months gestation. An increasing interest in fecal analysis as a method of determining diets of herbivores prompted research to determine if this method could be used successfully to determine diets of pronghorn antelope found in Utah's cold desert rangelands. In addition to fecal analysis, quantitative estimates of pronghorn diets were derived from rumen analysis and feeding site observations. Rumen samples were analyzed by three different methods: (1) microscopic, (2) gravimetric, and (3) point frame. The effects of mechanical desinewing on yield, proximate analyses and connective tissue content of pork and beef have been examined and its influence on the appearance and palatability of cooked salami was evaluated. Mechanical desinewing removed approximately half of the connective tissue and reduced the tendency for formation of gelatin pockets in cooked salami. Yields from the desinewer ranged from 71 to 87 percent, however, cooking yield defined as cooked weight divided by uncooked weight from the desinewed salami were 6 to 7 percent higher than from the nondesinewed salami. Nitrite at the level found in turkey frankfurter formulations vii did not interfere in the hydrazone test as developed by Andrews (1975). The aldehyde levels of frankfurters made principally from MD turkey meat were, on the average, twice as high as the levels in the raw meat. Aldehyde levels generally increased as the frozen storage time of the raw meat increased. There were some variations from this trend due to variation in the fat content of the raw meat. Forty-nine female rats initially weighing about 95 grams were used in this experiment to determine the effect of contraceptive hormones on body composition in zinc deficient and zinc supplemented rats. Four treatment groups were: 2 ppm of dietary zinc with daily contraceptive steroid injections, or with placebo injection, and 140 ppm of dietary zinc with contraceptive steroid injection or with placebo. The daily injected steroids consisted of 0.1ug of Ethynyl Estradiol and 0.1mg of Medroxyprogesterone in 0.1ml of corn oil. Non-hormone treated groups received 0.1ml of plain corn oil. An automated continuous flow analysis for milk protein utilizing ultraviolet spectroscopy resulted in a correlation coefficient of 0.972 and a standard estimate of error of 0.082 percent protein when 30 samples were compared with the acid orange 12 dye binding method. Milk was solubilized in 95-105 volumes of acetic acid using the Technicon Auto Analyzer II and measured for absorbance at 274 nanometers. No deviation from the standard method due to mastitis and varying milk fat concentration was observed. A theoretical model indicated a possible standard estimate of error 0.059 percent protein due to inter- and intra-breed variation in milk …

A Wescor Vapor Pressure Osmometer measured the osmolality of a solution by sensing the vapor pressure above the solution in a closed chamber. The instrument sensing element comprised a precision thermocouple which measured the dew point temperature depression, a function of the water vapor pressure in the chamber. It used approximately 5-7 microliter samples to saturate a 0.64 cm filter paper disc. The instrument fixed a milliosmolal digital reading and signaled test completion in 110 seconds. Eleven strains of lactic cultures were used to determine their effectiveness in different bulk culture media for the manufacture of Cottage cheese. The acid phosphate-treated whey-based medium (APWM) made from Cottage cheese whey was found to be as effective as sweet phosphate-treated whey-based medium (PWM) made from Swiss cheese whey in supporting the development of lactic cultures. The relative activity of cultures in APWM with pH control was higher than phage inhibitory medium and nonfat dry milk without pH control. Compatibility of mixed cultures of Streptococcus lactis and Streptococcus cremoris were studied by the phage tracer technique in 10% nonfat dry milk and a whey-based phage inhibitory medium. Methods of membrane dialysis and differential enumeration were tried and abandoned. Dominance occurred in nonfat dry milk and in the whey-based medium during a continuous fermentation period within a pH range 6.8 to 5.2. The dominance pattern of two-strain combinations in 10% nonfat dry milk was different from that in the whey-based media. This study was a follow-up of the Christiansen study which was completed in 1967. Dr. Christiansen's 26 subjects ranged in age from 33 to 60 years. Ten were designated as controls and the other 16 were placed on a high polyunsaturated fatty acid (PUFA) diet for a period of 26 weeks.
The purpose of doing a follow-up was to determine what effect the study had on present dietary patterns, serum lipid levels and rate of erythrocyte hemolysis.

The metachromatic agar-diffusion test of Lachica, Hoeprich, and Genigeorgis (1971) was modified by adding 17 ml of the agar medium to a 100 by 15 mm plastic petri dish, using 5 µl samples and 3 mm wells. The test detected 0.5 ng/ml of thermonuclease in 3 hr at 37 C. This was equivalent to 106 to 107 cells/ml of Staphylococcus aureus strains 196 E, 14458, and 19095 grown in Brain Heart Infusion (BHI) broth. The test sensitivity was decreased ten fold in raw and pasteurized milk.

The Technicon OSCC II was evaluated for application in dairy herd improvement central laboratories. Dilution using a Fisher Autodiluter made sample preparation for assay less time consuming and more convenient and resulted in the same accuracy as with the manual syringe technique.
Sample storage and the presence of a potassium dichromate preservative tablet had little effect on somatic cell count when tested within two days at room temperatures (20-23 C) or within four days at refrigeration temperatures (4-7 C). The preservative tablet caused an average increase of 14,000 cells/ml. The average cell count dropped 26 percent following two days at …

To assess the effects of gamma radiation at low doses, spores of Penicillium expansum NRRL 971 and Penicillium patulum NRRL 989 were exposed to doses of 0, 50, 100, 150, and 200 krads. The amount of patulin for each culture was quantitatively determined and growth at each dose was evaluated. The results showed a 31% increase in the amount of patulin synthesis after a dose of 150 krads for Penicillium expansum. At 200 krads, both fungi showed low levels of patulin production and inhibited growth.

Anthocyanin pigments of sour cherry (prunus cerasus L., cultivar Montmorency) fruit were studied by spectrophotometry, paper and two-dimensional thin layer chromatography and disc electrophoretic method. Mature and wholesome fresh sour cherries and freeze-dried compressed sour cherries stored at 70 F and 100 F for 6 months were used.
A total of seven anthocyanin pigments were observed in both paper and thin layer chromatograms of the fresh and freeze-dried compressed samples stored for O month whereas the freeze-dried compressed samples stored at 70 F and 100 F for 6 months showed the retention of three to six pigments. Aboveground biomass, litter biomass and root biomass of a crested wheatrgrass (Agropyron desertorum [Fisch.] Schult.) dominated community were inventoried in the fall of 1971, 1972, and 1973. In addition, energy, nitrogen, fats and ash determinations were made on the materials collected in 1972 and 1973.
The sampling methods used generated data sufficiently precise to detect significant differences (α = .10) among biomass components among years. The chemical contents of the components were similar in the fall of 1972 and the fall of 1973 despite the large differences in growing season precipitation.

Production functions were generated for dry matter and grain yields of corn, A continuous variable plot design replicated four times was established in the spring of 1974 in Vernal, Utah. Each replication included ten salt treatments and twenty irrigation levels. The salt treatments resulted in an average root zone salinity ranging from 2 . 7 to 14.9 mmhos/cm. Irrigation levels ranged from 4.2 to 45.0cm of water applied. Dry matter (Kg/ha) yield showed an 83 percent reduction over the range of salt applied and a 52 percent reduction over the range of water applied. Grain yield declined 96 and 64 …

Chick feeding tests were conducted to study the effects of dietary imbalances among the three branched chain amino acids on growth rate. All diets fed in these tests contained about 18% protein. The indispensable amino acids (IAA) were found in two of the diets fed in the proportions found by Dobson et al. (1964) to be well balanced. One of the diets had all IAA at 85% of these balanced levels while the other had them all at 125% of these levels. Two intermediate wheatgrass seedings with different levels of grass bug infestation were evaluated for herbage production, seedhead production, percent dry matter, crude protein, and cell contents. Study sites were located at different elevations on mountain summer ranges in northern (Site I) and central (Site II) Utah. Study plots at Site I and Site II were infested with 113 and 210 bugs per sweep, respectively. Herbage production appeared to be reduced in early spring on the site with the higher infestation; however, no effect on season-long herbage production could be detected on either site. High bicarbonate-soluble phosphorus (P) in some Utah subsoils may affect the validity of fertilizer recommendations based on plow layer samples. The primary objective of this experiment was to determine the proportion of plant P derived from subsoils at typical Utah soil P levels and soil temperatures.
A calcareous soil very low in bicarbonate-soluble P was treated with various amounts of P and packed into deep pots to provide 24 centimeters of "topsoil" and 27 centimeters of "subsoil". A model is developed to predict the effects of soil salinity on crop growth. Greenhouses were constructed to control temperatures to which peach trees were exposed. It was noted that hardening and dehardening usually followed the temperature fluctuation fairly closely. However, trees exposed to temperatures above 60 F (15.6 C) became hardy to 0 F (-17.8 C).

Twenty-six first lactation dairy cattle were sampled biweekly for four months to determine the effect of five levels of nutrition on blood plasma corticoids, total and differential leucocytes, hemoglobin and packed cell volume. Cows completing their 305 day lactation during the four month sampling interval were removed from the experimental herd, but were sampled twice more.
It was hypothesized that cows on rations below NRC requirements for milk production would demonstrate stress symptoms of elevated plasma corticoids, elevated white blood count, neutrophilia and eosinopenia. The purpose of this study was to determine the consistency with which Extension workers in Utah interpret data elements for reporting Extension activities into State Extension Management Information System (SEMIS). Subsequent insight into the areas of greatest inconsistencies and in-service training needs were gained. Extension workers in Utah were asked to report a predetermined list of hypothetical activities on the SEMIS weekly report form. These together with other report forms of previously submitted reports of common activities were studied in detail.
