Consumers of Cheddar cheese expect consistent flavor and texture in the cheese they eat. Cheese flavor and texture is highly influenced by the bacteria cheese makers add during cheese production. These bacteria are generally responsible for the flavors and textures consumers associate with Cheddar cheese and are referred to as starters.
Sometimes during cheese manufacture off-flavors and textures can arise that make the cheese unappealing to eat. One such flavor that is off putting is bitterness. The bitter taste in cheese arises while the cheese is aging and is largely due to the same flavor producing starters added to the …

A presidential election is, arguably, the most important event in the American political system. The Congress and the president are undoubtedly affected by the pressures and publicity of these events, but we have little understanding of whether the Supreme Court behaves differently in presidential election years. In this paper, I argue that the Supreme Court will experience more consensus in its decisions and make less use of judicial review because of the potential for heightened public scrutiny that can arise during the term overlapping with a presidential election. I test this claim using ordinary least squares regression. I find that …

The majority of Early Intervention clinics throughout the United States are currently using a practice that is not considered evidence based. When teaching skills to children with developmental disabilities, clinicians assign an accuracy standard for those skills. The most common accuracy standard, called a “mastery criterion,” is 80% across three teaching sessions. There is little to no evidence to support using this specific mastery criterion. The purpose of this study was to add more research regarding this topic, and how it affects how the skills taught maintain over time when teaching has ceased for a specific skill. Two children were …

Gas production in cheese making is becoming increasingly prevalent in the dairy industry. This gas is produced by microbes that are naturally found in the cheese, and when they metabolize sugar or other sources of energy, they can produce gas. This gas causes slits and cracks in the cheese, which causes the cheese to be worth less and causes issues during slicing and shredding. There are many microbes that cause unwanted gas in cheese, this research focuses on four know gas producers and five other protective microbes that use the same energy sources or have the ability to inhibit the …

The first few years of life are viewed as a critical period for development. Children who do not grow and develop well in these early years can experience life-long negative implications. Many children under the age of five in Ecuador suffer from high rates of malnutrition, stunting (low height-for-age), and delayed cognitive development. This dissertation aims to better understand why children from Ecuador, specifically from the Amazon region, are experiencing such high rates of delayed development. Fifty children and their mothers living in the Amazon region of Ecuador participated in this research study.

Family communication establishes expectations for a variety of behaviors, including emotion expression. This study explored if patterns of family communication were related to five behaviors that young adults might use to cope (drinking alcohol, watching TV, masturbating, eating, and exercising) via emotion regulation strategies. The data used for this study came from 504 young adults living across the United States who completed an online survey which asked them questions about how their family communicated when they were adolescents, their emotion regulation strategies, and how often they use the five coping behaviors listed above. Nighttime irrigation scheduling is a longstanding water conservation approach to reduce evaporative losses in Utah's semi-arid, urban landscapes. However, residential demand now exceeds system capacity, and the efficiency of the practice has come under question. Therefore, the objectives of this study include: 1) quantify whether a water savings exists between day and night irrigation with a water balance and energy balance approach, and 2) analyze microclimate and crop quality effects to determine any changes to evaporative demand or plant stress by irrigation timing. This dissertation intends to develop an understanding of how culturally centered learning environments impact youth’s relationship with culture. Working alongside a multicultural team of researchers, educators, and designers who came together with a shared goal of designing curricular activities to engage sixth graders with culture, I followed 12 sixth graders for a school year to understand their development of relationships with culture. I (re)conceptualize the holistic process of learning and engagement with culture as Ti-Wu and propose a cultural learning model that helps us understand how youth develop multiple relationships with culture. While many efforts have been made to make higher education in the US more equitable, there are still academic spaces in which some knowledges and some knowledge makers are marginalized. In this dissertation, I identify three such spaces: technical editing, graduate instructor training, and online academic research in trans communities. When editors make revisions based solely in American Standard English, as most editing practices and teaching are currently based, they risk marginalizing non-heritage speakers of English and speakers of various dialects of English, like African American Vernacular English. I suggest that by shifting our focus of editing from grammar policing …

In 2019, RAND Corporation asked teachers which digital materials they used. This study expanded on this research by exploring the features contained in these programs. The purpose of this study was to investigate the relationships between teachers’ access to features and school (e.g., grand band, socioeconomic status), teacher (e.g., experience), and feature characteristics (e.g., feature choice). I report a significant regression model to predict the likelihood for a teacher to have access to each of the six features within differing contexts based on the characteristics.

The Scintillation Prediction Observation Research Task (SPORT) is a joint United States of America and Brazil 6U CubeSat mission. The SPORT mission is to understand how the Earth’s ionosphere evolves during day and night transitions. Space Weather Probes, a suite of instruments developed by Utah State University, monitors the ionosphere by observing currents and voltages around the SPORT spacecraft body. This thesis presents the data collected by Space Weather Probes and how it is used to measure the ionosphere. Modeling techniques are also presented to demonstrate how the Space Weather Probes instrument is expected to respond to the ionosphere.

This study examines the use of leaf area index (LAI) to inform variable-rate irrigation (VRI) for irrigated alfalfa (Medicago sativa). LAI is useful for predicting zone-specific evapotranspiration (ETc). One approach toward estimating LAI is to utilize the relationship between LAI and visible vegetation indices (VVIs) using unmanned aerial vehicle (UAV) imagery. All new grain bins produced after 2018 are recommended to have anchor points capable of handling a 2000 lb loading for attachment of bin entry lifeline systems. This study aims to assess the feasibility of a safe entry anchor point retrofit by using finite element analysis (FEA). We used a grain bin owned by Penn State for 3D FEA modeling in SolidWorks. To validate the model results from the FEA model, first strain and then deflection measurements were conducted on the grain. Selenium (Se) contamination of public lands and water is a result of irrigated agriculture and mining activities in areas rich in Se geologic deposits. Pariette Draw is part of the northern Colorado Plateau and is an area of concern for Se contamination in the Pariette Wetlands. Pariette Wetlands, a wetland built in the 1970s to provide wildlife habitat, is distinguished by its arid climate and a short growing season of hot dry summers followed by cold winters with several months below freezing. An understanding of how Se is mobilized and removed within the wetland will provide management strategies that minimize …

What is a collection file, anyway? This work-in-progress summarizes the results of a sample survey of archivists to better understand the purpose, function, and contents of collection files, how archivists learn to create collection files, and their potential for public access and use. From these results, we can extrapolate a preliminary definition of the collection file, as well as the potential for future study and critical analysis of the practical elements of collection file work, especially in relation to archival accessioning, deaccessioning, and repatriation.

Exposure to nature views has been associated with diverse mental health and cognitive capacity benefits. Yet, much of this evidence was derived in adult samples and typically only involves residential views of nature. Findings from studies with children suggest that when more greenness is available at home or school, children have higher academic performance and have expedited attention restoration, although most studies utilize coarse or subjective assessments of exposure to nature and largely neglect investigation among young children. Lungs are a prototypical trait of most tetrapods, but some amphibians have become secondarily lungless over evolutionary time. Anuran (frog) tadpoles offer an opportunity to examine lung loss from an evolutionary perspective, because there are many independent instances where lungs are not inflated until adulthood, and so are functionally lost. Lung loss is typically associated with living in fast-flowing streams, and so we examined larval lung development in the stream specialist family Heleophrynidae. We find that one genus, Hadromophryne Van Dijk, 2008, has large lungs as tadpole, while the other genus, Heleophryne Sclater, 1898, has much smaller, stunted lung buds. …

Nanoparticles effectively control most plant pathogens, although research has focused more on their antimicrobial than their nematocidal properties. This study synthesized silver nanoparticles (Ag-NPs) through a green biosynthesis method using an aqueous extract of Ficus sycomorus leaves (FS-Ag-NPs). The nanoparticles were characterized using SEM, TEM, EDX, zeta sizer, and FTIR. The TEM results showed that the synthesized NPs were nanoscale and had an average particle size of 33 ± 1 nm. The elemental silver signal at 3 keV confirmed the formation of Ag-NPs from an aqueous leaf extract of F. sycomorus. The FTIR analysis revealed the existence of several …

Many studies have examined individual water-saving management practices for corn (Zea mays L.), but few studies have looked at how combinations of practices might further enhance water optimization. The research objectives of this paper were to evaluate the impact of irrigation technology, irrigation rate, and crop genetics, as well as their interactions, on silage corn yield and forage quality. Trials were conducted in three Utah locations from 2019 through 2021. The results from five site-years indicated that the best water optimization practices varied by site-year. Low-elevation sprinklers commonly applied water more efficiently, with four of the five site-years having …

Selecting the research approach that addresses the research question is often challenging for novice researchers. However, getting a better understanding of the research approaches available in the field, is likely to help novice researchers identify and choose the research approach that fits their situation. In this paper, we discuss microethnography, ethnographic case study, and mini-ethnography case study in order to show that these approaches may have similarities but are different. The author hopes that this discussion will help researchers get a better understanding of these approaches and dissipate the confusion that may exist.

Since 1992, Ghana has implemented several initiatives and reforms such as the National Anti-Corruption Plan (NACAP), Right to Information (RTI) Act, Economic and Organized Crime Office (EOCO), and the Office of the Special Prosecutor (OSP) with the goal of improving accountability while reducing corruption. High frequency radio communication has been the most reliable form of communication for many decades. Over that period, we have learned and experienced times of enhanced signals along with complete radio blackouts. The purpose of this research is to collect and analyze radio signal data to see the evidence of various reasons as to why these phenomena occur. A radio antenna was set up at USU campus to retrieve the signals from beacon networks across the globe that transmit signals every 15 minutes.
