In sugar-beet producing areas of the Intermountain West and Pacific Coast beet by-products constitute a most economical source of feed for fattening livestock.
In Utah there are available each year some 144,000 tons of wet beet pulp and some 20,000 tons of beet molasses; in addition, about 6500 tons of dried molasses beet pulp are available in the form of meal or pellets.
Practically all of this livestock feed supply, with a nutritive value equivalent to approximately 41,000 tons of corn or barley, has been fed, together with alfalfa hay, to cattle or sheep for maintenance or in the production …

Why children playing together, working together, under conditions which apparently vary but little, should exhibit such wide variation in health conditions, is a question of vital importance to all concerned with the care of children.

The purpose of this study is to collect and organize all data available to the investigator on the subject of calcium and phosphorus requirements for normal children. Since it is the business of nutrition to maintain health and prevent disorders, leaving the cure of disorders to the medical profession, this study deals with the calcium and phosphorus metabolism of normal children and avoids going into the pathological phases, taking up rickets and tetany only in so far as prevention is concerned.
If this study has any value it lies in the fact that the findings of investigators seem to be …

Cardon, the director, served as a member of the National Advisory Committee, Division of Subsistence Homesteads, Department of the Interior, from November 1, 1933 to April 10, 1934, acting as western representative of that division. Effective April 25, 1934, under the Agricultural Adjustment Administration, Land-Policy Section, Planning Division, he was appointed Regional Director of Arizona, California, Colorado, Nevada, and New Mexico. The flavor, quality and composition of market brick cheese varies greatly. Its moisture content often ranges from 37 to 43 per cent. The flavor may be similar to Limburger or it may even resemble that of Cheddar. Such a great variation in a specific food product tends toward disappointment for the consumer.
It is believed that a more uniform standard of quality for this product is needed to materially increase its consumption. Therefore, a detailed study of some of the factors involved in the manufacture of brick cheese may help to improve the quality and aid in determining a satisfactory …

The cherry is rapidly becoming Utah's most important fruit crop. According to the 1930 census, there were 110,050 bearing and 114,230 non-bearing cherry trees in Utah orchards. Most of these trees are sweet cherries, the newer plantings consisting mainly of Bing and Lambert trees, although Napoleon predominated in the older plantings.
The problem of pollination is of more importance with the cherry than with other- fruits, because of the large number of individual fruits required to make a crop and because of the self-sterility and intersterility shown by the major commercial sweet varieties.

The prime object of the work undertaken in the present study has been done with the view of determining whether or not the quality and yield of brick cheese may be improved by pasteurizing the milk from which the cheese is made. An effort should be made to put brick cheese-making on a more scientific basis and at the same time produce cheese of better and more uniform quality. Since milk, containing large numbers of undesirable microorganisms thus causing objectionable flavors and odors in dairy products, is frequently delivered to cheese factories to be processed, pasteurization seems to be one …

Fleeces from range-bred ewes wintered on desert ranges are compared in this bulletin with fleeces taken from ewes of the same breeding wintered under farm conditions, involving regular feeding, shelter, and free access to water. Four hundred and sixty-two fleeces are included in the comparison.

Data on the early studies on the curd character of milk are found in Utah Agricultural Experiment Station Bulletin 207 and, therefore, are not included here. The key to research in this field came to light with the development of the "Hill Test," the results of which were first published in 1923. This test furnished a means of quantitatively measuring the difference in curd character of various milks.

Pastures rank next to the alfalfa hay crop in total production of forage far livestock in Utah. For a number of years many tons of sprayed or dusted hay have been fed successfully to livestock by stockmen interested in controlling the alfalfa weevil; nevertheless. the supposed cases of poisoning that have been reported naturally have caused concern among feeders.
Further confusion on this question has resulted from reports on studies designed to determine the effect of lead arsenate instead of calcium arsenate.
Whether the lead in lead arsenate has been a more injurious agent than the arsenic, of course, is difficult to state. Most of the experiments performed in the feeding of sprayed or dusted hay have …
