Bread is a staple in the diet of many different populations around the world, and yeast is an important component of bread making. The amount of yeast fermentation that is achieved has a large impact on the outcome of the bread, most particularly on the final volume and density. Brownies are a very popular dessert. Many people are not able to tolerate the gluten in their diets, while some people may just want to add different flours. You can get other nutritional benefits from switching the flour from the all purpose flour. The alternatives in our experiment, or independent variables, were oat flour, rice flour, and banana flour. Each flour was used to bake a batch of brownies. After the brownies were finished, twelve people participated in a blind taste test. These participants subjectively tested the appearance, texture, and taste. Overall, all-purpose flour was the most desirable among participants. …

Juiciness and tenderness are two of the characteristics which define meat quality and acceptability for a consumer. The purpose of this experiment is to determine the effect on moisture loss, tenderness, chewability, taste, aroma, color, and texture on chicken breast when cooked using different methods such as: sous-vide (water bath), baking, air-frying, and pan-frying. Killing harmful organisms by cooking is necessary for meat, and these different methods result in different moisture retention and texture of the product. The structural ingredient of pasta was varied in an attempt to identify a suitable and desirable gluten-free fettuccine pasta option. The flours that were used were almond flour, Bob’s TM Red Mill Gluten Free 1 to 1 Baking Flour, cricket flour, potato flour, and cornstarch, with all-purpose flour serving as the control. The objective tests that were performed were a noodle density test, and a water absorption test. Once the various noodles were made, they were presented to a consumer panel and various sensory evaluations were performed to determine the acceptability of appearance, texture, and flavor in fettuccine noodles. Currently, little research exists on disabilities among Native American communities and no research exists on how Native Americans perceive disabilities, services currently available, and unmet needs. Understanding these key areas is essential to providing efficacious and culturally relevant care. To address this gap in the literature, we used Indigenous research methodology through sharing circles throughout the state of Utah to listen and amplify the voices of the Native communities. Participants shared how they conceptualize "disability," what they thought of current services, and how they thought the needs of Native persons with disabilities should be addressed. There are over 7,000 languages spoken around the world. In the past twenty years alone, the internet has digitized and improved much - including translation apps. With apps specific to particular languages and topics and with the ability to access so much information at the touch of a finger, it is easy for individuals to engage themselves in communicating with those who speak different languages. This paper outlines a proposal, based on Blackfoot worldview, for a collective method to stand alongside Western qualitative and quantitative methods and highlights the value of collective methods in collaborative social-ecological research. Neither qualitative nor quantitative methods are adequate to disclose a world where all things are alive, where “objects” are subjects—agentive beings in their own right. Most Indigenous cultures understand and experience the world as a network of living beings, a collective, with whom they are interrelated/connected and therefore, any efforts to collaborate with Indigenous peoples must acknowledge comprehensive relational animacy. With an increasing push for more sustainable agriculture practices, raising pigs on pasture has gained much attention over recent years. Although it is possible to raise pigs on pasture, and this production method may support some sustainability goals, there are some important considerations. This paper analyzes the end uses—food, feed, fiber, fuel, and exports—of biomass production in the U.S. in 1997, 2002, 2007, and 2012. They are also analyzed at the state level in 2012. Biomass production is measured as human appropriation of net primary production (HANPP), an ecological footprint measured as carbon fixed through photosynthesis, derived from data on crop, timber and grazing yields. HANPP was allocated to end uses using publicly available sources from the U.S. Department of Agriculture and internet-based sources publishing data on agricultural trade. HANPP was 717–834 megatons (MT) of carbon per year, which comprised 515–615 MT of …

Consumption of the total Western diet (TWD) in mice has been shown to increase gut inflammation, promote colon tumorigenesis, and alter fecal microbiome composition when compared to mice fed a healthy diet, i.e., AIN93G (AIN). However, it is unclear whether the gut microbiome contributes directly to colitis-associated CRC in this model. The essential metals Cu, Zn, and Fe are involved in many activities required for normal and stress responses in plants and their microbiomes. This paper focuses on how drought and microbial root colonization influence shoot and rhizosphere metabolites with metal-chelation properties. Wheat seedlings, with and without a pseudomonad microbiome, were grown with normal watering or under water-deficit conditions. At harvest, metal-chelating metabolites (amino acids, low molecular weight organic acids (LMWOAs), phenolic acids, and the wheat siderophore) were assessed in shoots and rhizosphere solutions. Shoots accumulated amino acids with drought, but metabolites changed little due to microbial colonization, whereas the active …

In this fact sheet, we examine differences in socio-demographics and lifestyle choices between those who view organic as important when purchasing specialty bakery products and those who don’t, with the aim to identify a target market of consumers who prefer organic specialty bakery products. Additionally, we evaluate other important product attributes to consumers seeking organic specialty bakery products. Consumer taste ratings for organic and conventional specialty bakery products are compared for those who value organics and those who don’t to evaluate the impact of taste beliefs on consumer demand for organic specialty bakery products.

The disability population in the United States has grown, with an estimated 2.6 million households having at least one child with a disability in 2019 (Young, 2019). Racially minoritized children disproportionately represent disability categories with Black and Indigenous children being overdiagnosed with emotional disturbance disabilities (Oswald & Coutinho, 2001). Further, minoritized children often experience greater rates of complex trauma (Horowitz, Weine, & Jekel, 1995) and this exposure significantly impacts minoritized children’s mental health (Flannery, Wester, & Singer, 2004). Edible flowers are a rich source of phytochemicals with potential health benefits. Yet, changes in production practices can influence the phytochemical composition of edible flowers. Practices such as the addition of biochar have been used to affect growing media properties as well as to conserve peat resources. However, there is little known about how biochar affects the phytochemical composition of edible flowers. To determine if biochar affects phytochemicals in Viola cornuta, four cultivars were subjected to different rates of biochar, with and without fertilizer.
