White-tailed deer (Odocoileus virginanus) damage to soybean crops is a concern for soybean producers. Although researchers have documented decreases in the intensity of deer-browse on soybean plants as the growing season progresses, an understanding of the mechanisms driving the decrease in deer-browse is necessary for reduction and mitigation of deer damage to soybean crops. We tested 4 hypotheses to determine why deer-browse rates decrease 3 weeks after plant emergence: (1) plant phenology affects plant palatability; (2) diet change occurs; (3) deer damage induces a plant response making soybean leaves less palatable: and (4) deer consume fewer leaves but …

Damage to field corn (Zea mays) by white-tailed deer (Odocoileus virginianus) can be substantial, resulting in millions of dollars lost annually. Numerous methods exist to minimize deer depredation, but all have met with varying degrees of success. Currently, little information is available on preference of white-tailed deer for corn hybrids during the growing season and how that preference might affect depredation patterns. We used adult female white-tailed deer in captivity to study the effect of herbicide treatments on deer-use (treatment versus no treatment) of corn in 2005 and to document preference among specific corn hybrids in …

Confinement cattle-feeding operations have been associated with large populations of starlings (Sturnus vulgaris) during the winter months. Starlings can eat nearly 1 kg each of feed per month (Besser et al. 1968). In the first of our 2 studies, we evaluated feed selection and feed depredation by starlings using 5 concentrate-based cattle finishing diets. Four diets evaluated were in traditional meal-type form, and 1 diet was an extruded pellet. We placed rations into a section of the feed trough that we made accessible to starlings but not to cattle. Wolves (Canis spp.) have recolonized the Great Lakes region and expanded into agricultural areas where there is increasing concern of conflict with livestock. We documented 121 wolf predation events on captive or domestic animals in the Upper Peninsula (UP) of Michigan between April 1996 and April 2009. We investigated the relationship between annual wolf abundance and predation events, seasonality of predations on livestock, and the association between previous winter severity and predations on livestock. The annual number of predations on livestock increased with wolf abundance, and overall, predations on cattle and calves increased during calving season. We observed a …

Since the 1980s wildlife managers in the United States and Canada have expressed increasing concern about the physical threat posed by cougars (Puma concolor) to humans. We developed a conceptual framework and analyzed 386 human– cougar encounters (29 fatal attacks, 171 instances of nonfatal contact, and 186 close-threatening encounters) to provide information relevant to public safety. Growth of Lactobacillus paracasei ATCC 334, in a cheese-ripening model system based upon a medium prepared from ripening Cheddar cheese extract (CCE) was evaluated. Lactobacillus paracasei ATCC 334 grows in CCE made from cheese ripened for 2 (2mCCE), 6 (6mCCE), and 8 (8mCCE) mo, to final cell densities of 5.9 × 108, 1.2 × 108, and 2.1 × 107 cfu/mL, respectively. Biochemical analysis and mass balance equations were used to determine substrate consumption patterns and products formed in 2mCCE. The products formed included formate, acetate, and d-lactate. Lactobacillus helveticus CNRZ 32 is recognized for its ability to decrease bitterness and accelerate flavor development in cheese, and has also been shown to release bioactive peptides in milk. Similar capabilities have been documented in other strains of Lb. helveticus, but the ability of different strains to affect these characteristics can vary widely. Because these attributes are associated with enzymes involved in proteolysis or AA catabolism, we performed comparative genome hybridizations to a CNRZ 32 microarray to explore the distribution of genes encoding such enzymes across a bank of 38 Lb. helveticus strains, including 2 archival samples of CNRZ 32. …

Hazelnuts or filberts can be useful crops for home food production or hobbyists in Utah. Several species have nuts with good flavor, with American, beaked and certain hybrid types most likely to produce consistently. Though European hazelnut with its large nuts is very common commercially, this species blossoms earlier than others and is more likely to have flowers damaged or destroyed by unseasonably cold weather. All hazelnut species benefit from being planted in frost protected areas to increase the likelihood of consistent nut production.

This study assessed the effects of three emulsified systems on taste thresholds and the near-threshold taste intensities of the five tastes (sweet, sour, salty, bitter and umami). Emulsions were formulated with different lipid chemical compositions. Lipid addition in an emulsified form significantly increased thresholds for sour and bitter tastes produced by citric acid and quinine hydrochloride, respectively. No significant differences were found in the threshold levels in emulsions formulated with different lipids for the five tastes evaluated. In general, for the same tastant concentration, taste intensities for sour and bitter tastes were lower in emulsions compared with the aqueous solutions, …

Children's physical inactivity and poor eating patterns have received a great deal of attention in our country and worldwide. Studies have been conducted to identify determinates related to children's physical activity and eating patterns and to identify strategies for promoting positive behaviors. Parental support is a well-accepted determinate of children's physical activity and eating patterns. However, little qualitative research has been done to determine parental attitudes and perceptions related to this critical role.

Quaking aspen (Populus tremuloides) clones within close proximity to one another can exhibit drastically different levels of browsing by ungulates. The objectives of this study were to (1) determine interclonal differences in plant chemistry between adjacent clones exhibiting different degrees of herbivory which may influence the browsing behavior and patterns of ungulates, and (2) determine if correlation exists in the levels of salicortin and tremulacin between current year's suckers and current year's growth on older trees. The growing season for vegetable crops is limited by freezing temperatures in arid high elevation climates such as northern Utah. Logan, Utah (41.73 N, 111.83 W, 1382 m elevation) has a short, variable growing season with an average frost-free period of 135 days. Extending the growing season provides growers with an opportunity to extend revenue into a normally unproductive period and benefit from out-of-season price premiums. High tunnels have been used to effectively extend the growing season for numerous crops by providing cold temperature protection. Results of recent studies have suggested that attenuation and transmissibility of WBV in adults and children are similar, but due to anatomical differences, it is hypothesized that children employ different strategies. One suggested strategy is that of muscle tuning, whereby muscle activity levels are adjusted to control potentially dangerous accelerations produced by vibration resonance. The purpose of the study was to compare muscle activity responses between children and adults exposed to whole body vibration. This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey.
The multi-component intervention was implemented at Canyon Elementary during the 2008-2009 school year. Classroom teachers provided 20 minutes of nutrition education to students in grades one through …

A number of studies have demonstrated the ability of free fatty acids to activate taste cells and elicit behavioral responses consistent with there being a taste of fat. Here I show for the first time that long chain unsaturated free fatty acid, linoleic acid, depolarizes taste cells and elicits a robust intracellular calcium rise via the activation of transient receptor potential channel type M5. The linoleic acid-induced responses depend on G protein-phospholipase C pathway indicative of the involvement of G protein-coupled receptors in the transduction of fatty acids. Milk fat globule membrane surrounds the fat droplets of milk. It is a biopolymer containing primarily membrane glycoproteins and polar lipids which contribute to its properties as a possible neutraceutical. The aims of the studies were to determine if dietary milk fat globule membrane: (1) confers protection against colon carcinogenesis; and (2) promotes gut mucosal integrity while decreasing inflammation compared to diets containing corn oil or anhydrous milk fat.

Species diversity achieved by adding novel functional groups (warm-season grasses and non-leguminous forbs) to pasture land, along with traditional grasses and legumes, could aid in the capture of nutrients and water in pasture systems by offering complementary rooting architecture to aid in water and nitrogen uptake and decrease nitrogen leaching. My research provided new information concerning the management, ecology, and conservation of greater sage-grouse (Centrocercus urophasianus). I report the results of an experiment using strategic intensive sheep grazing to enhance the quality of greater sage-grouse brood-rearing habitat. Although forb cover, an important component of brood-rearing habitat, responded positively to the grazing treatment, the response of other habitat variables was suppressed because the plots were not protected from domestic and wild herbivores during the years following the treatments. Measurements taken in grazing exclosures confirmed that herbivory by both large and small animals had significant impacts on vegetation. However, despite …

Young's schema theory offers a theoretical approach that relates negative childhood experiences, temperament, and early maladaptive schema, to the experience of negative affect and/or depression in adulthood. However, despite the widespread use of schema therapy in clinical practice, little research has explored the pathways theorized by Young. This study explored the pathways posited by Young and colleagues looking at the direct and indirect relationships among negative childhood experience, temperament, early maladaptive schema, and the experience of negative affect in adulthood. Oral clefts are the most common form of birth defects in the United States (US) and the State of Utah has among the highest prevalence of oral clefts in the nation. The overall objective of this dissertation was to examine the spatial distribution of oral clefts and their linkage with a broad range of demographic, behavioral, social, economic, and environmental risk factors through the application of Geographic Information Systems (GIS) and spatial statistics. Obesity and eating disorders are major public health problems in the U.S. Prevention of these problems in childhood and adolescence is crucial to avoid medical complications and costs associated with these conditions. A growing body of research supports designing and implementing interventions to prevent obesity and eating disorders simultaneously by targeting common risk factors such as poor body image. Two independent studies were conducted to assess the effects of feeding condensed tannin (CT)-containing forages to continuous cultures to evaluate their impacts on ruminal fermentation and digestibility, with an emphasis on methane (CH4) and ammonia-N (NH3-N) production. In Chapter 3, treatments consisted of: 1) 100% alfalfa hay (AH), 2) 50% AH and 50% birdsfoot trefoil hay (dry matter (DM) basis; AHBFTH), and 3) 100% birdsfoot trefoil hay (BFTH). While many jokes and sales of specialty merchandise have been made that make light of consumers who frequently shop and buy (e.g., "When the going gets tough, the tough go shopping," or "I am a shopaholic"), for 18 million Americans suffering from compulsive buying, the process of shopping and buying has caused their lives to literally go out of control. The outcomes of this disease for individuals, families, and business are all negative.
