Vitamin D is an essential vitamin that is synthesized when the body is exposed to sunlight or after the consumption of fortified foods and supplements. The purpose of this research was to increase the retention of vitamin D3 in Cheddar cheese by incorporating it as part of an oil-in-water emulsion using a milk protein emulsifier to obtain a fortification level of 280 IU/serving. Four oil-in-water vitamin D emulsions were made using sodium caseinate, calcium caseinate, nonfat dry milk (NDM), or whey protein. Objective: To develop an online certification program for nutrition education paraprofessionals to increase knowledge and confidence and to overcome training barriers of programming time and travel expenses. Design: An online interactive certification course based on Supplemental Nutrition Assistance Program-Education and Expanded Food and Nutrition Education Program core competencies was delivered to employees of both programs. Traditional vs online training was compared. Course content validity was determined through expert review by registered dietitians. Parameters studied included increase of nutrition knowledge and teaching technique/ability, educator satisfaction, and programming costs related to training. Setting: Utah State University Extension. What does it mean to eat locally? Although perceptions of what makes up “local food” differ by region (due in large part to varying climates, soil types, and populations), most researchers accept that eating locally means minimizing the distance between production and consumption, especially in relation to the modern mainstream food system (Peters et al., 2008). According to the 2008 Farm Act, a product can be marketed as locally or regionally produced if its end-point purchase is within 400 miles from its origin, or within state boundaries (Martinez et al., 2010). Respiratory quotient (RQ) is the ratio of CO2 produced to O2 consumed by an organism. Complete respiration of glucose will give an RQ of 1 as described by the formula CnH2nOn+nO2→nCO2+nH2O. The respiration of molecules with lower oxygen content, such as lipids, give RQ values of less than one, whereas in cases of anaerobic metabolism, an increase in biomass or the respiration of substances such as humic, oxalic and citric acids the respiratory quotient can be greater than one. Forage kochia is used to re-seed areas in harsh environments that have been infested by annual weeds or disturbed by repetitive fires. It is an introduced perennial semi-shrub that is valuable to livestock and wildlife as a forage. The seed of forage kochia is very unpredictable and successful establishment in areas of low precipitation where it is utilized has often been erratic. Forage kochia seeding failures are costly and leave the land vulnerable to further degradation and erosion. Heart disease and stroke are leading causes of death in America. In 2008, not only are more than 0.6 million people dying of heart disease, but it is estimated that almost 1 in every 4 Americans with heart disease die. Consuming excess salt has been associated with increasing risk of high blood pressure, heart attacks, and stroke. Americans consume 40% more salt than the USDA recommended level -- 1500 mg. Therefore, it is important to reduce the amount of salt in foods such as cheese to reduce salt consumption that may lead to heart disease.

An experiment was performed on two groups of mice, the first group receiving a refined wheat diet, and the second group receiving a whole wheat diet. The levels of abundance of hundreds of bacteria in the guts of the mice were measured. Of interest was whether the levels of these bacteria were different depending on type of diet. In addition, it was desired to examine differences by diet in all of the families of bacteria. Fine-leaved Festuca valesiaca has stress tolerance. However, its agronomic performance in the western United States and its genetic relationship to species of the Festuca ovina complex has not been investigated. Also, natural hybridization makes them difficult to identify. Given the species' potentials, our project was designed to identify Festuca valesiaca accessions that possess high biomass and seed yield and to examine their relatedness with the Festuca ovina complex.
The Festuca valesiaca accessions examined produced many small seeds. Seed production was correlated with the total biomass, plant height, and plant vigor. The Festuca valesiaca accessions examined were shorter than the control …

Populations of greater sage-grouse (Centrocercus urophasianus; hereafter sage-grouse) have been declining range-wide for the last century (Connelly et al. 2004). The range of sage-grouse has declined from a historical pre-settlement distribution of 1.2 million square km to only 668,000 square km as of the year 2000 (Schroeder et al. 2004).

The Induced Bed Reactor (IBR) is a high rate anaerobic digester designed to treat high-solids, high strength wastes, such as those found in dairy manures and mixed solid wastes. The IBR has been successfully operated at bench, pilot and full scale. The objective of this paper is to present design and implementation of a 3,800 L pilot scale facility at The Ohio State University's OARDC facility in Wooster, OH for testing and optimization of IBR systems at small dairies.

Research indicates that the principles for preparing youth for future healthy marriage relationships include many of the basic principles of good parenting such as a healthy home environment, modeling healthy relationships, being involved in a child’s life, and encouraging healthy choices. Ultimately, as children progress into adulthood they will make their own choices about relationships; however, by providing healthy role models, encouragement, and support, youth will have the framework necessary to develop a healthy and lasting marriage.

Bark beetles are one of the most destructive forest pests in the world. They are different than the larger longhorned and roundheaded/metallic woodboring beetles commonly infesting the inner wood of trees. The largest bark beetle, the red turpentine beetle (Dendroctonus valens), reaches only 8.3 mm in length. Because of their tiny size, bark beetles are not effective tree killers as individuals.

The article focuses on the need of Cooperative Extension programs for rural communities of Central Utah residents who are leading an unhealthy lifestyle. It is discussed that the Family and Consumer Sciences (FCS) Extension Agent in Utah developed a wellness community program to address the health concerns of adults. It is discussed that the program promotes healthy living in adults by emphasizing on physical activity and nutrition.

Artificial sweeteners and sugar alcohols can provide the sweet flavor and be beneficial for people with diabetes or those choosing to avoid sugars because they contain lower calories and carbohydrates than regular sugars.
