Background: In previous research, college students reported low confidence and varying skill in meal preparation ability. This study evaluates first-year university students to determine the acceptability of meal preparation programming for this population.

Objective: To assess university freshmen's skill level, confidence, and interest in food budgeting, meal planning, and cooking techniques to determine potential interventions.

Methods: First-year university students (n=265; 58 men, 205 women) were recruited through Facebook and email invitations to complete a 50-item survey. This article reviews the rate of body dissatisfaction and weight bias among young children. It was initially hypothesized that body-image begins much earlier than adolescence, where most interventions take place. Out of fifty articles read on the subject, forty-five peer reviewed articles were included in this review. The findings of these articles were synthesized for a comprehensive review on the topic. Results suggested that weight bias begins around three years of age, while body dissatisfaction begins around age five for girls, and seven for boys. Rates of body dissatisfaction among children were similar to the rate among adolescents, averaging out …

The endangered Southern Resident Killer Whale (Orcinus orca, SRKW) is an iconic species in the Pacific Northwest. Although many ecological aspects of this population have been studied, including population dynamics, genealogy, diet, and habitat-use patterns, why SRKW perform above-surface "percussive" behavior such as breaching, cartwheeling, pectoral fin slapping, tail lobbing, and dorsal fin slapping remains unclear. While the application of pesticides in agricultural settings is often implicated in the deterioration of honey bee population health, pesticide applications contain more than just pesticides; they also contain adjuvants that may have detrimental effects to bee health. Dietary interventions with probiotic lactic acid bacteria (LAB) and prebiotics, complex dietary fibers that promote LAB growth, may favorably shift the gut microbiome to reduce colorectal cancer risk. Our primary hypothesis was that the LAB strains NCFM Lactobacillus acidophilus and HNO 19 Bifidobacterium lactis would thrive in the presence of agave, green banana, black raspberry, baobab fruit, or pomegranate peel whole food powders by fermenting their oligosaccharide (OS) components into lactic acid end products. Menopause is associated with a decline in overall health in women. One health aspect impacted is glucose metabolism. As women experience menopause, their metabolism declines dramatically. The current study addressed the influence of ovarian somatic cells on the improvement of metabolic health through transplantations of young, germ cell-depleted ovaries. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. Pediatric malnutrition is a major cause of morbidity and mortality in developing nations. In Ghana, one-third of childhood deaths are attributable to it. The most common forms of severe acute malnutrition include kwashiorkor (protein deficiency), marasmus (overall energy deficiency), and various micronutrient deficiencies (iodine, vitamin A, zinc, iron). Thirteen percent of Ghanaian children are moderately or severely underweight, 23% are stunted, and 6 % are wasted due to malnutrition. Princess Marie Louise Children’s Hospital (PML) is the largest facility in the greater Accra region for managing cases of pediatric severe acute malnutrition (SAM). Eccentric resistance training has been shown to be beneficial for improving multiple performance and health metrics. However, recommendations on eccentric training frequency have not been established. PURPOSE: To investigate the effects of volume-matched resistance training frequency comparing one versus three training days per week of isokinetic multiple-joint eccentric training on strength and lower body function adaptations during a 4-week training period. Objective: This study aimed to examine the effects of a novel, small-court racquet sport, Pickleball, on lower body muscle power and functional performance of older adults, aged 60-75.

Background: Physical inactivity in the older adult population is associated with increased risks of falls, chronic illness, and decreased quality of life. Sports participation may have multiple benefits for improving these risks and have the added benefit of increased adherence among older adults. Response inhibition involves stopping undesired and automatic actions allowing for behavioral flexibility. This ability is theoretically able to contribute to fall prevention, which older adults are known to have difficulty with. Although much has been learned from cognitive psychology regarding response inhibition, translation to the challenge of balance recovery is unclear. Recently a correlation has been found between performance on a standard test of response inhibition called the Stop Signal Task (SST) and a balance test that required inhibition of a reactive step in young adults. When a subnational input-output matrix is unavailable, a non-governmental organization (NGO) may turn to a shortcut method in order to project its indirect economic impact in a region. The location quotient is the most common choice in developed nations, but has serious theoretical flaws in a developing-nation context. We explore the minimum requirements method as a cost-effective yet robust method to project the impact of an NGO in the Imbabura province of Ecuador. We find that every $1 of exogenous local spending stimulates between $1.32 and $1.62 of indirect economic impact in the region.

Consumer demand for organic products has shown double-digit growth in recent years encouraging the development of a wider range of goods (Greene, 2017). Americans with an annual household income under $30,000 actively purchase organic foods at nearly the same rate as households with over $75,000 in annual incomes, 42% versus 49% (Greene et al., 2017). Concentrated milk was provided by the South Dakota State University and starter culture for this study was prepared and donated by Vivolac Cultures Corporation, Greenfield, Indiana.

The project initiated as a continuation of a previous study on effects of protein concentration, coagulum cut size and set temperature on curd moisture loss kinetics while stirring during cheesemaking. The loss of large apex predators, and their subsequent reintroduction, has been identified as a substantial driver on the structure and function of ecological communities through behavioral mediated trophic cascades (BMTCs). The reintroduction of wolves (Canis lupus) to Yellowstone National Park (YNP) has served as foundational case study of BMTCs. In our system, it has been suggested that wolves have established a ‘landscape of fear’ in which the primary prey, elk (Cervus elaphus), now avoid risky places, which ultimately led to the recovery of the vegetation community. Prior work by our research group showed that the total Western diet (TWD), a rodent diet which models the typical American diet, promoted the development of colon tumors when fed to mice. Other researchers previously showed that vancomycin, an antibiotic that changes the gut microbiome composition, causes differential changes in the severity of colon inflammation and CRC. Our goal was to determine the combined effects of feeding the TWD and vancomycin treatment on colitis and CRC, and if these factors interact. Michigan’s Food, Agriculture, and Resources in Motion (FARM) Science Lab is a 40-foot mobile classroom outfitted with 10 learning stations including scientific equipment and iPads. This quasi-experimental study analyzed preexisting data provided by Michigan Agriculture in the Classroom to evaluate the effectiveness of the FARM Science Lab mobile classroom as a method of teaching agriculture-themed, standards-based lessons to third- through fifth-grade students in order to increase their understanding of agriculture. Researchers at Utah State University created a school intervention called the FIT Game that has successfully increased children’s vegetable intake during lunchtime. The aim of this project was to create a home aspect to the FIT Game for parents that would increase the availability of vegetables within the home. Studies within this thesis discuss the development and revision of parent newsletters for the FIT Game program, as well as the implementation and assessment of the revised newsletters. Results from the assessments indicate that providing parent newsletters is not enough to change the vegetable availability at home.

The goal of this study was to investigate feedlot performance and meat quality of calves born to cows that underwent a nutrient restriction during the second trimester of gestation which may be occurring in the Intermountain West. Thirty-four angus influenced calves from the same sire were used for this study. The calves were born from cows that were separated into either a maintenance group, and kept on an irrigated pasture, or a restricted group, that was placed on an unirrigated pasture and allowed to lose one body condition score during the second trimester of pregnancy. How species interactions shape habitat structure is a longstanding question in ecology. A curious phenomenon reflecting ecological self-organization around reef habitat structures exists on coral reefs: large-scale (hundreds to hundreds of thousands of m2) halo-like patterns surrounding patch reefs, i.e., individual coral reefs that are often separated by seagrass or macroalgal meadows. These “halos,” long known to occur in various locations worldwide, reflect a distinct band of unvegetated sediments surrounding coral patch reefs. Marine reserves can effectively restore harvested populations, and ‘mega-reserves’ increasingly protect large tracts of ocean. However, no method exists of monitoring ecological responses at this large scale. Herbivory is a key mechanism structuring ecosystems, and this consumer–resource interaction's strength on coral reefs can indicate ecosystem health. We screened 1372, and measured features of 214, reefs throughout Australia's Great Barrier Reef using high-resolution satellite imagery, combined with remote underwater videography and assays on a subset, to quantify the prevalence, size and potential causes of ‘grazing halos’. The purpose of this study was to evaluate the acceptability and usability of an online training to prepare Expanded Food and Nutrition Education Program (EFNEP) educators to collect 24-hr dietary recalls using the Automated Self-Administered 24-Hour Dietary Assessment Tool (ASA24). Fifty-eight educators in 17 states were recruited to take the training; 29 completed the online training, assisted two individuals in completing a 24-hr recall using ASA24, and completed a survey about their experiences. A Western type dietary pattern is a major risk factor for colitis-associated colorectal cancer (CAC). Observations from transgenerational studies suggest that epimutations may be inherited, resulting in persistent aberrant gene expression in offspring. Previously, our group reported that ancestral exposure to the total Western diet (TWD) increased CAC incidence and disease severity in F3 offspring. Moreover, exposure to TWD over multiple generations exacerbated disease in F3 offspring as compared to those fed TWD directly.
