Accessing Healthy Food: Behavioral And Environmental Determinants Among Low-Income Populations, Abiodun Tolulope Atoloye

On average, low-income individuals have poorer diet quality compared to their high-income counterparts. However, improved food access may offer opportunities to improve diet among this population. This study examines how the low-income population navigates between barriers, resources, and opportunities to acquire healthy foods in different settings.

Chapter 3 examined how the use of a farmers’ market incentive program among the low-income population impacts F&V consumption. We observed no effect on F&V consumption due to program participation but users of the program have a significantly higher F&V consumption than non-users. Sedentary time and physical inactivity have negative impacts on health and health costs as well as an impact on workplace wellbeing. There is evidence that people are more sedentary and engage in less physical activity on work days. Additionally, sedentary behavior has been found to increase distress and negative mood. Activity trackers such as Fitbits are a useful way to collect and intervene on sedentary behavior and potentially impact other factors of workplace wellbeing in real time and promote self-monitoring. Insects form close partnerships, or symbioses, with bacteria. These partnerships allow the insects to use resources that would be unavailable to them otherwise. Certain insects, hemipterans, are able to feed on nutrient-poor plant-sap because these bacteria supplement their diets. While this association is beneficial for both the insect and bacteria, it also comes with consequences: the genomes of bacterial symbionts typically undergo extreme degradation, becoming small and lacking many genes necessary for typical bacterial functioning. Pasture-based dairies have become more prevalent in recent years due to a higher proportion of organic milk demand and production. Organic certification requires that animals must graze at least 120 days in each growing season. However, dry matter intake is often limited when dairy animals receive most of their herbage from pasture, resulting in lower animal performance and milk production. The purpose of this study was to analyze the complimentary effect of high energy grasses with birdsfoot trefoil (BFT) tannins to improve intake of dairy heifers. Over several decades, USU’s Landscape Architecture and Environmental Planning (LAEP) Department and Extension specialists have engaged Utah’s rural communities through several design-based outreach activities. These activities are intended to benefit both community partners interested in learning how design can positively impact the community in tangible ways, and students, who are given the opportunity to engage with real-world projects. This study documents, evaluates, and assesses outcomes of community engagement projects undertaken by LAEP Extension to better understand the program’s impact over time and come up with approaches that will enhance the impact of future community engagement projects.

Beef cattle production is highly criticized because of the high use of land and water resources, and by the pollution (e.g., the gas methane in a cow’s breath and nitrogen in urine) produced by cows fed in feedlots. In contrast to feedlots diets and grasses, some plants (e.g., legumes) contain bioactive compounds (condensed tannins) that reduce pollution and enhance animal nutrition. In my research, I observed that cows grazing a tannin-containing legume (birdsfoot trefoil; BFT) had methane emissions similar to cows fed a feedlot ration with comparable weight gains. Medusahead (Taeniatherum caput-medusae (L.) Nevski) is currently one of the biggest threats to rangelands and livestock operations in the Western US. High silica concentrations in medusahead contribute to its invasiveness. I developed a model to explain how silica is involved in the invasion process, and attempted to manipulate silica to increase use of the grass by livestock. Experiments were conducted to determine: 1) whether rotational grazing on established forages of improved nutritional quality would provide supplemental nutrients to increase cattle use of medusahead; 2) evaluate intake of and preference for medusahead treated with a glyphosate herbicide at different rates …

Infants begin to learn important skills, such as contingency learning, social referencing, and joint attention through everyday interactions with their environment. When infants learn that their behavior produces a change in the environment (e.g., attention from others), infants engage in behavior that produces that effect (e.g., increases in smiling sustained engagement. When mothers and other caregivers respond immediately to infant behavior, they help their infant learn that the infant’s own behavior is effective, producing a change in the environment. This study was conducted to explore the adulthood transition experiences of Utah high-school graduates, with heightened focus on the application value of educational content from the course, Adult Roles. The purpose of the study was identified through experiential interactions with high-school graduates, and was supported by research on 21st century adulthood transitions shown to divert away from traditional adulthood markers. The inconsistency between modern adulthood transition behaviors and traditionally held adulthood assumptions lead to negative perceptions about young adult’s capability to adapt to adulthood. Rural America is facing a plethora of problems related to poverty, crime, health, and education. Nonprofit organizations serve a vital role in rural communities by providing services and advocacy to residents. Yet, it is unknown if rural nonprofits have the means to effectively address the complex issues before them. This study examines the results of scoping review which characterizes the state of empirical knowledge regarding the organizational capacity of rural nonprofits in the United States. Fifteen articles from the past decade uncovered challenges and strengths related to organizational capacity, though more research is necessary to inform funders and educators.

The feminization of agriculture narrative has been reproduced in development literature as an oversimplified metric of empowerment through changes in women’s labor and managerial roles with little attention to individuals’ heterogeneous livelihoods. Grounded in feminist political ecology (FPE), we sought to critically understand how labor and managerial feminization interact with changing agricultural practices. Working with a local NGO as part of an international, donor-funded research-for-development project, we conducted semi-structured interviews, focus group discussions, and participant observation with over 100 farmers in Mid-Western Nepal in 2017. On October 22nd, Congress unanimously passed the “Preventing Animal Cruelty and Torture Act.” The law makes certain acts of cruelty against animals federal crimes. Before the federal law was passed, legislation protecting animals was largely a matter reserved for state legislatures. The law was met with praise from both private citizens and animal welfare organizations like the American Society for the Prevention of Cruelty to Animals (ASPCA).

Sego SupremeTM is a designated plant breeding and introduction program at the Utah State University Botanical Center and the Center for Water Efficient Landscaping. This plant selection program introduces native and adapted plants to the arid West for aesthetic landscaping and water conservation. The plants are evaluated for characteristics such as color, flowering, ease of propagation, market demand, disease/pest resistance, and drought tolerance. Across the northern hemisphere, six species of aspen (Populus spp.) play a disproportionately important role in promoting biodiversity, sequestering carbon, limiting forest disturbances, and providing other ecosystem services. In many regions, aspen can maintain canopy dominance for decades to centuries as the sole major broadleaf trees in forested landscapes otherwise dominated by conifers. Aspen ecosystems are valued for many reasons, but here we highlight their potential as key contributors to regional and global biodiversity. Mycorrhizal fungi are critical members of the plant microbiome, forming a symbiosis with the roots of most plants on Earth. Most plant species partner with either arbuscular or ectomycorrhizal fungi, and these symbioses are thought to represent plant adaptations to fast and slow soil nutrient cycling rates. This generates a second hypothesis, that arbuscular and ectomycorrhizal plant species traits complement and reinforce these fungal strategies, resulting in nutrient acquisitive vs. conservative plant trait profiles. Here we analyzed 17,764 species level trait observations from 2,940 woody plant species to show that mycorrhizal plants differ systematically in nitrogen and phosphorus economic traits. …

Hard yellow liver disease or fatty cirrhosis periodically affects cattle, sheep, goats, pronghorn antelope (Antilocapra americana) and whitetail deer (Odocoileus virginianus texanus) within several Texas counties in the United States. Clinically it presents as chronic liver disease with progressive hepatic necrosis and fibrosis, icterus and liver failure. The damaged livers are yellow and many have multiple firm, often gritty foci that are scattered throughout all lobes. Early investigations included feeding studies using potential toxic plants, climate and forage studies, infectious disease surveys and various mycotoxin studies and analyses. Trade‐offs among the key life‐history traits of reproduction and immunity have been widely documented. However, the currency in use is not well‐understood. We investigated how reproducing female side‐blotched lizards, Uta stansburiana, allocate lipids versus proteins when given an immune challenge. We tested whether lizards would invest more in reproduction or immunity depending on reproductive stage. Females were given stable isotopes (15N‐leucine and 13C‐1‐palmitic acid), maintained on a regular diet and given either a cutaneous biopsy or a sham biopsy (control). Over the past decade several studies have reported the use of high intensity ultrasound (HIU) to induce the crystallization of lipids. The effect that HIU has on lipid crystallization is usually attributed to the generation of cavities but acoustic cavitation has never been fully explored in lipids. The dynamics of a particular cavitation cluster next to a piston like emitter in an oil, was investigated in this study. The lipid systems, which are important in food processing, are studied with high-speed camera imaging, laser scattering and pressure measurements. A sequence of stable clusters were noted.
