A child development laboratory in a university finds its first justification in its ability to contribute to the education of college students. After this justification has been established, the laboratory has a responsibility for serving the children enrolled in it.
The Child Development Laboratory at Utah State University serves college students in several ways. Students are able to observe and participate in the nursery school laboratory through experiences in various courses. The culmination of their course work comes when, as juniors or seniors, they do student teaching in the nursery school.

Body weight is fast becoming the major health problem in the United States. Recent estimates of the number of weight conscious people in the United States are now up to 75 million. Utah existed as a territory for some forty-five years, 1851-1896. During these years Utah continued to occupy an interesting and controversial position on the national scene. The fact that Utah was predominantly Mormon, and that the Mormons were unusual in their beliefs and practices, made the territory and its people a target for the law-making body of the nation as well as the general citizenry. Utah was made an integral part of the congressional discussions and debates in almost every session of Congress during the period of 1851-1896, and there were repeated attempts to punish the Mormons for their "anachronistic" …

Much investigation has been devoted to the position of level of aspiration as influential motive forces for educational, occupational, and social achievement. For 98 years after the first "Mormon" pioneers entered the Salt Lake Valley there was no statewide control of the sale and distribution of fluid milk. Prior to any statewide control, however, laws were passed in Salt Lake City and Ogden outlawing sale of raw milk to final consumers in those cities as of January 1, 1945.

This study was designed to answer a three-fold purpose. Primarily, it has endeavored to measure the inhibitory effect of three antibiotics (potassium pencillin, dihydrostreptomycin, and oxytetracycline) on lactic acid producing organisms. The lactic acid-producing organisms include Streptococcus lactis, Streptococcus thermophilis, and Lactobacillus bulgaricus.
The determination of an effective dose of a given antibiotic which will inhibit 50 percent of the lactic acid-producing organism (E.D.50) will be established. A 50 percent cut in acid development will certainly lead to an inferior product.
The secondary purpose has related to the detection of inhibitory substances (antibiotics) in milk. What is …

Nutritionists, the medical profession, and the public in general have become increasingly interested in low fat food products. Cheddar cheese, as it is now made, has a high caloric value and therefore may be discriminated against in some diets. The production of a reduced fat cheddar-like cheese would be of importance to the cheese industry by providing a reduced fat, high protein product.
The chemical nature of the casein furnishes the foundation for the body and texture in cheese. The body and texture of typical cheddar cheese is influenced principally by its fat and moisture content.

The addition of the Streptococcus lactis culture in the pasteurized milk was studied, in an attempt to find the effects of the culture in prolonging shelf life of the milk. Various concentrations of the culture were tried to find the optimum concentration that would give favorable effect on keeping quality of the milk. It was found that the addition of Streptococcus lactis culture at the rate of 0.0001 percent has shown promising effects in prolonging shelf life of the milk at the storage temperature of 40 F.

Fluorides are usually found in nature as constituents of soils, water, and the tissues of animals. Fluorite or fluorspar (CaF2), cryolite (Na3AlF6), apatite (3 Ca3 (PO4)2 CaF2) and sedimentary phosphate rocks are among the principle minerals containing fluorides found in nature. Traces of fluorides also occur in domestic water supplies in nature and also by induction in vegetation and animal feeds. From 0.5 ppm to 1.5 ppm of fluorides in drinking water is the range found to be beneficial in reducing the incidence of tooth decay in man. …

There have been several surveys made throughout the State of Utah that indicate the presence of staphylococcal synovitis in many of the turkey flocks. Bagley (1949) and Blommer (1950) indicated that from 1947 to 1949, there was a widespread occurrence of the disease throughout the State. Dr. M. L. Miner (1960), Head of the Department of Veterinary Science (Utah State University), indicated that staphylococcal synovitis in turkeys has actually been continuous in Utah since the late nineteen-"thirties." Staphylococcus aureus was found by Prahl (1891) to be the etiologic agent of this synovitis in geese. Synovitis may occur in many other …

The College of Forest, Range and Wildlife Management (hereafter referred to as the College of Forestry) at Utah State University has been concerned for some time with the problem of selecting from the applicants to their school the ones whom they think will be able to complete the requirements for graduation. The large number of freshman students placed on probation at the end of the fall quarter and of succeeding quarters each year fives some idea of the magnitude of the problem. It is not unusual for 40 or 50 percent of the entering freshmen to be in this category.

Various temperatures and concentrations of the hydrogen peroxide catalase treatment of milk were studied in an attempt to discover the optimum temperature and concentration that would destroy unfavorable organisms and yet allow favorable ones to grow. The Federal Food and Drug Administration in their November, 1959, Definitions and Standards of Cheeses and Cheese Products states that "the amount of the hydrogen peroxide solution used shall be such that the weight of the hydrogen peroxide added thereby does not exceed 0.05 percent of the weight of the milk treated." Since the beginning of history the wool of sheep has been used by the human race. Its chief use has been and still is for clothing. Also, it is widely used for blankets, upholstery, carpets, and numerous other products.
The wool industry is important to the state of Utah, which was the sixth largest producing state in the United States in 1958. Wool growers in Utah received approximately $7,897,000 in sales proceeds and government payments for wool sold during the 1958 marketing year (12).1
