Factors which affect iron bioavailability have been repeatedly and extensively investigated. A model, derived from these studies, has been developed for estimating available iron from meal data. However, many dietary surveys report only average daily intakes of iron, and do not report the iron present in single meals. No model to estimate available iron from daily iron intake has been presented in the literature.
Dietary questionnaires were kept for two nonconsecutive weekdays by 355 male and 382 female Utah school children, mean age 7.5 years, assisted by their parents, and recorded by household measure. Data, first recorded as meals eaten, …

Client writing has been used in association with individual therapy for many years, but published research on its effectiveness is sparse. Such research could provide a potential tool for therapists, as well as expand scientific knowledge. This review includes all available reports on the topic of client writing in individual therapy. The studies fall into three general categories: the systematic, "experimental" studies; the anecdotal reports; and the didactic reports. All studies considered show some benefit from the use of client writing in therapy. Writing appears to be beneficial whether initiated by the client or directed by the therapist; beneficial to …

A factor analysis was performed using 609 subjects, each of whom completed the 265 Hem self-report problem inventory. Factor analysis was used in this context as the logical first step in the development of the problem inventory. For the purpose of analysis, 240 of the Hems were used. Results suggest that there may be utility in further research involving the problem inventory. A literature review of current diagnostic issues, se 1 f-report inventory issues, diagnostic interviewing issues, and finally, self-report inventory development is included.

Mastitic milk was detected by obtaining conductance measurements using an impedance microbiology Bactometer® 120 SC instruments. Conductance readings taken after 30 min at 25'C separated normal and abnormal milks when readings differed by more than 3% from the variance among instrument module wells. Samples blended from four quarters of a cow indicated milk from one quarter was abnormal if the salt level in the abnormal quarter raised the blend conductivity above that of normal samples and variance among the wells. The purpose of this study was to determine relationships between several educational variables and adolescents' sexual attitudes and behavior. The sample consisted of high school students who were enrolled in health, family living, and home economics classes in Salt Lake City, Utah, and Albuquerque, New Mexico. Pretest and posttest surveys were given to these students to evaluate the effectiveness of a prevention program which addressed teen attitudes and behaviors in the areas of peers, families, and morality. The pretest and posttest surveys contained items that specifically measured family background, school achievement, and sexual attitudes and behaviors. Data collected for these …

The purpose of this study was to determine if participation in a marriage enrichment program had an impact on couple's relationships in the areas of regard, empathy, congruence, dyadic adjustment and self-esteem. Seven independent variables were also analyzed to see if they had any impact on the five outcome measures. A survey was given at four different time periods (pretest, immediately before the enrichment experience; posttest, immediately after the enrichment experience; three months following; and six months following the enrichment experience) to determine if change did occur and if it was maintained over time. The purpose of this thesis is to identify land use planning strategies which are most appropriate for the mitigation of nonpoint surface water pollution problems in Cache County, Utah. This work expands on an initial planning effort by the County intended to address these pollution problems. Unfortunately, that effort resulted in the adoption of an ordinance which falls short of ensuring surface water protection.

It is well documented in the literature that low-birth-weight (LBW) and prematurity are associated with a variety of developmental disabilities. Within this population of LBW children it is estimated that at birth, up to 45% of them experience intraventricular hemorrhage (IVH). Only recently has pediatric research begun to look at the potentially unique effects of IVH, and attempt to separate these out form the effects of LBW in general. The purpose of this paper was to attempt to identify variables which may enhance the ability of older widowed persons to adjust to viii bereavement. Depression and perceptions of physical health were the two aspects of adjustment selected for study. Several variables which current literature suggests may mediate grief adjustment were examined for their potential relationship to bereavement outcome. These were gender, level of grief, anticipatory grief and social network. The possible relationship between depression and perceptions of physical health was also examined for.

The purpose of this study was to identify the psychological and social consequences experienced by homosexual men who learn that they have positive results on the HTLV-III antibody test, but who have not yet developed AIDS or ARC. Employing a census survey of the membership of three California homophile organizations (n=1905), 30 HTLV-III positives and 55 negatives completed a biographical questionnaire, the IPAT Anxiety Scale Questionnaire, the IPAT Depression Scale, and the Coping Strategies Inventory. Results indicate that HTLV-III positives show considerable disorganization after hearing test results, have clinically high levels of anxiety (n=10), and clinically high levels of depression …

The scope of this thesis is to make a statement on the sport of cockfighting as it is practiced in the counties of northern Utah. It is a sport that has a long and colorful history, a unique body of lore and is practiced by serious, dedicated men.
Cockfighting history emanated from the Manu code of India through the Greek and Roman civilizations, spreading from there both east and west till it girdled the globe. Clostridium perfringens (CP) was evaluated as an additional indicator in assessing impacts and sources of microbial pollution in the Idaho-Utah Cache Valley. Point, nonpoint, river water, and animal fecal samples were analyzed for CP, total coliforms, fecal collforms, and fecal streptococci.
Monthly river samples consistently contained < 20 CP/100 mL, but concentrations of the other indicators varied significantly by location and date. Two sample stations consistently had CP concentrations greater than 20/100 mL. One of these stations was influenced by an upstream wastewater discharge. Chlorinated effluent from this trickling filter plant contained greater than 103 CP/100 mL, but met a 400 FC/100 mL discharge standard. A consistent decrease in CP concentrations in samples taken downstream from this wastewater source were found, despite significant impact from adjacent nonpoint pollution. Lagoon and oxidation ditch wastewater effluents sampled contained < 20 CP/100 mL.

Information on human needs for pantothenic acid is limited and no recommended daily allowance has been established; although a safe and adequate level of 4-7 mg/day has been suggested for adults and adolescents. The adolescent population is often at risk for nutritional problems because of unusual eating patterns and major physiological changes which occur at this time. Pantothenic acid levels in urine, whole-blood and erythrocytes were determined in a healthy adolescent population using radioimmunoassay techniques. Dietary intakes were calculated from 4 day diet records and evaluated using a computer data base developed at Utah State University in conjunction with USDA. …

Intercept feeding was tested for its efficacy in reducing deer-vehicle collision frequency by diverting deer movement patterns away from highways using alfalfa hay as an attractant. Ratios of roadkills in control vs. treatment zones of three highway segments indicated that feeding reduced collision frequency. Spotlighting counts of live deer were significantly higher (P < 0.001) in the control than in the treatment zone, supporting the effectiveness of feeding in keeping deer distant from the highway. In a benefit:cost analysis, the benefits accrued by reducing collision frequency exceeded the costs of feeding on each highway both years, with one exception: in 1986 one of the highways demonstrated that particular features of an area may not be conducive to effectively attracting deer away from a highway. I recommend intercept feeding be used with alternate techniques, so that the most appropriate technique is applied in each situation to reduce collision risk.

Utilizing longitudinal panel data from Youth In Transition Project, the Person-Environment fit (P-E Fit) theory and its specific application to the area of delinquency and aggression was investigated longitudinally. Analysis of Covariance Structure Technique (LISREL) was used to address the issues of multi-dimensionality, stability, measurement of total P-E fit and to test the proposed delinquency model. The relationships between P-E fit, psychological strain, and delinquency were tested both cross-sectionally and longitudinally. The effects of micrococci on sensory characteristics of different batches of summer sausages were determined. Sixty four salt-tolerant indigenous isolates were selected from beef or mutton treated with 1.5 or 3.0% sodium chloride and 120 ppm sodium nitrite, and held at 5 or 10 C for 5 days. These isolates (61/64) were identified as staphylococci and micrococci. Summer sausages were made from several lamb, ewe, and ram carcasses which were hand deboned and blended after grinding to contain 22% fat. Six summer sausage treatments were prepared using two different sources of commercial starter cultures including Micrococcus species or Micrococcus varians …

Manufacture of white soft cheese from ultrafiltered whole cows• milk involved acidification of pasteurized homogenized whole milk to pH 6.0 with phosphoric or citric acid. The preacidified milk was ultrafiltered at 54 °C until 60% of original milk weight was removed as permeate, diafiltered with deionized water equal to 38.5% of the original milk and concentrated by UF (4.8 fold) to pre-cheese (38% total solid). The pre-cheese was heated to 76.7°C/16 sec, 71 .l°C/l6 sec (HTST) and 7l.l°C/l5 min (controlled water bath), inoculated with 2% starter culture (Streptococcus cremoris), renneted (10 ml/100 lb retentate) and placed in one …

The purpose of this research was to determine if a structured intervention program could assist individuals in adjusting to some of the disruption associated with divorce. A secondary purpose was to determine if identity status would mediate the effects of the intervention program upon divorce adjustment. The components of the intervention program were modeled on previous research. It was hypothesized that individuals participating in a structured treatment program would manifest greater gains in areas of divorce adjustment than the control group. The purpose of this study was to determine whether the Minnesota Multiphasic Personality Inventory (MMPI) could be used to discriminate between Vietnam veterans with Post-Traumatic Stress Disorder and those with other mental disorders. Scores on the 13 validity and clinical scales of the MMPI were used as predictor variables in two discriminant analyses. The first of these was performed in replication of studies in which cases of substance-abuse disorder were eliminated from the non-PTSD comparison group. Neurochemical and immunological effects of manganese chloride (MnCl2) were evaluated using young male CD-1 mice as the animal model. Intraperitoneal (i.p.) injection of MnCl2 (1, 3 and 10 mg/kg) daily for 4 weeks did not produce mortality or overt signs of toxicity in any of the treated animals. Manganese treatment increased the thymidine uptake of cultured splenic cells and the selective lymphoproliferative response to T-cell mitogens, phytohaemagglutinin and concanavalin A, in all the treated groups. No difference in the response to B-cell mitogen, lipopolysaccharide was observed. A dose of 10 mg/kg MnCl2 increased the mixed lymphocyte …

This research tested the use of non-sexist occupational modules of teaching activities and toys for preschool, second grade and fourth grade classes. In addition to brief descriptions of biological, cognitive development and social learning theories of gender role development, the literature review also focuses on factors which contribute to gender stereotyping in schools: teachers, teacher training, toys, teaching materials and activities. Several hypotheses were tested comparing project members as presenters of modules versus module use by regular classroom teachers and a module-free control group in each grade. Microvascular architecture of the normal human heart and myocardial focal necrosis were studied by scanning electron microscopy of corrosion casts. Casts macroscopically identical in form to the left ventricular posterior wall were prepared.
The following results were obtained in the normal human heart. (I) Most of the arterioles communicated with capillary plexuses smoothly and straight forwardly in the left ventricular posterior free wall. (2) Arterioles which branched from the arteries ran in various directions and continued into capillaries either at right angles or obliquely in the trabeculae carneae. Acute duodenal ulcers are produced in mice as a remote ("abscopal") effect of irradiation to the lower mediastinum. Such lesions have been examined with scanning electron microscopy at 5, 8 and 28 days after irradiation with 18 Gy of X-rays. All the ulcers occur within the first 1 cm long segment of the duodenum which is endowed with Brunner's glands. The single lesions vary in size, shape and position. The damaged area often includes much of the duodenal circumference and is distinguished by conical or rudimentary villi, or even by the complete absence of villi. In contrast, around the periphery …

Preparative methods for scanning electron microscopy of chromosomes are dependent on the original source of material. Chromosomes extracted from unfixed metaphase cells via isolation buffers tend to show topography and surface morphology which may have been induced by the choice of isolation buffer itself. Furthermore, this type of preparation often precludes any chromosome identification, as many metaphases have been pooled, and also the chromosomes from these preparations are not suitable for the banding techniques regularly used in clinical cytogenetics. Our own approach has been to use the standard cytogenetic approach, starting with methanol-acetic acid fixed, air dried metaphase spreads, allowing …

The organization of cytoskeletal proteins in whole-mount adherent platelets from African green monkeys and normal human volunteers has been studied by SEM, high vacuum electron microscopy (HVEM) and conventional (120 kV) electron microscopy. We describe three distinct organizational zones, the Central Matrix, the Trabecular Zone and the Peripheral Web in spread platelets from both sources. The Central Matrix is an ill-defined superstructure of 80-100 Å filaments of short length which enshrouded the granules, dense bodies, mitochondria and elements of the open-channel and dense-tubular systems.
