The Formulation Of Premium-Style Ice Milk, Low In Lactose, Sugar And Fat, Thanos Alagialis

A low lactose, sucrose-free, fat-free chocolate frozen dessert was developed. This was achieved by combining polydextrose-N as bulking agent, acesulfame-K as sweetener and a microcrystalline cellulose based stabilizer. The product that was developed contained 95 calories per 100 grams.

Lactose reduction of 96% was achieved in all milk products that were used when liquid lactase enzyme was added at 3.5% rate.

The frozen dessert mix that was developed, when flavored with vanilla or strawberry flavoring agents, gave a product with acceptable body and texture, but unacceptable flavor.

A modification of the AOAC method for thiamin determination utilizing reversed phase (RP) C18 packing material was developed for analysis of milk, infant formula and breakfast cereal products. Thiamin was extracted from food samples and hydrolyzed following a similar Association of official Analytical Chemists (AOAC) (1984) procedure. The sample filtrate was purified by passing through the reversed phase C18 column. An isocratic mobile phase consisting of 3% KCl and methanol (70 : 30) was used to elute thiamin from the reversed phase C18 column. Acceleration Of Starvation- And Glycerol-Induced Myxospore Formation By Prior Heat Shock In Myxococcus Xanthus, Kevin P. Killeen, David R. Nelson

The effect of heat shock on Myxococcus xanthus was investigated during both glycerol- and starvation-induced development. Cells heat shocked at 40 degrees C for 1 h prior to a development-inducing signal displayed an accelerated rate of myxospore formation at 30 degrees C. Additionally, M. xanthus cells heat shocked prior to glycerol induction formed a greater total number of myxospores when sporulation was complete than did control cells maintained at 30 degrees C. However, in starvation-induced fruiting cells the total number of myxospores in control and heat-shocked populations was about equal when fruiting body and myxospore formation was complete. Previously, it had been shown that an avirulent strain of Salmonella typhimurium, SL5316, with wild-type lipopolysaccharide (LPS) was a far better colonizer of the streptomycin-treated CD-1 mouse large intestine, was far more motile, did not bind to mouse intestinal mucus nearly as well as, but penetrated through a layer of intestinal mucus in vitro far better than an almost isogenic LPS-deficient transductant, SL5325. In the present investigation, a nonflagellated transductant, SL5681, and a nonchemotactic transductant, SL5784, were isolated from SL5316 and tested for relative colonizing ability versus SL5316 (smooth) and SL5325 (rough) in streptomycin-treated mice. The purpose of this study was to determine if open heart surgery patients and their spouses who receive additional preoperative teaching information exhibit less anxiety than those who receive the information without additional instruction. The sample consisted of 40 male open heart surgery candidates and their wives. Each couple was randomly assigned to one of two groups upon admission. Subjects in one group received the standard method of preoperative teaching by viewing a slide tape presentation. Subjects in the second group were required to view a picture book as well as the slide presentation. Data was collected immediately preceding the …

This study was conducted to test the validity of the Exercise and Self-Esteem Model (Sonstroem & Morgan, in publication). The model examines mechanisms of self-esteem change through exercise. This study examined the degree to which model components, physical self-efficacy, perceived physical competence and global self-esteem related to each other and to measures of physical fitness.

This research involved a sample of 70 subjects involved in the University of Rhode Island's EXERLIFE Program (CRM & CF) and 75 additional subjects from URI's faculty and community organizations.

All 70 Exerlife subjects participated in baseline physical fitness testing and were administered psychological inventories. …

Experiments were conducted to utilize ocean pout (Macrozoarces americanus) for the product ion of surimi, a washed fish mince made stable for frozen storage by incorporation of cryoprotectants. Principal factors affecting gel forming properties, freeze-thaw stability and sensory quality of ocean pout surimi were examined alone, as well as, in combination with either red hake or turkey meat under various conditions.
