Background:
Strategies that may increase compliance to reduced energy intakes are needed to reduce the health burden of obesity. Conflicting evidence exists regarding the effects of snacking on satiety and energy intake.
Methods:
This study compared short-term satiety from two common snack foods, low fat popcorn or potato chips. Using a counterbalanced within-subject design, 35 normal weight non-smoking participants (17 men, 18 women) ages 20–50 years (mean age 33 ± 11, BMI 23 ± 2 kg/m2) consumed four conditions each: 200 mL of water (control), one cup (4 g, 15 kcal) popcorn, 6 cups (27 g, 100 kcal) …

Background:
Given the rise in obesity and associated chronic diseases, it is critical to determine optimal weight management approaches that will also improve dietary composition and chronic disease risk factors. Few studies have examined all these weight, diet, and disease risk variables in subjects participating in recommended multi-disciplinary weight loss programs using different dietary strategies.
Methods:
This study compared effects of three dietary approaches to weight loss on body composition, dietary composition and risk factors for metabolic syndrome (MetS). In a 12-week trial, sedentary but otherwise healthy overweight and obese adults (19 M & 138 F; 38.7 ± 6.7 …

Energy-Based Carrying Capacities Of Bufflehead Bucephala Albeola Wintering Habitats, Richard A. Mckinney, Scott R. Mcwilliams
Natural Resources Science Faculty Publications
We present a model for calculating energy-based carrying capacities for bufflehead (Bucephala albeola), a small North American sea duck wintering in coastal and estuarine habitats. Our model uses estimates of the seasonal energy expenditures that incorporate site-specific energetic costs of thermoregulation, along with available prey energy densities to calculate carrying capacities in numbers of birds per winter. The model was used to calculate carrying capacities under several foraging scenarios for bufflehead wintering at three urban and three rural sites in the coastal northeast U.S. We found that energy-based carrying capacities varied from 20 – 320 birds per site …

One of the biggest issues in our society today is the increase in obesity. Despite the amount of available data on the negative health effects or possible solutions and food alternatives, the problem has not seemed to haven gotten any better. In more recent years, the notorious "freshman 15" has even become a victim to obesity and is weighing in as the "freshman 30." What is causing college students to become more susceptible to weight gain? There has been much research conducted to find the common causes of over-eating and weight gain, especially amongst those in college. After reading several …

Cellulose is a carbohydrate polymer that is composed of repeating glucose subunits. Being the most abundant organic compound in the biosphere and comprising a large percentage of all plant biomass, cellulose is extremely plentiful and has a significant role in nature. Cellulose is present in plant cell walls, in commercial products such as those made from wood or cotton, and is of interest to the biofuel industry as a potential alternative fuel source. Although indigestible by humans, cellulose is nutritionally valuable, serving as a dietary fiber. Because of its ubiquity and importance in many areas, studying cellulose will prove to …

Senior Honors Projects
An edible forest garden is a low-maintenance system that uses edible native and regionally-adapted plants arranged in beneficial relationships to meet human, wildlife and ecosystem needs. The forest garden in Roger Williams Park will transform underutilized urban land into a highly productive parcel producing market-viable fruits, nuts, vegetables, medicine and fiber. Forest gardens mimic natural forest systems in architecture and complexity. The design follows ecological principles to create a system that promotes biodiversity and enhances the surrounding ecosystem. This project also demonstrates the potential to grow food and create land-based livelihoods in the city.

As a senior at the University of Rhode Island, it has been my experience that the knowledge that has been most successfully retained within my mind has been that which I gained through active learning. As an international development minor I have taken many courses on how developmental aid is provided around the world, and throughout these courses I have learned that the drive for creating those endeavors came from an understanding of need. In order to best complete my education on international development I created a sustainable developmental aid project which provided education for specific needs in Malawi, Africa. …

A topic of interest that is growing in the general population is the idea of being sustainable, or “green”, and there is a rising awareness in sustainable practices involving food and the environment. Some of the “green” eating behaviors identified through my research included eating a plant-based (i.e. vegetarian or semi-vegetarian) diet, eating locally grown foods, eating organically grown foods, and eating foods that are labeled fair-trade. Frequently, these “green” eating behaviors are healthful eating behaviors …

Obesity, defined as a body mass index (BMI) of ≥ 30 kg/m2, is a major public health problem in the United States, affecting over 34% of Americans. Among the populations with the highest obesity prevalence is women aged 60 years and older. As a Kinesiology major, I find it very important to examine the complications that arise as a result of obesity.
We know that obese individuals run the risk of developing hypertension, Type 2 diabetes, and coronary heart disease. A potential health risk associated with obesity that is understudied is cognitive functioning impairment, like dementia. Dementia is …

I never expected my first experiences with course content related to my majors to be so traumatic. A young 19 year old, it seemed that every class I attended accosted me with the existence of yet another problem. War, government, education, climate change… The problems were massive and all seemed intractable. One particular “problem” that plagued me was global poverty; how could one billion people in this world live on less than one dollar a day? The theories were numerous, and the classroom discussion seemed a far cry from the reality of so many people living in extreme poverty. I …

Identifying The Relationship Between Benzene Exposure And The Development Of Acute Myeloid Leukemia, Jacqueline G. Tally
Senior Honors Projects
My interest in epigenetic carcinogenesis-related research stems from both academic and personal experiences. I have come to recognize the significance of environmental chemical exposures in the development of cancer through my studies in nursing, and nutrition and food science. I am particularly interested in the epigenetics of acute myeloid leukemia (AML) because I am an AML survivor.
AML is a rare and highly malignant cancer. It is estimated 13,780 new cases of AML will be identified in theUnited Statesthis year with a 74% mortality rate (calculated 10,200 deaths/13,780 new cases). AML develops from alterations in the survival and proliferation of …

Ocean acidification, caused by elevated seawater carbon dioxide levels, may have a deleterious impact on energetic processes in animals. Here we show that high PCO2 can suppress metabolism, measured as oxygen consumption, in the pteropod, L. helicina forma antarctica, by ~20%. The rates measured at 180–380 µatm (MO2 = 1.25 M−0.25, p = 0.007) were significantly higher (ANCOVA, p = 0.004) than those measured at elevated target CO2 levels in 2007 (789–1000 µatm, = 0.78 M−0.32, p = 0.0008; Fig. 1). However, we further demonstrate metabolic plasticity in response to regional …

Phosphorus (P) is a critical driver of phytoplankton growth and ecosystem function in the ocean. Diatoms are an abundant class of marine phytoplankton that are responsible for significant amounts of primary production. With the control they exert on the oceanic carbon cycle, there have been a number of studies focused on how diatoms respond to limiting macro and micronutrients such as iron and nitrogen. However, diatom physiological responses to P deficiency are poorly understood. Here, we couple deep sequencing of transcript tags and quantitative proteomics to analyze the diatom Thalassiosira pseudonana grown under P-replete and P-deficient conditions. A total of …

Herbivores can alter plant physiology through the induction of abnormal wood formation. Feeding by some insects induces the formation of false rings, a band of thick-walled latewood cells within the earlywood portion of the tree ring that reduces water transport. Hemlock woolly adelgid (Adelges tsugae Annand) and elongate hemlock scale (Fiorinia externa Ferris) are invasive insects that both feed on eastern hemlock [Tsuga canadensis (L.) CarriÈre]. Adelges tsugae has a greater effect on tree health than F. externa, but the mechanism underlying their differential effect is unknown. We explored the effects of these herbivores by assessing growth ring formation in …
