Ethiopia is one of the largest countries in Africa, with a fast-growing economy, rich history, diverse agroecology, more than 70 languages, and a population exceeding 130 million. However, the country continues to face serious internal conflict, high malnutrition, and economic hardship, while the study of leadership effectiveness remains limited and lacks consistent longitudinal research. To help fill this gap, this study examined how public perceptions of leadership effectiveness and development outcomes changed in Ethiopia between 2013 and 2023, using Afrobarometer survey data. Microbiomes in humans, animals, plants, and other environments are necessary components of the biosphere for global nutrient cycling and maintaining ecosystem balance. In particular, the gut microbiome plays an essential role in modulating human health through glycan utilization. Carbohydrate-active enzymes (CAZymes), CAZyme gene clusters (CGCs), and polysaccharide utilization loci (PULs) are key genomic features that determine microbial capacities for carbohydrate metabolism. Meanwhile, the arms race between phages and prokaryotes has led to the evolution of various anti-prokaryotic immune systems (APIS) in phages to counteract prokaryotic immune systems (PIS).

Monitoring plant health, including nutritional status assessment, is an important component of crop management decisions. This doctoral document addresses the use of agricultural remote sensing through focused investigations of plant disease detection and nutrient status assessment technologies that advance precision agriculture. The first chapter provides a comprehensive overview of remote sensing technologies in agriculture and examines current capabilities, limitations, and future directions. The final two chapters address studies that evaluated the virus-nitrogen interaction in wheat and compared methods to determine the nitrogen status of midseason field corn.

Metabolic dysfunction-associated steatotic liver disease (MASLD) is characterized by excessive lipid accumulation in hepatocytes and the development of lipotoxic stress that disrupts cellular homeostasis. Peroxisomal lipid metabolism plays an important role in maintaining acyl-CoA balance during fatty acid overload, yet the contribution of peroxisomal acyl-CoA thioesterases to early lipotoxic responses remains insufficiently understood. The aim of this study was to investigate the functional involvement of the peroxisomal enzymes acyl-CoA thioesterase 4 (ACOT4) and acyl-CoA thioesterase 8 (ACOT8) in hepatocyte lipid handling under acute lipotoxic conditions. Dryland crop production in Nebraska's semi-arid High Plains faces challenges from fluctuating weather impacts of climate change, including extreme temperatures, short growing seasons, and recurring droughts. Proso millet is an alternative crop used to build a more robust three-year rotation in the region, rather than the traditional two-year wheat-fallow cycle. This dissertation provides a systems-level assessment of proso millet, a climate-resilient crop with great potential to support sustainable cropping systems in the US High Plains. The United States beef industry relies on forages to provide up to 80% of total lifetime dry matter intake, making accurate forage mass estimation essential for determining stocking rates, improving grazing efficiency, and supporting economic sustainability. Traditional methods to quantify forage mass, however, are time-consuming and labor-intensive. This thesis presents research efforts to achieve accurate forage mass estimation in cereal rye pasture by integrating novel sensing technologies.

Vitamin D is a fat-soluble vitamin that is directly related to sunlight and is involved in multiple physiological processes including calcium metabolism, feather quality, and chick development. Most vertebrate species are capable of both absorption of exogenous vitamin D and internal synthesis of vitamin D, with vitamin D3 (cholecalciferol), being more accessible and bioactive in bird species. In exotic bird species, dietary requirements for vitamin D3 are largely unknown, and the ability to maintain adequate serum concentrations of vitamin D3 metabolites without direct sunlight exposure also requires evaluation. Mitochondrial efficiency plays a central role in determining how cattle partition nutrients toward muscle growth or adipose deposition, yet little is known about tissue-specific differences in mitochondrial density among tissues or among beef cattle. This study aimed to quantify mitochondrial density in muscle, liver, and adipose tissue samples from beef cattle and evaluate its potential relationship with metabolic efficiency. Tissue samples of semitendinosus muscle (ST), liver, and subcutaneous adipose (SC) were collected, homogenized, and analyzed for citrate synthase (CS) activity using a fluorometric assay as a proxy for mitochondrial density. The Northern Great Plains is experiencing extensive native grassland loss and landscape degradation, jeopardizing both ecological integrity and the socio-economic systems that rely upon these ecosystems. In an early effort to lessen degradation, the United States Department of Agriculture (USDA) introduced the Conservation Reserve Program (CRP) which generated ecosystem services benefits such as reduced soil erosion, improved water quality, and increased species diversity through the retirement of cropland and rangeland for 10- or 15-year contracts. However, CRP has not fully modernized alongside today’s agriculturalists and adoption remains shaped by an historically fraught socio-political context characterized by deep-seated mistrust between ranchers, …

Flies: Nature’S Hidden Helpers, A Science Literacy Project Exploring Beneficial And Pest Insects, Natalie Johnston

A science literacy project for elementary learners exploring beneficial and pest insects with a focus on flies, nature's hidden helpers.
This project demonstrates that science literacy can be cultivated through experiential and interdisciplinary teaching. Future developments could include digital tools for compost monitoring, citizen science participation, or expanded studies of other decomposer species. Cross-curricular collaboration with language arts and art education can further strengthen the integration of creativity and evidence-based reasoning.
Ultimately, this work reaffirms that even small organisms—like flies—can inspire big learning outcomes. By integrating science literacy with sustainability education, we prepare students to think critically about ecological relationships …

Buckwheat (Fagopyrum esculentum), a gluten-free pseudocereal, has gained popularity in global food markets for its nutritional value and functional properties. However, despite its health-promoting potential, buckwheat is vulnerable to microbial contamination and mycotoxin accumulation during cultivation, processing, and storage. These factors present significant food safety concerns that remain understudied, particularly in North America.
This study investigated the microbiological quality and mycotoxin contamination of buckwheat flour and groats collected from different suppliers via online sourcing. Executive Summary
This white paper examines the historical, ecological, and systemic challenges facing Indigenous food sovereignty, emphasizing the urgent need to center Indigenous Science—a holistic framework combining empirical observation with cultural wisdom passed down through millennia (Cajete and Williams, 2020). Indigenous Science represents the synthesis of two core components: the scientific, derived from thousands of years of observation and experimentation with the natural world, and the cultural, emerging from Creation stories and traditional practices that establish reciprocal relationships with the natural world (Grey and Patel, 2015).

Sorghum bicolor (L.) Monech (sorghum) is cultivated as food for humans and livestock and is valued for its low input requirements. However, sorghum grain protein is deficient in the essential amino acid lysine and has poor protein digestibility because of the abundance of proline-rich kafirins that constitute >70% of proteins that form low-digestibility protein bodies. To reduce kafirin expression in the endosperm, and elicit wholesale proteome rebalancing to increase non-kafirin proteins, a single-guide RNA (sgRNA) Clustered Regularly Interspaced Short Palindromic Repeats (CRISPR/Cas9) construct was previously used to target members of the highly-repetitive alpha-kafirin family, k1C in RTx430 sorghum. Plant nutrient demands and limitations are usually studied individually by nutrient. Here, we investigated how nitrogen (N) limitation in high-yielding soybean environments affects the uptake, removal, and residual of other plant macro- and micronutrients. The objective of this study was to quantify the uptake, removal, and residual levels of soybean macro- and micronutrients under N-limited conditions and to identify nutrient priorities for high-yielding soybean systems. Aboveground plant samples at physiological maturity were collected in 19 high-yielding soybean fields with N limitation across the state of Nebraska. We evaluated the influences of grazing livestock on crop production, soil nutrients, and soil health indicators of integrated crop livestock systems using three experiments during a seven-yr. period. This dissertation evaluates the performance of three on-farm swine carcass disposal methods: whole carcass composting (WCC), ground carcass composting (GCC), and shallow burial with carbon (SBC), focusing on biosecurity factors and groundwater contamination risks. Foreign animal diseases (FADs), such as African swine fever and classical swine fever, pose severe economic and animal well-being risks if introduced to the United States. Food science provides an opportunity to engage high school students in Science, Technology, Engineering, and Mathematics (STEM) by connecting classroom concepts to real-world applications. Despite the field’s relevance to public health, food safety, sustainability, and innovation, food science remains largely absent from high school curricula, and few students recognize it as a viable STEM pathway. The rumen microbiome plays a critical role in ruminant health and performance. As a consequence, many studies investigate microbial community composition using 16S rDNA based sequencing. As such, data quality and data filtering are critical to accurately identify microbial community composition. In this study we use mock communities to empirically select data filtering parameters to reduce artifact populations and compared the effect of filtering using different bioinformatic pipelines using rumen bacterial community data. The filtering parameters identified provides consistent estimates of rumen microbial diversity, regardless of bioinformatic pipeline utilized and provides a more accurate view of microbiome structure and composition. …

Project 1 focused on the central role that mitochondria play in ATP production, highlighting that variation within the mtDNA may influence feed efficiency. Variation in the mitochondrial genome was uncovered, and associations with feed efficiency in beef cattle were identified. Growth and feed intake phenotypes, as well as low-pass sequencing, were collected on beef steers across two populations. Protein coding variants were identified and used to classify animals into mitochondrial haplotypes. A linear mixed model was employed, which detected a significant association between mitochondrial haplotype and DMI. A significant haplotype with a variant in Complex I was associated with reduced …

It is well understood that lactating dairy cows require metabolizable protein (MP) for milk yield and milk protein synthesis. Diets with conventional feed sources like corn and soybean meal (SBM) may not sufficiently meet all MP and amino acid (AA) requirements so supplementation with more rumen undegradable protein (RUP) rich feeds or rumen-protected AA can be fed to support animal performance. This thesis examines the economic and environmental effects of electric and steam shrink-wrapping tunnels used in beef packaging processes, paying particular attention to the indirect refrigeration loads caused by the heat and humidity that each system releases. Traditional sustainability evaluations frequently ignore these indirect impacts, which are especially important in meat processing facilities where 45–55% of electricity use is attributed to refrigeration. Life cycle assessment (LCA), field measurements, and thermodynamic modeling are all used in this work to offer a thorough analysis of both tunnel types.
