Availability And Consumption Of Vitamin A Foods Among Southern Ethiopian And Zambian Primary Students, Trang Vuong
NUTR/GLST 498b: Global Research Experiences in Nutrition and Health
Purpose: Understand vitamin A food availability in open-air markets (OAM’s), and consumption of those foods by primary school children in southern Ethiopia/Zambia.
Methods: Conducted inventories of all consumable/potable items and interviewed 6-7th grade students about consumption of items with vitamin A.
Results: Students consumed most of the 14 vitamin A foods/items sold in OAM’s. Zambian students ate more liver, pumpkin, squash, watermelon, and wild fruits, while Ethiopian students almost never consumed squash, watermelon or wild fruits.
Conclusions: The availability of Vitamin A foods in Ethiopian and Zambian OAMs are varied; however, Zambian children reportedly eat more vitamin A foods. Nutrition …

University instructors face the task requirements of supporting candidates from a wide variety of backgrounds at the undergraduate and graduate level. While some of these candidates enter higher education programs skilled, eager, and committed, others are less prepared, requiring significant attention to make it through the program. Exams required by state departments of education and minimum grade point averages influence each candidate’s ability to move forward within the program, causing some students to experience additional struggles related to mental health and financial burdens.

Genomic selection (GS) can improve genetic gain of complex traits in plant breeding. Phenotyping agronomic traits of winter wheat (Triticum aestivum L.) for dualpurpose use is expensive and time-consuming. In this study, we compared the prediction accuracies of four GS models (RR-BLUP, GBLUP, GAUSS, and BL) for forage yield (FY), plant height (PH) and heading date (HD) of the hard winter wheat diversity panel (n = 298) using random and stratified sampling methods. Two studies were conducted to determine interactions of urea inclusion to a dried distillers grains plus solubles (DDGS) supplement fed at two amounts and two frequencies to steers on a high forage diet. In Exp. 1, 120 steers were fed individually for 84 d. Steers received ad libitum grass hay and 1 of 8 treatments. Supplement was fed either every day (D) or 3x/week (ALT), amount of supplement fed was 6.36 kg/week (LO) or 12.73 kg/week (HI), and contain either no urea (-U) or 1.3% urea (+U). Nutrient and pesticide concentrations in surface water are a growing concern in the Midwest. Floating treatment wetlands (FTWs) are often used to remove excess nutrients from surface water and should be considered for removal of emerging contaminants, such as neonicotinoids. Federal object-based scientific collections have been created to serve agency missions and, in a few cases, to comply with legislative and regulatory mandates. “Project collections” (those managed by the researchers who obtained them for restricted use) and their costs and benefits were considered too varied for standard methodologies that assess costs and benefits. In a few cases, departments and agencies are required by legislation or regulations to retain objects in long-term “institutional collections.” In most cases, decisions to retain objects are based on long-term costs relative to the perceived potential for benefits to taxpayers. Only 5% of Americans consume the recommended amount of dietary fiber. In an online simulated shopping experiment, we examined whether a fiber-focused point-of-decision prompt (PDP) would influence consumers to choose food products that were higher in this important nutrient. We hypothesized that participants exposed to the dietary fiber PDP would choose products with more dietary fiber/serving than those who were not exposed to the PDP. The experiment was completed by 753 participants. Participants were randomly assigned to a condition in which they were not exposed to a PDP (the no-PDP condition), a personalized PDP, or PDP without personalization. Choices in …

Soy-derived ingredients are commonly added as auxiliary components to a diverse range of food products. The versatile end-applications of commercially processed soy ingredients is concerning for the safety of allergic consumers. Immunological detection of soy proteins in food matrices has some drawbacks, including loss of epitope binding and matrix masking. Therefore, the aim of this study was to assess naturally incurred matrices with an existing liquid-chromatography tandem mass spectrometry (LC-MS/MS) workflow to determine the recovery of total soy protein.

Clostridioides difficile is recognized as one of the most important pathogens in hospital and community healthcare settings. The clinical outcome of infection of toxigenic C. difficile infection (CDI) ranges from asymptomatic colonization to fulminant pseudomembranous colitis and death. Previous studies have demonstrated the efficacy of ultrasonography to assess subcutaneous adipose tissue, cross-sectional area (CSA), and grayscale for muscle. The purpose of the present study was to examine the sex-related differences in subcutaneous adipose tissue, as well as cross-sectional area and grayscale for the rectus femoris (RF) and vastus lateralis (VL). Biofilm formation by foodborne pathogens is a serious threat to food safety and public health. Meat processing plants may harbor various microorganisms and occasional foodborne pathogens; thus, the environmental microbial community might impact pathogen survival via mixed biofilm formation. We collected floor drain samples from two beef plants with different E. coli O157:H7 prevalence history and investigated the effects of the environmental microorganisms on pathogen sanitizer tolerance. The results showed that biofilm forming ability and bacterial species composition varied considerably based on the plants and drain locations. Prior to the shutdowns caused by the COVID-19 pandemic, distillers grains and other co-products of ethanol production played a crucial role in maintaining the rev-enue stream of dry mill ethanol plants (Irwin 2020). With low crude oil prices over the last half of the decade and corn prices holding steady over the same period of time, the margin for error in the ethanol industry was thin. Piglets are born wet, and evaporation of that moisture decreases body temperature, increasing the risk of mortality. The objective of this study was to compare the effect of two commercially applicable methods for drying piglets at birth on piglet rectal temperature over 24 h after birth. The study was carried out in standard commercial farrowing facilities with 52 litters, using a completely randomized design with three Drying Treatments: Control (not dried); Desiccant (dried at birth using a cellulose-based desiccant); Paper Towel (dried at birth using paper towels). Piglets experience a rapid decrease in body temperature immediately after birth, increasing the risk of mortality. The objective of this study was to determine the effect of drying and/or warming piglets at birth on rectal temperature over the first 24 h after birth. Honors Program: Expanded Learning Clubs
The Relax and Recharge after school club was intended to help students wind down and recover from the stresses of the school day. We led a variety of crafts, exercises, and activities for this purpose. We also intended to provide the students with tools to take back into the school and home for stress management. Our goal was for the students to learn how to be more present, self-aware, and able to manage stress in a healthy way.

This club is meant for middle schoolers who want to learn about science while also having a creative outlet. Learn about different areas of science throughout land, ocean, and space. Exciting activities and experiments will be explored each week. For those that like to be creative, we will also enact stories and skits related to the area of science we are covering.

The Medieval Times club digs into European history that is often passed over in the classroom. We will talk about knights, dragons, chivalry, castles, and peasants. Popular myths like King Arthur and his knights of the Round Table and Beowulf - a story that partially inspired the Lord of the Rings - will be discussed. We will also examine some of the larger themes of the Middle Ages, including the Holy Wars, the Roman Empire, the Church, and pagans.
