High meat pH leads to an undercooked or an abnormal pink appearance in fully-cooked product. High-pressure processing (HPP) promotes protein denaturation. The objective was to evaluate the effects of HPP on cooked steak color and sensory attributes of dark-cutting beef. USDA Choice (mean pH = 5.5) and dark-cutting (mean pH = 6.3) strip loin sections were vacuum packaged and treated with 0 (no HPP), 300, 450, and 600 MPa of pressure for 90 s using chilled water. Steaks were randomly assigned to measure external cooked color, Warner- Bratzler shear force, and trained sensory panel. Applying 300 MPa of pressure improved …

Coping with surprise and uncertainty resulting from the emergence of undesired and unexpected novelty or the sudden reorganization of systems at multiple spatiotemporal scales requires both a scientific process that can incorporate diverse expertise and viewpoints, and a scientific framework that can account for the structure and dynamics of interacting social-ecological systems (SES) and the inherent uncertainty of what might emerge in the future. We argue that combining a convergence scientific process with a panarchy framework provides a pathway for improving our understanding of, and response to, emergence. Emergent phenomena are often unexpected (e.g., pandemics, regime shifts) and can be …

Lake Victoria, bordered by Kenya, Tanzania, and Uganda, provides one of the largest freshwater fisheries in the world and supports millions in small-scale fishing communities. Historical environmental change, including population growth, nutrient loading, introduced invasive species, and rising temperatures, has resulted in eutrophication and persistent cyanobacterial harmful algae blooms (cyanoHABs) over recent decades, particularly in the shallower gulfs, bays, and inlets. CyanoHABs impact fisheries and food web dynamics and compromise food and water security for nearshore fisher populations. Resilience research is central to confront the sustainability challenges to ecosystems and human societies in a rapidly changing world. Given that social-ecological problems span the entire Earth system, there is a critical need for resilience models that account for the connectivity across intricately linked ecosystems (i.e., freshwater, marine, terrestrial, atmosphere). We present a resilience perspective of meta-ecosystems that are connected through the flow of biota, matter and energy within and across aquatic and terrestrial realms, and the atmosphere. We demonstrate ecological resilience sensu Holling using aquatic-terrestrial linkages and riparian ecosystems more generally. A discussion of applications in riparian ecology and …

Purpose of Review We describe recent research regarding access to affirming mental health services for transgender and gender-diverse (TGD) adults and explore new resources available for therapists to inform evidence-based practice with TGD clients.
Recent Findings Barriers and facilitators at all socioecological levels impact TGD adults’ mental health help-seeking. TGD adults often interface with mental health providers while accessing gender-affirming medical care, though new standards of care are likely to alter this typically common path to mental health services. Efforts to improve therapist education, such as therapy manuals, are increasingly available and a necessary step to increase the number of …

Estos pueblos se desarrollaron en la región comprendida hoy por parte de México y América Central, caracterizados por algunos elementos culturales comunes, como el uso del calendario, el cultivo del maíz, los sacrificios humanos y un estilo artístico con rasgos únicos. Ychsma is one of the lesser-known textile styles of the central coast of Peru that date to the late periods. In this article, fragments of brocaded mantles from an Ychsma grave context, which is dated to the Late Horizon (1476-1532 A.D.) by the presence of an Inca plate, are described and illustrated. The mantles, which are characterized by certain technical features, images, colors and patterns of repetition, are used to identify further examples in museum collections. The expanded sample provides a detailed picture of one of the most spectacular types of textiles that belong to the Ychsma style, as well …

Medical advancesmean a growing array of interventions, therapies, and technologies are available to support care for children with chronic and serious conditions. Some of these approaches are supported by robust data drawn from populations that perfectly reflect an individual patient's physiologic, psychologic, and social situation. But much more often, clinicians and families face decisions in the context of some—or much—uncertainty about whether the intervention will do a child more harm than good. This article uses key concepts of Anzaldúan philosophy to describe the Mosquitoes & Me summer camp as ciencia zurda or left-handed science. It details a day-in-the-life portrait of Elena, a first-generation Latina middle schooler, as she experiences the opportunities that Mosquitoes & Me provided for self-other bridge crossing and radically relational, Nepantlan potential. Our discussion of Elena’s experiences in terms of Nepantlan principles of diversity, Affect, and spirit, as well as Affective accumulation and aesthetic consciousness, infuse an emotional and spiritual dimension to inquiry science- and responsive sciencecomplementarity and revisit a call for soul-centered, socially-transformative science.

Changing Blow Fly (Diptera: Calliphoridae) Populations In Orlando, Florida, United States, Amanda Roe, Russell J. Barnes, Leon G. Higley, Neal H. Haskell

Blow flies (Diptera: Calliphoridae) were collected from various carrion baits in Orlando, Florida over 2 periods: Jun 2009 to Sep 2009 and Apr 2010 to Oct 2010. In a previous study conducted from 2002 to 2004 the dominant blow fly in Orlando, Florida, was Lucilia coeruleiviridis Macquart (Gruner et al. 2007). This collection documents a shift to Chrysomya megacephala Fabricius, as the most dominant blow fly species found in Orlando, Florida in 2009 to 2010. These field results have potential forensic implications, particularly in the analysis of cold cases.

Cuando en 2005 se encontró la Tumba del Sacerdote Lechuza en San José de Moro (SJM), no era la primera vez que se hallaban representaciones de lechuzas entre los objetos arqueológicos recuperados en el sitio y, ni muchos menos, la primera vez que las encontrábamos en el arte mochica o el arte de la región andina en general. No obstante, significaba la primera vez que un personaje en dicho sitio aparecía con gran parte de su ajuar ligado a la figura de una de estas aves, confirmando la existencia, no solo de esas aves en el ecosistema mochica, sino también …
