Health education is an important growing focus in preventative medicine nationwide. Topics spanning from nutrition and exercise to injury and illness avoidance are being implemented as part of the educational and training process in medical schools across the United States. We sought to examine the prevalence of health education counseling provided by primary care personnel during patient visits. Additional analyses were conducted to determine factors associated with the provision of patient health education by physicians and nurses. The target of this study was obesity’s problematic rise in America. It was noted in the research that children developed habits that would potentially last a lifetime and which also dictated their medical fate. The focus of this study was to identify and decrease the factors of childhood obesity through education, healthy eating, and changes in food choices through student-planned, model menus that would target nutrition and healthy choices. Dental microwear texture analysis has been refined to a methodology relying upon scanning confocal microscopy for its advantages of repeatability and standardized quantification. A new instrument, the Plu Neox (Sensofar Corp.) confocal profiler recently entered the market, sparking questions among dental anthropologists related to the advantages and efficacy of this new technology, which has better resolution and lighting properties than previously available white-lighted based confocal profilers. ApoE helps regulate serum cholesterol levels by adding in transport of cholesterol into the cells, as well as, to the liver. ApoE knockout mice (ApoE KO) present a model that demonstrates the effects of hypercholesterolemia. Damage to muscle stimulates a complex regenerative response. The effects of high cholesterol on this regenerative response are not known. PURPOSE: To determine if skeletal muscle regeneration is altered in apoE KO mice by measuring protein synthesis regulator IGF-1, Akt, mTOR, and p70S6K, cell cycle regulator cyclin D1, and myogenic regulatory factors myoD and myogenin. This dissertation examines the impact certain healthy lifestyle choices had on smoking behavior among college students who smoke cigarettes. Even with continued reduction in prevalence, cigarette smoking is still the leading cause of preventable death in America. With that in mind, it is important to continue to identify factors that relate to decreased tobacco usage. Secondary data from the American College Health Association's bi-yearly National College Health Assessment was used for this study. Bioactive peptides derived from food sources with anti-proliferative properties against cancer have drawn more attention in recent years. A pentapeptide derived from rice bran has shown anti-proliferative propertiesagainst human breast cancer cells. The objective of this study was to investigate the mechanistic action of the pentapeptide-induced apoptosis in breast cancer cell models (MCF-7 and MDA-MB-231). Primocane-Fruiting Blackberry: Optimum N-Fertilization, Jose Carlos Reynoso Campos

This study was conducted in 2011 at the University of Arkansas, Fayetteville to determine the optimum rate and time of nitrogen (N) application for `Prime-Ark® 45' primocane-fruiting (PF) blackberries under high tunnel conditions. There were four N treatments: Control (0), 10, 10-split, and 20 kg*ha-1 (Treatments 1, 2, 3, 4, respectively). In a randomized complete block (RCB) design, the following variables were compared: total and marketable yield, fresh weight of plant above ground, and cane diameter. Total fruit yields for Treatments 2 and 3 (2.5 and 2.5 kg, respectively) were highest and significantly different from the other treatments (p< 0.05). Marketable yield had a similar trend as total fruit yield, although not significantly different. Cane diameter and plant fresh weight were not significantly affected by fertilizer treatments. There were not significant differences in N content in leaves among treatments. Results indicated that either a single or split N application of 10 kgN*ha-1 could result in better yields.

The dissertation consists of three chapters exploring the effect of school program and neighborhood environment on childhood obesity outcome using individual panel data set of Arkansas public schoolchildren.

The first chapter (Section 2) investigates how the Fresh Fruit and Vegetable Program (FFVP), a program that provides funding for the distribution of free fresh fruits and vegetables to students in participating schools, affects childhood obesity. We combine matching methodology and difference-in-differences analysis to estimate the effect of the FFVP on childhood BMI outcomes. Estimates of the FFVP effect are sensitive to different matching methods. Methods that provide a good balance between …

Rice (Oryza sativa L.) is one of the most important global cereal crops and is grown on a substantial number of hectares in Arkansas each year. Consequently, Arkansas is the leading rice producing state in the United States accounting for almost half of domestic production. The development and release of N-STaR (Nitrogen-Soil Test for Rice) allows producers to predict site-specific N fertilizer needs for rice production in Arkansas, with N-STaR being a predictor of potentially mineralizable-N. In terms of energy density, the cost of shipping hay is often not justified in yr where adverse conditions limit available forage. Our objective was to determine if co-product feedstuffs could be used to meet the energy demands for cows in late pregnancy. Eighty-six crossbred cows (527 ± 0.8 kg BW) in late gestation were stratified by BW, BCS and age and allocated randomly to 1 of 6 groups held on 2-ha dormant bermudagrass pastures for 68 d. Aquaculture is one of the fastest growing areas of the food production system. According to the FAO, its rise is expected to continue through the year 2030 in order to maintain per-capita consumption levels required for the increasing population. Fishmeal--obtained from wild-harvested fish--has been the source of protein for fish feed. However, data indicates that these fish harvests are in decline, which could restrain that growth. The possibility of a shortage of fishmeal prompted the industry to look into possible alternatives. School Choice Demonstration Project

The revenue study is based on Fiscal Year 2010‒11 (FY11) data for each of 30 selected states plus the District of Columbia (D.C.). Traditional school districts and public charter schools were analyzed and aggregated “statewide.” For each state, one to three “focus areas” were selected based on larger concentrations of charter students – most focus areas are large cities, some are metropolitan counties. Traditional school districts and charter schools were analyzed separately in each focus area. Inquiry: The University of Arkansas Undergraduate Research Journal

Consumer interest in blackberries has been increasing due in part to reputed health-promoting factors. Appearance, flavor, and texture attributes of blackberry fruits are important to consumers. The objective of this study was to investigate correlations among sensory and composition attributes of blackberry genotypes from the University of Arkansas Division of Agriculture breeding program. Descriptive panelists evaluated attributes of 20 blackberry genotypes. Composition attributes were evaluated for these and two additional genotypes. ‘Natchez’ had the most pyrenes/berry and the highest levels of total ellagitannins. Selection A-2215 was scored highest for descriptive-evaluated sweetness and had the highest soluble solids content. Total ellagitannins …

Consumers vote every day on which products line the shelves of grocery stores, co-ops, and niche markets. Public unrest with regard to the environmental, animal welfare, food purity, and human health impacts of agricultural production practices have led to the rise of unconventionally produced (UP) food products. While the sales of UP foods is increasing, studies regarding the qualities of such products that impact consumer purchases have yielded inconsistent results. Bovine respiratory disease (BRD) is the most prevalent and devastating disease in U.S. feedlot cattle. This study evaluated the use of isoflupredone acetate in the treatment of BRD. Crossbred male beef calves (n = 192; body weight = 221 ± 3.9 kg) were acquired in two blocks from regional auction markets and transported to the University of Arkansas Stocker and Receiving Cattle Unit. Calves were observed daily for signs of respiratory illness. Antibiotic treatment was administered if calves displayed signs of respiratory illness and rectal temperature was ≥40 °C.
