Polyunsaturated fatty acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are major maternal dietary supplements due to their positive benefits on neurological tissue growth during the first 12 weeks of gestation. Previous studies show that EPA and DHA inhibit muscle formation but promote adipogenesis. However, no research has addressed the question whether high intake of EPA and DHA affects brown fat development during gestation. Formation of harmful microbes and their associated mycotoxins on rough rice during storage presents negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Freshly-harvested long-grain, hybrid, rough rice (XL 745) with initial moisture content (IMC) of 18.4% wet basis (w.b.) was used. This study evaluated the stability of anthocyanins in six blueberry products (gummy, graham bar, oatmeal bar, rice krispy bar, ice pop and juice) prepared with freeze-dried wild blueberry powder during processing and over eight weeks storage. Total anthocyanins were determined by HPLC before processing and at day 0 and 2, 4, 6, and 8 weeks of storage. Thermal processing of gummy and graham bar products resulted in losses of anthocyanins (50 and 31%, respectively). An eight-week storage time also resulted in a decrease in anthocyanins (7 to 51%) in products stored at ambient temperature. The ice pop, which was stored …

This study explores the husbandry methodologies on a backyard poultry farm in Dangriga, Belize, with the purpose of producing a set of guidelines for backyard poultry growers that have limited resources in similar regions. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. Food production has become more complex over time. Moreover, we are producing food in an increasingly global, rather than local, manner. How can demands for sustainability be reinforced in this age of complex, global supply chains? This essay focuses on three key features of the modern food supply chain: the variety of components, the complexity of the chain itself, and diversity of “enforcement” mechanisms in food production supply chains. These features suggest that traditional governmental tools (such as command and control measures) and contractual tools (such as performance standards) may not be sufficient to ensure sustainable production methods.

Cercospora zeae-maydis is one of the primary pathogens associated with gray leaf spot, one of the most damaging foliar diseases of maize in the world. Gray leaf spot can be managed to some extent by cultural practices and fungicide applications. To infect maize, C. zeae-maydis grows towards stomata and forms infectious structures, termed appressoria, over stomatal pores. Prior research on the pathogen revealed that appressorium formation is crucial for foliar infection. The World Trade Organization’s (WTO) Agreement on the Application of Sanitary and Phytosanitary Measures (SPS Agreement) provides rules on the adoption and enforcement of SPS measures. It also presumes that food safety regulations adopted by WTO Members that conform to relevant international standards are consistent with the SPS Agreement. The relevant international standard setting body for food safety is the Codex Alimentarius Commission, which conducts most of its food safety risk management work through subsidiary bodies such as the Codex Committee on Contaminants in Food (CCCF). The world’s farms currently produce enough calories to adequately feed everyone on the planet. From the 1960s through 2008, per capita food availability worldwide has risen from 2220 kilocalories per person per day to 2790. Specifically, developing countries have recorded a rise in kilocalories per person per day, from 1850 to 2640. Yet, despite overall availability, around 815 million people still suffer from hunger or some form of malnutrition. Approximately one in ten people are undernourished.

Background: The largest population of Marshallese immigrants in the Contiguous U.S. resides in Northwest Arkansas. Despite adequate access to healthcare, the Marshallese face many health disparities, perhaps partly due to the language barrier they face in healthcare settings and education. Regarding breastfeeding rates, women in the Marshall Islands have a significantly higher rate of exclusive breastfeeding than in Marshallese women residing in the U.S. who face cultural barriers. Breastfeeding is positively correlated to many benefits for infants and is recommended exclusively for at least 6 months by pediatric policy organizations.

Although short-grain rice accounts for less than 2% of U.S. rice production, the demand for short-grain rice is expected to increase because of the increasing popularity of sushi and sake. The effect of both genetic and environmental influences on broiler meat quality were evaluated over three experiments. Selection response was assessed for broiler lines selected for high (HBY4) and low (LBY4) four day percentage breast yield which were formed from a random bred control (RAN). Vegetable soybean [Glycine max (L.) Merr.], known as edamame, needs weed management tools. Releasing locally adapted edamame soybean varieties and registering herbicides are necessary for successful production and expanding the edamame industry. This research aimed to 1) identify herbicides labeled for grain soybean for potential use on edamame; 2) evaluate differential tolerance of edamame soybean varieties to selected grain soybean herbicides; and 3) identify a feasible edamame-based crop rotation system. For objective 1, 26 herbicide treatments were tested on AVS-4002 edamame including preplant (PPL), preemergence (PRE) and postemergence (POST) herbicides labeled for grain soybean. The research objectives were to evaluate the efficacy of aqueous ozone 1) on the inactivation of viruses and bacteria on produce; 2) on the inactivation of viruses on stainless steel; and 3) against viruses in association with bacteria on produce surfaces. Over the past few decades, broiler breast meat has changed in terms of meat quality. Meat quality has deteriorated with the rise in the occurrence of muscle myopathies. Conditions such as woody breast, which is described as pale and bulging areas of distinct hardness, compromise both the textural and technological traits that have been associated with breast meat. Flood tolerance in soybean (Glycine max) is not a well-characterized trait, yet flooding damage is second only to drought stress in terms of yield reduction. The objectives of this study were to determine genetic variation for flooding tolerance in two populations of soybean recombinant inbred lines (RILs) and to identify and confirm flood tolerant QTL. Little is known about the effects of soybean (Glycine max L.) management techniques on soil-nitrogen (N) credit development and its impact on the subsequent rice (Oryza sativa L.) crop’s success. This study was conducted to determine how soybean maturity group (MG) and planting date effect overall soybean productivity and its influence on the following rice crop. Various soybean planting dates (optimum and late) and MGs (3.5, 4.7, 5.4, and 5.6) were grown and followed in rotation with a rice crop. This work classifies examples of infrastructure interdependencies found in the food and agriculture critical infrastructure sector. Interdependencies are identified through an examination of rice and poultry agriculture throughout the state of Arkansas. The subtleties of interdependence examples in the food and agriculture sector are inadequately captured by the well-studied interdependence classification taxonomies. Through 39 interviews, we develop an understanding of the subtle temporal, geographic, and productivity scales of interdependence in over 100 examples and present five new, distinct classifications of interdependence: (1) dynamic physical, (2) dynamic geographic, (3) deadline, (4) delay, and (5) human, economic, and natural resource interdependencies.
