The retail gardening industry in the United States is expected to reach $50 billion by 2023, and it is a significant driver of the agricultural economy. To meet the corresponding demand for information, consumer horticulture (CH) professionals will need to develop innovative digital outreach, research-based solutions, a concerted recruitment of youth, and enhanced collaborations. To understand the current gaps in CH research and the extent of the involvement of public gardens in CH, surveys were conducted among the two groups, CH/ extension researchers and staff of public gardens. The results of the surveys were presented at the virtual conference of …

Enhancing dietary omega-3 high unsaturated fatty acids (n-3 HUFA) intake may confer neuroprotection, brain resiliency, improve wound healing and promote cardiovascular health. This study determined the efficacy of substituting a few common foods (chicken meat, chicken sausage, eggs, salad dressings, pasta sauces, cooking oil, mayonnaise, and peanut butter) lower in omega-6 polyunsaturated fatty acids (n-6 PUFA) and higher in n-3 HUFA in a dining facility on blood fatty acid profile. An eight-week prospective, between-subjects (n = 77), repeated measures, parallel-arm trial was conducted. Participants self-selected foods consumed from conventionally produced foods (control), or those lower n-6 PUFA and higher n-3 …

Catfish are the predominant U.S. aquacultural product. However, byproducts from filleting, including bones that are high in calcium, typically go to waste or are sold as a low-valued feed. This research evaluated the potential use of catfish bone powder (CBP; 21.07% calcium) as a food ingredient. Catfish fillet strips were dredged with a breading mix (CBPM) containing 0% (0CBPM), 10% (10CBPM), and 20% (20CBPM) CBP before frying. Consumers (N = 211) evaluated sensory liking (nine-point hedonic scale) and attribute intensity (JAR scale), emotions (check-all-that-apply), and purchase intent (PI, yes/no) of samples. Color and texture were measured instrumentally. CBP did not …

Three Essays On Climate Smart Agriculture And Multidimensional Poverty In Uganda, Sarah Kagoya
Three Essays On Climate Smart Agriculture And Multidimensional Poverty In Uganda, Sarah Kagoya
LSU Doctoral Dissertations
Agriculture is the backbone of the Ugandan economy. It contributes about 23.1% to the gross domestic product and employs approximately 72% of the total labor force (World Bank, 2021). However, Uganda suffers from low agricultural productivity resulting from pests and diseases, changing climate, deteriorating natural resources, and lack of modern factors of production. In addition, land deterioration and fluctuating weather patterns lead to reduced crop productivity and cause food insecurity in the country. Climate-Smart Agriculture (CSA) can help transform the agricultural system and ensure food security in the country.
The dissertation is written in a three-essay format. The first essay …

Developmental Functioning Of Infants And Toddlers With Neurodevelopmental Disorders, Megan Callahan
LSU Master's Theses
Autism spectrum disorder (ASD), epilepsy, and cerebral palsy (CP) are some of the most common neurodevelopmental disorders among children with prevalence rates of 1.85% (Maenner et al., 2020), 1.2% (Zack & Kobau, 2017), and between 0.21 and 0.31% (Christensen et al., 2013), respectively. These neurodevelopmental disorders are highly comorbid with each other and with other disorders, such as intellectual disability (ID). While previous research has investigated developmental functioning in these neurodevelopmental disorders, it has primarily focused on only two at a time and in older children or adults. The current study aimed to investigate developmental functioning in these neurodevelopmental disorders …

Ecology Of Periphyton In A Subtropical River Floodplain, Kamela De Gallardo
LSU Doctoral Dissertations
The Atchafalaya River Basin (ARB) in southcentral Louisiana, USA, is a large and biologically diverse floodplain surrounding the Atchafalaya River (AR), which is the largest distributary of the Mississippi River, receiving 30% of the combined daily discharge of the Mississippi and Red Rivers. Annual flooding facilitates exchange between the AR and its floodplain and is thought to give rise to the high productivity of the river-floodplain system. Primary production within the aquatic ARB is driven by periphytic algae, phytoplankton, and aquatic macrophytes, however, very little is known about periphytic algal assemblages in floodplain systems. In this study, artificial substrates were …

Identifying the composition of avian diets is a critical step in characterizing the roles of birds within ecosystems. However, because birds are a diverse taxonomic group with equally diverse dietary habits, gaining an accurate and thorough understanding of avian diet can be difficult. In addition to overcoming the inherent difficulties of studying birds, the field is advancing rapidly, and researchers are challenged with a myriad of methods to study avian diet, a task that has only become more difficult with the introduction of laboratory techniques to dietary studies. Because methodology drives inference, it is important that researchers are aware of …

Objective: Vanishing white matter (VWM) is a genetic brain white matter disorder caused by mutations in eIF2B. eIF2B is central in the integrated stress response (ISR), during which its activity is inhibited by various cellular stresses. VWM is a chronic progressive disease with episodes of rapid neurological deterioration provoked by stresses. VWM patients and VWM mouse models show ISR deregulation in brain, correlating with chronic disease development. ISR inhibition ameliorates the chronic disease in VWM mice. The subacute deteriorations have not been modeled yet. We hypothesized that ISR activation could worsen disease progression in mice and model the episodic neurological …

Obesity: Understanding And Achieving A Healthy Weight, George A. Bray, Catherine M. Champagne
Population and Public Health Science Faculty Publications
Obesity is a chronic, relapsing, stigmatized disease process that is increasing in prevalence, affecting both adults and children. It is the result of a small positive energy imbalance from too much food or too little activity. These underlying causes are influenced by many environmental factors. The food we eat is more than “calories,” and focusing on calories alone may not be as productive as focusing on patterns of eating and the role of sugar and fat in the diet. Obesity increases the risk of many diseases and shortens life span, and weight loss provides benefits in reducing health risks and …

Cardiovascular disease (CVD) continues to be the leading cause of death in adults, highlighting the need to develop novel strategies to mitigate cardiovascular risk. The advancing obesity epidemic is now threatening the gains in CVD risk reduction brought about by contemporary pharmaceu-tical and surgical interventions. There are sex differences in the development and outcomes of CVD; premenopausal women have significantly lower CVD risk than men of the same age, but women lose this advantage as they transition to menopause, an observation suggesting potential role of sex hormones in determining CVD risk. Clear differences in obesity and regional fat distribution among …

Estrogen receptor–α (ERα) expressed by neurons in the ventrolateral subdivision of the ventromedial hypothalamic nucleus (ERαvlVMH) regulates body weight in females, but the downstream neural circuits mediating this biology remain largely unknown. Here we identified a neural circuit mediating the metabolic effects of ERαvlVMH neurons. We found that selective activation of ERαvlVMH neurons stimulated brown adipose tissue (BAT) thermogenesis, physical activity, and core temperature and that ERαvlVMH neurons provide monosynaptic glutamatergic inputs to 5-hydroxytryptamine (5-HT) neurons in the dorsal raphe nucleus (DRN). Notably, the ERαvlVMH → DRN circuit responds to changes in ambient temperature and nutritional states. We further showed …

Midlife women commonly experience changes in cardiometabolic, physical, and psychosocial health because of menopause. Importantly, these health changes can negatively affect the overall quality of life. Specifically, women experience changes in metabolism and weight gain (particularly abdominal fat), bothersome vasomotor symptoms (i.e., hot flashes and night sweats), sleep disturbances, mood swings, and reduced bone health. Women may also experience social isolation, loneliness, and changes in gastrointestinal health, which can further reduce their quality of life. In this chapter, we summarize these important health changes and discuss various dietary and lifestyle considerations that healthcare professionals can employ to help their patients …

Every year, 2 million women reach menopause in the United States, and they may spend 40% or more of their life in a postmenopausal state. In the years immediately preceding menopause—known as the menopause transition (or perimenopause)—changes in hormones and body composition increase a woman’s overall cardiometabolic risk. In this narrative review, we summarize the changes in weight, body composition, and body fat distribution, as well as the changes in energy intake, energy expenditure, and other cardiometabolic risk factors (lipid profile, glucose metabolism, sleep health, and vascular function), that occur during the menopause transition. We also discuss the benefits of …

The Vegetarian/Flexitarian Diets, Derek Miketinas, Catherine M. Champagne
Population and Public Health Science Faculty Publications
Vegetarian diets are popular for their documented health benefits, ethical considerations, cost-effectiveness, and other perceived benefits. These diets can be nutritionally superior to the typical Western diet for reducing chronic disease risk including cardiovascular disease, obesity, certain cancers, and type 2 diabetes. Although the health benefits of vegetarian diets are well documented, they are comparable to other diets that do not necessarily restrict animal products, such as the Dietary Approach to Stop Hypertension (DASH) and Mediterranean diets. Restricting entire food groups can present nutritional concerns, including potentially inadequate intakes of some micronutrients; however, the clinical manifestations of such deficiencies are …

The concept of a Mediterranean diet can be attributed to Ancel Keys. His insights began the study of this dietary pattern and its many variations. Components of the Mediterranean diet have been described and compared to other high-quality diets. The health benefits from the diet have been examined in four separate categories. Central adiposity was significantly less in individuals adhering to a Mediterranean diet than those with poorer adherence scores to a Mediterranean diet. Substituting different types of monounsaturated or polyunsaturated fat for saturated fat, red meat, or carbohydrate significantly reduced body weight. The risk of developing diabetes and the …

For a number of medical conditions as well as weight status, an assessment of nutritional status can provide valuable information to direct treatment efforts. In the context of the seemingly constant increase in obesity, it is more important than ever to assess these individuals in the healthcare setting. A thorough nutrition assessment will enable the healthcare professional to craft a treatment plan that includes reduction of energy intake and/or increased physical activity to encourage weight loss. Efforts to do this successfully are not without challenges in the determination of dietary intakes since there does not appear now, or perhaps ever, …
