The objective of this research was to evaluate the feasibility of developing acceptable low-sodium products by using a salt-replacement technique, an oil-in-water emulsion system, and health benefit information to improve consumers’ awareness of low-sodium diets. Three experiments were conducted: (I) Sensory characteristics and optimization of low-sodium roasted peanuts by substitution of NaCl with KCl, and addition of glycine (Gly) as a bitterness blocker; (II) Rejection threshold (RjT) of KCl added to low-sodium roasted peanuts using a 2AC-test; (III) Development of acceptable low-sodium and sodium-free spreads by flavor modification and their use on turkey salad sandwiches. Smoking is the leading cause of preventable death accounting for approximately 480,000 deaths every year (Jamal et al., 2015). Across the socioeconomic status gradient smoking prevalence differs greatly, with those of lower socioeconomic status smoking at much higher rates. Within the literature relationships have been identified between socioeconomic status, stress variables, and smoking. However, little research has explored the possibility of stress variables mediating the relationship between socioeconomic status and smoking. Individuals with serious mental illness (SMI) are disproportionately impacted by preventable physical health conditions, which put them at risk for premature mortality. Integrated primary and behavioral health care (PBHC) programs have demonstrated promise in treating comorbid physical and mental health conditions, common to individuals diagnosed with SMI. The current study focused on individuals with thought disorders (i.e., schizophrenia, schizoaffective disorder, and brief psychotic disorder), as those diagnosed are more likely to be retained in care. While the literature is replete with studies of the factors contributing to the failure and social deviance of African American males, few qualitative studies have been conducted to determine the factors that support the success of African American males, and virtually none have focused on the transition of African American males from out-of-home care to postsecondary educational institutions. Despite the challenges faced preceding and during out-of-home care, African American males can transition to postsecondary educational institutions. The distribution of parasites across mammalian hosts is complex and represents a differential ability or opportunity to infect different host species. Here, we take a macroecological approach to investigate factors influencing why some parasites show a tendency to infect species widely distributed in the host phylogeny (phylogenetic generalism) while others infect only closely related hosts. We analyzed phylogenetic and functional diversity to understand community assembly of the ferns of Florida at two spatial scales. Objective:Body mass index (BMI) is commonly used to assess obesity, which is associated with numerous diseases and negative health outcomes. BMI has been shown to be a heritable, polygenic trait, with close to 100 loci previously identified and replicated in multiple populations. We aim to replicate known BMI loci and identify novel associations in a trans-ethnic study population.Subjects:Using eligible participants from the Population Architecture using Genomics and Epidemiology consortium, we conducted a trans-ethnic meta-analysis of 102 514 African Americans, Hispanics, Asian/Native Hawaiian, Native Americans and European Americans. Objectives: Clostridium difficile is the major cause of infectious diarrhoea in humans after antimicrobial treatment. Clostridium difficile has been isolated from food animals and meat. The main purpose of this study was to characterize C. difficile isolated from retail lettuce and determine the antibiotic resistance using five common clinical-selected antibiotics (metronidazole, vancomycin, clindamycin, erythromycin, and cefotaxime). Materials and Methods: Lettuce samples (grown in California, Arkansas, and Louisiana) were purchased from retail stores. Results: Toxigenic C. difficile was isolated from 13.8 per cent (41/297) of the lettuce samples. Among the toxigenic isolates, only 82.9 per cent (34/41) produced toxin B, 17.1 …

Background: Insomnia is common in the elderly and is associated with chronic disease, but use of hypnotics increases the incidence of falls. Montmorency tart cherry juice has improved insomnia by self-report questionnaire. Study Question: Is insomnia confirmed by polysomnography and is tryptophan availability a potential mechanism for treating insomnia? Study Design: A placebo-controlled balanced crossover study with subjects older than 50 years and insomnia were randomized to placebo (2 weeks) or cherry juice (2 weeks) (240 mL 2 times/d) separated by a 2-week washout. A rigorous approach that can describe isotope distribution among biomolecules and their apparent deviation from equilibrium state is lacking, however. Background: The purpose of this study was to examine the effects of cardiorespiratory fitness and weight status on knowledge of physical activity and fitness (PAF knowledge), attitude toward physical education (PE), and physical activity. Methods: A total of 343 middle school students participated in the study (Age: M/SD = 12.76/.94, ranging from 11 to 14 years old). Sperm cryopreservation is an essential tool for long-term storage of genetic resources for aquaculture fishes. The goal of this study was to develop an efficient and streamlined protocol for high-throughput processing for sperm cryopreservation in Atlantic salmon, Salmo salar. In response to the explosion of the Deepwater Horizon and the massive release of oil that followed, we conducted three annual research voyages to investigate how the oil spill would impact the marine offshore environment. Lentinus edodes was included in nonsucrose gluten-free cookie formulations. Their digestible properties and quality features were analyzed. Six various types of cookies were prepared through the use of 0, 5, 10, 15, 20, and 25% of Lentinus edodes powder. The quality features of cookies and cookie dough, as well as digestibility were measured. To which level consumers were attracted by the six types of cookie was assessed. The quality features of the six types of cookies varied significantly to different degrees. Understanding the spatial interactions among multiple ecosystem services is crucial for ecosystem services management. Ecosystem services, including crop production, freshwater supply, aquatic production, net primary production, soil conservation, water conservation, flood regulation, forest recreation, were measured at 1-km grid scale covering the Taihu Lake Basin (TLB) of China. Our objective is to get a comprehensive understanding of the spatial distributions, trade-offs, synergies of multiple ecosystem services across the TLB. Fisheries produce important impacts around the world through the exploitation of a wide range of species. In Louisiana, crayfish is the most emblematic crustacean and supports a multi-million industry based on pond culture and harvest from natural habitats. Although the economic value (USD) of wild-harvested crayfish has decreased from 10% to 3% of total crayfish value from 2013 to 2015, wild harvested crayfish are highly desired by many consumers and have a strong socio-cultural importance in Louisiana and other Gulf of Mexico coastal regions. The purpose of this study was to examine Louisiana State University (LSU) undergraduate College of Agriculture (COA) students’ intention to participate in study abroad. This study aimed to add to the body of research that utilizes Ajzen’s Theory of Planned Behavior as a theoretical framework by exploring COA undergraduate students’ intention to participate in study abroad. Cocoa powder contains polyphenolic compounds, which can provide potential health benefits to humans. The human gastroinestinal tract hosts diverse microorganisms which are called the human gut microbiota. These microbes can utilize carbohydrates through fermentation resulting in the production of short chain fatty acids (SCFAs), which cause a reduction of pH in gastroinestinal tract. The cocoa processing can change the composition of the carbohydrates, which can affect the fermentation patterns.

Background: Obesity is a major risk factor for hypertension, however, the physiologic mechanisms linking increased adiposity to elevations in blood pressure are not well described. An increase in resting energy expenditure (REE) is an obligatory consequence of obesity. Previous survey research has demonstrated that REE is an independent predictor of blood pressure, and eliminates the co-linear association of body mass index. This observation has received little attention and there have been no attempts to provide a causal explanation. The broad goal of the research described in this thesis was to better understand the potential for biological toluene production to occur in groundwater at a Superfund Site located in southeast Louisiana. Previous literature reported that bacterial isolates under laboratory test conditions and undefined microbial communities in anaerobic sludge digesters and seasonally stratified lakes can produce toluene biogenically. Most of the research reported on this subject previously, however, has been on systems in Europe and little research has been reported previously on such phenomena in North America.

The Formosan subterranean termite; Coptotermes formosanus is nutritionally dependent on the complex and diverse community of bacteria and protozoa in their gut. Although, there have been many studies to decipher the taxonomic and functional diversity of bacterial communities in the guts of termites, their bacteriophages remain unstudied. We sequenced the metavirome of the guts of Formosan subterranean termite workers to study the diversity of bacteriophages and other associated viruses. Results showed that the termites harbor a virome in their gut comprised of varied and previously unknown bacteriophages. Aquaculture production has greatly increased over the past few decades, and will continue to grow as the world fisheries become overfished and demand for seafood increases. With increased production comes more intense cultivation methods and heavy use of formulated feeds that may contain veterinary drug residues. Currently no antibiotics are allowed in the U.S. for crawfish aquaculture; yet, detectable levels of various antibiotics have been found in imported seafood samples.The FDA is responsible for testing aquaculture products entering the United States, but only has the capabilities to test a minimal amount of those imports.
