Advances in body sensing and mobile health technology have created new opportunities for empowering people to take a more active role in managing their health. Measurements of dietary intake are commonly used for the study and treatment of obesity. However, the most widely used tools rely upon self-report and require considerable manual effort, leading to underreporting of consumption, non-compliance, and discontinued use over the long term. We are investigating the use of wrist-worn accelerometers and gyroscopes to automatically recognize eating gestures. The 2014 Focus on Creative Inquiry Poster Forum displays a selection of the projects accomplished by Clemson University students in their Creative Inquiry teams. What is Creative Inquiry? It is small-group learning for all students, in all disciplines. It is the imaginative combination of engaged learning and undergraduate research – and it is unique to Clemson University. In Creative inquiry, small teams of undergraduate students work with faculty mentors to take on problems that spring from their own curiosity, a professor’s challenge, or the pressing needs of the world around them. Fabrication And Analysis Of Soy Flour Filled Polyethylene Fibers, Ozgun Ozdemir, Sam Lukubira, Amod Ogale, Paul Dawson

Fibers composed of soy flour (soy) and linear low density polyethylene (PE) were produced by melt spinning method. The mixing time of soy flour and PE was adjusted to get better dispersion of soy flour inside the matrix. The inclusion of soy decreased tensile modulus by 35% and tensile strength by 30% of the fibers compared with 950 MPa and 43 MPa, respectively, for PE fibers. Strain to failure for soy-PE fibers was 292% where PE fibers have strain to failure at 513%. Tensile properties of soy-PE fibers are comparable to those of pure PE. Even washing did not deteriorated …

Production of vanillin from natural green vanilla pods was carried out by enzyme-assisted extraction combined with pre-freezing and thawing. In the first step the green vanilla pods were pre-frozen and then thawed to destroy cellular compartmentation. In the second step pectinase from Aspergillus niger was used to hydrolyze the pectin between the glucovanillin substrate and β-glucosidase. Four main variables, including enzyme amount, reaction temperature, time and pH, which were of significance for the vanillin content were studied and a central composite design (CCD) based on the results of a single-factor tests was used. Focus on Creative Inquiry
This capstone project focused on Nutra's manufacturing scheduling system. Originally there were numerous scheduling tools in place for the softgel, hardshell and tablet manufacturing processes. After identifying users, conducting surveys, and generating metrics, we came to understand that the new system needed to be automated, easy to use, standardized, and capable of meeting due dates. The team then developed an initial scheduling solution. Following this, multiple usability tests were conducted to help refine and improve the solution. The final solution reduced the amount of time and manual input it took to create a manufacturing schedule and has the potential to …

Investigating If Dr. Pepper Ten Is A \10\" For Men", M. Macnaughton, B. Butterworth, A. Corverse, K. Davis, E. Ewald, H. Green, A. Grigg, E. Jones, L. Keating, M. Maurer, R. Martinez-Dawson, P. Dawson
Focus on Creative Inquiry
The objective was to investigate taste preference for Dr Pepper TEN and Diet Dr Pepper and consumers' willingness to purchase Dr Pepper TEN after viewing the product's commercial. A taste preference test was conducted using 168 students at Clemson University during fall 2013. An online survey developed using Qualtrics consisted of items for demographics, taste preference and consumer behavior after viewing a Dr Pepper TEN commercial. One and two sample proportion Z tests were performed and chi-squared tests were used for testing associations. The majority (overall, males and females) preferred the taste of Dr Pepper TEN (p-value<0.001). There was no evidence of a difference in the proportion of males and females who preferred the taste of Dr Pepper TEN (p-value=0.2546). There was no evidence of an association between gender and likelihood of purchasing Dr Pepper TEN after seeing the commercial (p-value<0.25). The results give doubt to the \just for women\" claim of the advertisements."

Selective pressures generated by locomotor challenges act at the level of the individual. However, phenotypic variation among individuals that might convey a selective advantage may occur across any of multiple levels of
biological organization. In this study, we test for differences in external morphology, muscle mechanical advantage, muscle fiber type and protein expression among individuals of the waterfall climbing Hawaiian fish Sicyopterus stimpsoni collected from sequential pools increasing in elevation within a single freshwater stream. This research focuses on the health impacts of participation in the National School Lunch Program, a program providing free and reduced-cost lunches for income-eligible students and minimally subsidizing lunches for income-ineligible students. In the past decade, increasing incidence of childhood obesity, particularly among low-income individuals has drawn scrutiny over the NSLP's role in the health of student-aged children.
The first chapter introduces the reader to the NSLP, providing a history of the program since its inception at the turn of the 20th century and addressing current issues in the economic literature regarding health impacts of program participation. The second chapter …

Fusarium wilt of watermelon, caused by Fusarium oxysporum f. sp. niveum , was first described in 1894 in South Carolina and Georgia and has become a limiting factor in watermelon production worldwide. In recent years, restriction on use of the soil fumigant methyl bromide and the recent development of more virulent races of Fusarium oxysporum f. sp. niveum has created a critical need for alternative management techniques. Liriodendron tulipifera L., commonly known as yellow-poplar, is a fast-growing hardwood tree species with great ecological and economic value and is native to eastern North America. Liriodendron occupies an important phylogenetic position as a basal angiosperm and has been used in studies of the evolution of flowering plants. Genomic resources, such as Expressed Sequence Taq (EST) databases and Bacterial Artificial Chromosome (BAC) libraries, have been developed for this species. The 4-Health Project promotes healthy lifestyles for rural families with an overall goal of reducing or preventing childhood obesity. 4-Health is an integrated research and educational outreach program delivered by agents located in Montana State University Extension offices throughout the state. The collaborative project was developed to provide healthy living programs focusing on the areas of parenting and family communication, body image, food and nutrition, and physical activity to rural parents of 8-12 year old children participating in Montana’s 4-H Youth Development programs. We introduce a new algorithm of bite detection during an eating activity based on template matching. The algorithm uses a template to model the motion of the wrist over a 6-second window centered on the time when a person takes a bite. We also determine if different types of bites (for example food vs. drink, or using different types of utensils) have different wrist motion templates. This method is implemented on 22,383 bites and 5 different types of templates are built. We then describe a method to recognize different types of bites using the set of templates. Extensive research has been done on the effect of diet on rumen methane (CH4) production, and on developing equations to accurately predict CH4 in cattle. However, the majority of this research has been gathered from feedlot cattle or cattle fed a total mixed ration (TMR). Extensive studies have demonstrated the potent ability of many nutraceuticals to alleviate the symptoms of aging and stress. We found that cranberry extract (CBE) supplementation at an optimum concentration could prolong Caenorhabditis elegans (C. elegans) lifespan in a manner of daf-16 and osr-1 dependence. Considering that aging is a progressive degeneration of physiological functions, it is intriguing to know whether CBE consumption may delay the age-related degenerative changes in animals. Thus, we examined the effect of CBE consumption on healthspan in C. elegans populations with different ages and age-related disorders.
