The proteins found in milk are largely important in the functionality of many dairy products and dairy processes. The casein micelle system in milk is a complex and highly studied system. The micelle is thought to be a sponge like structure containing four caseins, αs1, αs2, β, and κ casein, and bound together with colloidal calcium phosphate. When a chelating agent such as a citrate, phosphate, or polyphosphate are added to milk systems, the CCP is bound to the chelator and removed from the micelle. Previous studies on the use of nonfat dry milk, whey protein concentrate 34 and lactose powders in processed cheeses or cheese analogs found that increasing the percentage of lactose was associated with an increase in browning and crystallization. There has been little work done of the effects of lactose in processed cheese functionality. Therefore, the objective of this research is to build on and understand the effects of lactose from by three commercially produced dairy powders (nonfat dry milk (NFDM), whey protein concentrate 34 (WPC), lactose) and two different emulsifying salts on properties of processed cheese. This internship report includes validation documents required for meeting the quality criteria for secondary-level programs of instruction in agriculture. The documents are concurrently used for the Agriculture Incentive Grant review process at Norco High School, which is conducted by representatives of the California Department of Education and the local Agriculture Advisory Committee. The internship included the implementation and designing of the curriculum for an Agriculture and Soil Chemistry course. The internship also included the writing of a specialized grant and purchase of over $20,000 in data collection technology.

Students pursuing degrees in STEM fields, including agriculture and related sciences, need to develop discipline-specific information skills in order to be successful in their educational pursuits and to meet tomorrow’s challenges in their future work as agriculture professionals. Oftentimes, information literacy programs are situated in general education or liberal arts courses, leaving the discipline-specific courses to incorporate information literacy only when and where possible. Listeria monocytogenes continues to challenge the dairy industry in causing post-process contamination of cheeses. To reduce risk of contamination, it is crucial to understand the growth and survival of pathogenic bacteria in cheese products and to develop post-process mitigation strategies. This study evaluated the fate of pathogens in reduced and regular sodium Mozzarella cheese, and the potential of Supercritical Fluid Extraction with CO2 (SFE) to reduce Listeria innocua on Mozzarella and Queso Fresco. Few studies have investigated the relationship between diet quality and health-related quality of life (HRQOL), especially in the older adult population that is most at risk for poor diet and health. Self-perceived HRQOL is a more powerful predictor of morbidity and mortality than objective measures of health. The aim of this thesis was to examine the association between nutrition-related factors (especially diet quality) and HRQOL in community-dwelling older adults aged 60 and above. Common Arguments For The Moral Acceptability Of Eating Meat: A Discussion For Students, Dan Lowe

This paper is a teaching tool which instructors of animal ethics may assign to students to help them evaluate those students’ most frequent arguments for the moral acceptability of eating meat. Specifically, the paper examines (and finds inadequate) the arguments that eating meat is morally acceptable because it is (1) historically widespread, (2) necessary, and (3) natural. The aim of discussing these arguments is to pave the way for a more fruitful and focused discussion of the canonical texts of the animal ethics literature.

Novel fecal microbiome identification of mature female leopard tortoises (Stigmochelys pardalis, n = 16) fed exclusively one of three, nutritionally complete, pelleted diets was evaluated in a blind, complete randomized design study. Two diets included insoluble fiber (powdered cellulose) consisting of either 2.0 mm or 0.2 mm length. There were no differences in diversity indices (J’ and H’) of total OTUs by diet, with and without unidentified sequences. Analysis of phyla similarity by diet revealed three distinct groups with > 92% similarity. Analysis of genera similarity revealed two distinct groups with > 80% similarity. At both phyla and genera levels, fecal microbiomes …

Baseline data for Cal Poly produce items purchased in 2014, were generated using food miles and Life Cycle Assessment (LCA) of transportation related impacts measured in units of global warming potential. A regional simulation of a local food system compiled using Harvest Santa Barbara serves as a model of a regional wholesale produce distributor. Research objectives aim to identify produce items that would significantly decrease food miles and transportation related impacts when sourced through a regional food distributor. The human immunodeficiency virus (HIV) has infected millions of people since the start of the epidemic in the early 1980s. HIV is the etiologic agent of the acquired immunodeficiency syndrome (AIDS), which has taken millions of lives. It is extremely difficult for particular populations to receive medication to treat HIV infection and prevent the progression of HIV to AIDS. The epidemic of adolescent obesity has become one of the greatest public health concerns in the United States. Approximately 20.5% of adolescents of both sexes aged 12-19 years are considered obese. Higher rates of obesity are evident in ethnic minority and lower income status children with the highest prevalence among Hispanic/Latino and Black populations. The causes for obesity are multifactorial in nature and highlight disparities nationwide. These factors include socioeconomic status, education, environment, availability and access to fresh fruits and vegetables, and behavior patterns. The article defends ethical vegetarianism, which, for present purposes, is stipulatively taken to be the view that it is morally wrong to eat animals when equally nutritious plant-based foods are available. Several examples are introduced (i) to show that we all agree that animals deserve some direct moral consideration and (ii) to help identify and clarify several commonsense moral principles—principles we all accept. This article reviews Charles Danten’s Slaves of Our Affection: the Myth of the Happy Pet, outlining and evaluating Danten’s arguments for the abolition of the pet trade. Estimating nutrient and energy requirements of exotic animals is a necessary component of nutrition management in zoos and other wildlife facilities. In the absence of species-specific data, domestic animal models are often referenced. Herbivorous hindgut fermenters, such as horses, zebra, and rhinoceros, rely on microbial fermentation in the cecum and colon to utilize dietary structural carbohydrates. Fruit split is the most important physiological disorder in pomegranate production, causing devastating crop losses worldwide. Foliar nutrient applications have been used experimentally to mitigate pomegranate fruit split but none have been conducted using the industry standard cultivar, Wonderful, and little is known about the effects of foliar nutrient applications on pomegranate. Fruit And Vegetable Consumption Of College Students: What Is The Role Of Food Culture?, Christiane Schroeter, Lisa A. House

Our primary objective is to assess the role of culture by linking college students’ current consumption of fruits and vegetables with their produce consumption levels while with family. Using a Tobit model, we analyzed data from an online survey with college students. Family consumption of fruits was highly predictive of the individual’s consumption of fruits. For each unit increase in the reported consumption of fruits (vegetables) with the family, the respondents’ fruit (vegetable) consumption at school increased by 0.65 (0.30) units compared to the base consumption level of 1.95 (1.82) times of fruit intake per day.
