Commercial carrot processors produce up to 175,000 tons of carrot waste annually. Carrot Mash (CM) is the term referring to the waste by-product of peeled baby carrot processing. Transportation of carrot processing waste is expensive due to its high- water content (approx. 83-95%). High in bioactive compounds (carotenoids) and dietary fibers, it is expected that its conversion into a value-added by-product is of interest to the carrot processing industry. Background: Maternal malnutrition in developing countries is associated with adverse pregnancy and birth outcomes. Malnourished mothers are often faced with additional risk factors as a circumstance of poverty. Supplementary nutrition can improve the outcomes of both mother and infant. Identifying maternal nutritional and socioeconomic risk factors is critical for developing effective interventions.
Objective: A secondary analysis to evaluate maternal risk factors associated with poor birth outcomes including pregnancy loss, low birth weight, stunting, and preterm delivery among moderately malnourished pregnant women in Sierra Leone. The economics of algae biofuels and bioproducts would be improved by increased biomass productivity. Two studies on this potential are described in this thesis – one on a locally isolated filamentous yellow-green alga and the other on a planktonic strain genetically improved via selective enrichment.
Polycultures have been viewed as productive, stable, and, in some cases, harvestable by natural bioflocculation. Local native strains might have higher productivity than culture collection strains because they are already adapted to local outdoor conditions. Hard cider is an alcoholic drink made from fermented crushed fruit, typically apples. The popularity of this fermented alcoholic beverage has been on the rise within the last decade. Historically, hard cider has been deemed safe due to the presence of ethanol and the low pH. Although there is lack of scientific evidence to prove that hard cider will and can be safe from foodborne pathogens. Objective: To explore Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) participants’ perspectives about why formula-fed infants are less likely to be recertified at 1 year compared with breastfed infants.
Design: Four focus groups of WIC mothers, stratified by language spoken (English or Spanish) and feeding mode (breastfeeding [BF] or formula-feeding [FF]).
Setting: Two WIC sites within Los Angeles County, CA.

Typically, most winegrape cultivars (Vitis vinifera L.) are commercially planted with the expectation being economically productive for 25 years. Generally, the longer the vines are kept in production, the larger the profit margin potential. Despite the economic advantage of prolonged production at a specific vineyard site, damage and decline by the root aphid, phylloxera (Daktulospaira vitifoliae Fitch), nematodes, wood root diseases, and/or poor management practices are all factors that contribute to decreasing vineyard lifespans. For my senior project, I perform data analysis using statistical methods to determine body metrics that correlate with blood glucose levels. Working with Dr. Tina Smilkstein, I take repeat measurements from 6 different volunteers to establish trends in bodily metric data. The data taken includes weight, body fat, pulse rate, VO2, blood glucose, blood pressure, hours slept, and quality of sleep. Using these values, I use the program MiniTab to view results.
A few examples of correlations with blood glucose found in this project are:

Background: College students experience food insecurity at a rate 3.5 times higher than the U.S. general population, affecting 43% of students. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.
Purpose: The purpose of this research project was to examine the impact of CalFresh enrollment on food security status. This study also evaluated the impact of two different nutrition education interventions (MyPlate and MyPlate+NOVA) on participants’ dietary habits and nutrition knowledge.

Does Forest Stewardship Council (FSC) certification of “responsible” commercial forestry change nutrition, health and wealth for indigenous peoples, like the Aka of the Congo Basin? Using hand-collected data from the boundary of a certified and an uncertified forest in the Republic of Congo five years after certification, I compare nutrition, health, and wealth using questions that are locally salient and survey timing designed to reach seminomadic hunter-gatherers. Though I only observe outcomes after certification, using a spatial regression discontinuity design I find suggestive evidence that activities to satisfy forest certification may cause increased food insecurity and illness frequency for Aka …

Objective: This study’s purpose was to examine dietary quality, macronutrient intake, and micronutrient adequacy among long term weight loss maintainers (WLM) in a commercial weight management program.
Methods: Participants were 1,207 WLM in WW (formerly Weight Watchers) who had maintained a 9.1 kg or greater weight loss (29.7 kg on average) for 3.4 years, and had an average BMI of 28.3 kg/m2. A control group of weight stable adults with obesity (Controls; N=102) had a BMI of 41.1 kg/m2 and 2.3 kg or less weight change over the previous five years.

The poultry industry is seeking an advanced chilling system that can improve chilling efficiency, microbial safety, and water consumption without compromising meat quality. The objective of this study was to evaluate the effects of sub-zero saline chilling methods on chilling efficiency, breast fillet tenderness and microbial reduction of broiler carcasses. Following evisceration and rinsing, broiler carcasses were randomly assigned to one of three chilling solutions: 1) 0% salt or ice water control (0% NaCl/0.5oC), 2) 3% salt (3% NaCl/-1.8oC), and 3) 4% salt (4% NaCl/-2.41oC) solutions. Microbial populations that live within the human gut have been shown to impact human health status. Limited microbial diversity within the gut has been associated with increased risk for several diseases including obesity, low-grade inflammation, and intestinal inflammation3. Exogenous factors that influence bacterial diversity in the gut include diet, exercise, stress level, and smoking1. The consumption of polyphenols in the diet, found in various fruits and vegetables, has been linked to beneficial microbial gut and metabolic health. Objective: Children breast-fed during infancy consume more fruits and vegetables than formula-fed children. This pattern is likely due, in part, to infant learning from flavours of the mother’s diet transmitted through breast milk, but more research is needed to understand associations between early flavour exposures and later dietary patterns. We examined whether breast-feeding and maternal fruit and vegetable consumption during nursing were synergistically associated with higher child fruit and vegetable consumption.

Diversity of secondary lichen metabolites and their relationship to substrate and environmental parameters were studied in saxicolous lichens in the Middle and South Urals of Russia. Atranorin, usnic acid, gyrophoric acid, zeorin, norstictic acid, antraquinones and stictic acid were found in 73, 42, 41, 37, 36, 35 and 32 species, respectively, of 543 taxa collected. One hundred and ninety six species (i.e., 36% of total species documented) contained no secondary metabolites. Spectra of secondary metabolites of crustose lichens varied on different rock types, while in fruticose and foliose groups only those species without lichen acids were dependent on the substrate …

This project set out to question whether fresh produce required more specific labeling of pesticides and fertilizer inputs on fresh produce. Like many questions regarding health, environmental science, agriculture, and politics, there is not one simple answer. After listening to professionals and interviewing customers outside grocery stores, it's clear that the majority of consumers are not pursuing additional information, but that there is a small group of customers who would appreciate it. The prevalence of non-alcoholic fatty liver disease (NAFLD) in children has increased over the past decades, creating a need for animal models that recapitulate the features of the pediatric disease. Iberian pigs have a leptin-resistant phenotype characterized by hyperleptinemia, hyperphagia, and extreme adipogenesis. We hypothesized that neonatal Iberian pigs fed a high fat high-fructose (HFF) diet will develop a pattern of liver injury resembling pediatric NAFLD.
