Effect Of Processing On The Composition And Microstructure Of Buttermilk And Its Milk Fat Globule Membranes, Pierre Morin, Rafael Jiménez-Flores, Yves Pouliot

The effect of cream pasteurization on the composition and microstructure of buttermilk after pasteurization, evaporation and spray-drying was studied. The composition of milk fat globule membrane (MFGM) isolated from buttermilk samples was also characterized. Pasteurization of cream resulted in higher lipid recovery in the buttermilk. Spray-drying of buttermilk had a significant effect on phospholipid content and composition. After spray-drying, the phospholipid content decreased by 38.2% and 40.6%, respectively in buttermilk from raw or pasteurized cream when compared with initial buttermilks. Pasteurization of cream resulted in the highest increase in whey protein recovery in MFGM isolates compared with all other processing …

The invention of agriculture that occurred around 10,000 years ago heralded a shift from nomadic hunting and gathering to more managed forms of food, feed and fibre production. The domestication of crops initially involved the saving of seed from one season for planting in subsequent years. Later, farmers purposefully selected crop varieties and so in practice began matching and, by repeated selection over many years, adapting crop genetics to the environment in which the crop was grown. From its inception, enhancing G x E (i.e., gene by environment) interactions was an intrinsic, if not defining, feature of agriculture.

Empirical Evaluation Of Physical Activity Recommendations For Weight Control In Women, Suzanne Phelan, Marta Roberts, Wei Lang, Rena R. Wing

Purpose:Recent recommendations advise 30-60 min of physical activity per day to prevent weight gain and 60-90 min to prevent weight regain. No studies have used objective measures of physical activity to verify these public health recommendations. The purpose of this study was to use objective measures to quantify the amount and intensity of physical activity in a weight-loss-maintainer group and an always-normal-weight group, and, thus, empirically evaluate the recommendations for prevention of weight gain versus regain.
Methods: The weight-loss-maintainer group (N= 135) lost ≥ 30.6 kg, maintained ≥ 10% weight loss for 14.2 yr, and had a BMI of …

Livestock keeping is critical for many of the poor in the developing world, often contributing to multiple livelihood objectives and offering pathways out of poverty. Livestock keeping also affects an indispensable asset of the poor, their human capital, through its impact on their own nutrition and health. This paper outlines the linkages between livestock keeping and the physical well-being of the poor, and examines a number of commonly held beliefs that misrepresent livestock development issues related to these linkages. These beliefs limit the scope of intervention programs to promote livestock and limit their potential contribution to poverty reduction. Recognition of …

Fruit And Vegetable Consumption Among College Students In Arkansas And Florida: Food And Culture Vs. Health Knowledge, Christiane Schroeter, Lisa House, Argelia Lorence

This study determines the impact of demographics, dietary and health knowledge, and food culture on fruit and vegetable consumption of college students in Arkansas and Florida. Our empirical analysis demonstrates that food culture significantly impacts consumption of fruits and vegetables; a finding which emphasizes the need to target cultural aspects when developing effective and efficient management of agribusiness firms. Understanding the antecedents to consumption for products like fruits and vegetables is important to agribusiness industry, policy makers and organizations interested in evaluating the effectiveness of health education in promoting college students’ health and decreasing the trends to obesity.

Objective:
To evaluate the effects of weight loss on the risk of having metabolic syndrome after 1 year of treatment with lifestyle modification alone, pharmacotherapy alone (sibutramine) or the combination of the two.
Design:
Randomized, controlled, 1-year clinical trial.
Patients:
One hundred and eighty women and 44 men, 18–65 years of age, with a body mass index of 30–45 kg/m2, free of uncontrolled hypertension or type 1 or 2 diabetes.
Intervention:
Fifteen milligrams of sibutramine per day alone, lifestyle modification counseling alone, sibutramine plus lifestyle modification counseling or sibutramine plus brief lifestyle modification counseling.

Our purpose was to examine the effects of age and gender on physical performance. We assessed a one-hour swimming performance and participation of 4,271 presumably healthy men and women, aged 19–91 years, from the 2001–2003 United States Masters Swimming long-distance (1 h) national competition. The decline in performance with increasing age was found to be quadratic rather than linear. Objective: The purpose of this study was to evaluate long-term weight loss and eating and exercise behaviors of successful weight losers who lost weight using a low-carbohydrate diet.
Research Methods and Procedures: This study examined 3-year changes in weight, diet, and physical activity in 891 subjects (96 low-carbohydrate dieters and 795 others) who enrolled in the National Weight Control Registry between 1998 and 2001 and reported ≥ 30-lb weight loss and ≥ 1 year weight loss maintenance.

Background:Socioeconomic and racial/ethnic factors strongly influence cardiovascular disease outcomes and risk factors. C-reactive protein (CRP), a non-specific marker of inflammation, is associated with cardiovascular risk, and knowledge about its distribution in the population may help direct preventive efforts. A systematic review was undertaken to critically assess CRP levels according to socioeconomic and racial/ethnic factors.
Methods:Medline was searched through December 2006 for population-based studies examining CRP levels among adults with respect to indicators of socioeconomic position (SEP) and/or race/ethnicity. Bibliographies from located studies were scanned and 26 experts in the field were contacted for unpublished work.

In 2005, researchers at Pennsylvania State University surveyed 1,521 Pennsylvanians in 65 counties to determine their knowledge of and perceptions about agriculture in the state. The study looked to: assess the level of agricultural knowledge of Pennsylvanians; ascertain how personal characteristics and frequency of rural visitation related to agricultural knowledge and to the perceptions of citizens about various agricultural issues; explore the relationship of agricultural knowledge to public perceptions of selected agricultural issues; and suggest how information on Pennsylvanians’ knowledge, experiences, and perceptions of agriculture are relevant to policy makers. This study uses a logistic regression to analyze the 2004-2005 Arkansas Center for Health Improvement body mass index data from four school districts in Arkansas. We conclude that the probability of elementary school children being overweight or at risk of being overweight depends on economic factors, demographics, and food availability.

Federal, state and local governments have funded various efforts to support value-added agriculture, often implicitly assuming that the enterprises would be profitable and that the transition from commodity producer to producer-processor-marketer-distributor would be relatively easy. Some analysts (e.g., Streeter and Bills; 2003a, 2003b) have questioned both of these assumptions, noting that available aggregate data do not allow assessment of the financial performance of value-added enterprises. Our study collected detailed financial information from 27 value-added dairy enterprises with cows, goats or sheep in three states. These businesses processed and marketed cheese, fluid milk products and yogurt; 17 had begun processing during …

This study estimates the relationship between economic factors and consumer health. The results show that increasing prices of food away from home are associated with decreasing the probability of risk factors and health conditions, which emphasizes the need to differ between multiple food types in health demand analysis.

The capstone course teaches students to analyze global environmental issues, resources, and human activities with a systems approach based on scientific, economic, political, social and ethical perspectives. Such an intrinsically multifaceted subject demands interdisciplinary treatment. To deliver the interdisciplinary treatment, the course uses diverse faculty teams comprised of faculty from fields in the natural and social sciences, engineering, and business. This work describes the interdisciplinary team teaching strategies adopted for the course and how they evolved with subsequent offerings of the course.
