Animal Science
These trials examined whether the demonstrated effects of embryonic and dietary carotenoid exposure on the inflammatory immune response in fast growing chickens also occur in slow growing chickens. The systemic and local inflammatory responses of chicks were examined in two experiments with two in ovo lutein levels (C+, carotenoid replete; or C−, carotenoid-deplete), two dietary lutein levels (0 or 40 mg lutein/kg diet), and two inflammatory challenges [no exposure or lipopolysaccharide (LPS)-vaccinated]. At 24 h after LPS vaccination, spleen weight was not affected by diet or in ovo lutein, but liver weight increased from C+ eggs (p < 0.01), and in LPS-vaccinated chicks fed 0 mg lutein (p < 0.05), but not in chicks fed 40 mg lutein. Plasma carotenoids and liver carotenoids were reduced post-LPS (p < 0.05). Splenic IL-6 mRNA abundance was the greatest post-LPS in C− chicks fed 40 mg lutein vs. C+ chicks fed 40 mg lutein (p < 0.05). Hepatic IL-6, iNOS and TGFβ and splenic iNOS and TGFβ were not …

Dietary Protein Intake, Body Composition And Self-Reported Physical Functioning In U.S. Adults, Kerri Beth Parker
Master's Theses
Sarcopenia is a growing health problem in this country as more Americans are living well into old age. It has been thought that a higher protein intake may be related to greater lean muscle mass as well as greater muscular strength and physical functioning. The purpose of this research was to examine protein intake and its relationship to lean body mass and physical functioning in a nationally representative sample of U.S. adults.
This research used cross-sectional data from the NHANES 2003-2004 to examine the relationship between protein intake, as an average from two 24h recalls, and dual X-ray absorptiometry (DXA) …

The purpose of this project was to review the literature associated with the social and psychological adjustments freshmen and transfer intercollegiate athletes face as they transition into college and create a mandatory course to assist them through their transition into California Polytechnic State University. This project led to the creation of an academic course that will be offered at California Polytechnic State University in the near future. This course could serve as an impetus for coaches, faculty, and administrators at other universities to develop similar courses, or reevaluate established course offerings, and to develop follow-up course training for intercollegiate athletes …
An International Challenge, Rosalia Rochon
An International Challenge, Rosalia Rochon
Fresh Voices: Composition at Cal Poly
Rosalia Rochon profiles Cal Poly faculty member Dr. Peggy Papathakis and her sincere concern for public health. What aspects of Papathakis’s personality does Rochon emphasize in this profile, and how does Rochon use specific events to support her claims about Papathakis? A major focus in this essay is Papathakis’s work with HIV-infected mothers and infants. How would the initial focus of the essay shift if Papathakis’s HIV work had a more prominent position in the introduction? Consider how Rochon uses her personal feelings as support for Papathakis’s influential nature and desire to create change in the world beyond her academic …

Not A One-Man Show - But Definitely One Of A Kind, Jaclyn Goldsmith
Fresh Voices: Composition at Cal Poly
In her essay “Not a One-Man Show—But Definitely One of a Kind,” Jaclyn Goldsmith profiles a familiar smiling face around Cal Poly’s campus, improvisational comedy group Smile and Nod’s Jose Molina. How does the writer establish the tone of the essay? For instance, is the title interesting? Informative? How does Goldsmith’s approach to the introduction compare with other profile introductions in Fresh Voices? For instance, she writes, “Silence. On center stage some twenty people configured in a circle, stationed high above the audience. Then—clap, clap, clap. . . .” How does the remainder of the introduction continue to establish tone …

Mandating The Hpv Vaccine, Sarah Bishop
Mandating The Hpv Vaccine, Sarah Bishop
Fresh Voices: Composition at Cal Poly
In Sarah Bishop’s argumentative essay, “Mandating the HPV Vaccine,” she offers the newest of debates in the long-standing discussion of teens and sex— the HPV vaccine. She chooses to approach her audience with a direct argument: “The HPV vaccine should be mandated [for] young teens everywhere.” Her use of ethos, pathos, and logos illustrates and develops her claims about the vaccine. Bishop draws support for her argument from current journal articles and web sites, and then furthers an appeal to ethos by identifying herself as a candidate for the vaccine. Describing the virus as “unknowingly common” among men and women, …

Pulling Back The Curtains, Jill K. Estes
Fresh Voices: Composition at Cal Poly
In Jill Estes’ argumentative essay “Pulling Back the Curtains,” she describes a remarkable advertisement that combines all the attractive features of former and current tobacco ads but ends with a twist. Estes believes that it is important to remind young audiences that smoking has long-term effects that belie its mystique, and for her, this ad is an important part of that fight. Notice how she weaves analysis with description: “In an age where the glossy pages of magazines are plastered with cartoon depictions of Joe Camel grinning with a cigarette perched conspicuously between his lips . . . one can …

Dr. Chocolate, Madilyn Ray
Fresh Voices: Composition at Cal Poly
Madilyn Ray’s essay, “Dr. Chocolate,” profiles Tom Neuhaus, a Cal Poly food science professor who also regards himself as a “chocolatier.” However, the essay can teach you about a lot more than just Neuhaus’s professional interests. For instance, Ray does an impressive job weaving information about complex issues like Fair Trade and chocolate production into her depiction of Neuhaus’s attempts to “better our world” through chocolate. Moreover, Ray also includes her experiences sampling some of the chocolate Neuhaus makes and sells. As you read, look for the moments when Ray inserts her thoughts and ideas without covering up Neuhaus’s voice. …

The Most Powerful Weapon, Emily Goldin
Fresh Voices: Composition at Cal Poly
Editor’s Note In “The Most Powerful Weapon,” Emily Goldin examines the difficulty assessing the progress she made as a writer. However, she finds that when the effectiveness of her essay’s message is given attention, nothing is more rewarding than hearing how her own voice is powerful and passionate. While reading, notice how Goldin uses a unique approach by quoting from a work written in high school. Does the quotation from her past work provide a more thorough experience for the reader? Goldin’s concluding paragraph addresses what writing “will always produce”; note how her final message moves the essay’s purpose forward …

Meiotic Insurance: Designing A System To Study Crossover Control In Yeast, Kate V. Karfilis
Meiotic Insurance: Designing A System To Study Crossover Control In Yeast, Kate V. Karfilis
Master's Theses
Meiosis is a specialized form of cell division in which haploid gametes are produced from diploid progenitors. This reduction in ploidy results from proper meiotic chromosome segregation and is ensured by crossover recombination events. Given their importance, it is no surprise that crossover formation is regulated in most eukaryotes. Crossover assurance is a regulatory mechanism that helps to ensure that each pair of chromosomes gets at least one crossover during meiosis.
We seek to better understand how crossover assurance works. To do so, we have developed a system in which crossover formation between a pair of chromosomes is restricted to …

A Comparison Of Analytical Methods For Quantifying Denatured Whey Proteins And Their Correlation To Solubility, Michelle D. Allen
A Comparison Of Analytical Methods For Quantifying Denatured Whey Proteins And Their Correlation To Solubility, Michelle D. Allen
Master's Theses
Protein structure affects the bioactivity and functionality of whey protein ingredients in food systems. Bioactivity of whey proteins and their derivatives are highly dependent upon primary, secondary and tertiary structure. The degree of denaturation of whey proteins is an important factor for determining how whey protein ingredients will perform in a food system. Several analytical methods have been developed to quantify protein denaturation of whey proteins. The goal of this project was to use a variety of analytical methods to quantify whey protein denaturation and to evaluate the correlation of denaturation to the functionality of whey protein powders.
The objective …

Empirical Study Of Carbon Dioxide Released To The Atmosphere During Commercial Red Grape Fermentation, Steven D. Colome, David M. Goldfarb, Marci Norkin, Geraldine S. P. Ritchie
Food Science and Nutrition
Carbon dioxide (CO2) is a pollutant (greenhouse gas) that is emitted during winemaking but not currently regulated by the Environmental Protection Agency. While winery CO2 emissions have been modeled, they have never been measured continuously or confirmed during a commercial fermentation. As international interest increases in greenhouse gases, it is important to know the amount of CO2 release and the determining factors; yeast strain, temperature, and dissolved CO2 are potentially important parameters. The study was designed to quantify emissions and test a theoretical model for atmospheric release of CO2 during alcoholic fermentation in a commercial winery. Gas release was channeled …

Quantifying Dissolved Carbon Dioxide Concentrations In Fermenting Red Musts, David M. Goldfarb, Steven D. Colome, Marci Norkin, Geraldine S. P. Ritchie
Food Science and Nutrition
The concentration of dissolved carbon dioxide (DCOn2) is recognized as being high during alcoholic fermentation, but there is little data to indicate the actual concentrations and how they vary with extent of the fermentation or winemaking operations. The presence of the inert gas is important in protecting the juice or must from oxidation. In addition, carbon dioxide (COn2) is a recognized greenhouse gas, and the contribution of fermenting juice and musts to atmospheric COn2 cannot be put in perspective or modeled unless one has a better idea of DCOn2 and whether supersaturation is occurring …
