The Metabolizable Energy Value And Physiologic Effects Of Hi-Maize Resistant Starch In Male Rats, Tanya A. Garcia

The purpose of this study was to calculate the metabolizable energy value of Hi-Maize® RS (60% amylose), to observe if consumption of RS alters adiposity, and to examine the effects of RS on fermentation and fecal excretion. Eighteen four-week old male Sprague-Dawley rats consumed either a 20% amylose Hi-Maize® RS diet (n=6) or a control diet (baseline group, n=6; control group, n=6). The baseline group was sacrificed at the beginning of the study; the RS and control groups were transferred to metabolic cages and fed the respective diets for the next six weeks. Metabolic Aspects Of Oryzanol In Rats, Michelle Smith Gillespie

Using a rat model, this study compared the bioavailability of three forms of oryzanol, a compound extracted from rice bran oil that has been associated with improved cholesterol levels. Various methods of extracting lipids from serum and liver were explored to determine oryzanol absorption. Cholesterol levels were obtained via enzymatic colorimetric assay and GCMS. Sprague Dawley retired female breeder rats were sustained for 11 weeks on a cholesterol-free diet to which either no oryzanol was added (n = 19) or 2.8 g/kg of oryzanol was added as: 7% oryzanol rice bran oil (RO, n = 8), crystalline oryzanol (CO, n …

In this investigation the seric retinol levels were determined in order to relate them with consumed diets by preschool- and school-aged children and the prevalence of anemia in the communities of Cuambo and La Rinconada, Imbabura province, in order to later compare them with reference values. Blood samples were taken from 74 children from the two communities, 30 in La Rinconada and 44 in Cuambo, beneficiaries of the Benson Institute, to determine retinol, ferritin, hemoglobin, and hematocrit. Also, a 24-hour record with frequency of food consumption survey was given to the studied children's parents, making a sample of 56 families. …

The general objective of this investigation was to implement and strengthen family orchards for the diversification of the diet and improvement of the consumption of vegetables and fruits available in the communities of the Rinconada and Cuambo. This study was done with the objective of designing and applying a nutrition education program based on a test of improved practices for pregnant women and women of childbearing age in the rural communities of Ibarra canton: La Riconada and Cuambo. For this, information was collected on knowledge, attitudes, and practices (KAP) regarding the eating habits of pregnant women. These results were used to identify content and recommendations to reinforce and/or instruct about eating during pregnancy. This article presents a review of the service-learning literature as a foundation for a discussion on integrating service-learning into dietetics and nutrition education. The purposes of this review are to (1) define service-learning, (2) discuss how service-learning can enhance dietetics and nutrition education programs, (3) explain principles and best practices fur integrating service-learning into dietetics and nutrition curricula, and ( 4) outline practical tips for orienting students for this experience and establishing sites for service-learning activities. The information shared has pedagogical implications and is transferable to any dietetics and nutrition education program.

This pilot project, conducted under the auspices of the Forced Migration and Refugees Studies Program (FMRS) at the American University in Cairo, arose as part of a continued commitment to outreach projects of direct benefit to the refugee community. Maintaining healthy behaviors and accessing adequate health care are particular challenges for refugees living in large urban areas such as Cairo. Young refugees are at risk for unplanned pregnancy, sexually transmitted diseases, and other health-related problems such as nutritional deficits and stress-related disorders. Broiler production is concentrated in a few southem states where farmers are highly dependent on contract arrangements for income and livelihood. Poultry is the first animal industry to industrialize and its model of contract farming has been emulated by other animal industries. Environmental standards are becoming increasingly stringent and many farmers are faced with crossroad decisions about investments in dead bird and manure disposal facilities. Asymmetrical power relationships shift waste management responsibilities to growers in a number of ways. This paper reviews 115 articles and books published since 1971 that comprise almost all of the scholarly research on black farmers and land loss. It provides a general overview as well as discussion of the benefits of landownership for the black community. Several causes of black land and farm loss are reviewed: forced sales due to "heir property," lack of access to government programs, and continuing racial discrimination by lenders and government agencies. Anorexic Eating: Two Case Studies In Hong Kong, Zenobia C.Y. Chan, Joyce L.C. Ma

The Qualitative Report

Little attention has been paid to the eating experience of anorectic females during the course of their illness. In order to enrich this understanding, two adult anorexics were selected and their emails were collected and analyzed. Analysis of these emails reveals the patients' experiences with and feelings about eating, which can provide an in-depth understanding of their circumstances and family dynamics. The paper ends with a discussion of the results, limitations, and implications of using emails as the data source of a qualitative study, and how they can reveal the informants' inner landscapes.

Classroom demographics in K-12 schools in the U.S. show that students of color represent an increased percentage of those enrolled. and that the number of students whose families are in poverty is on the rise. Yet teaching is a profession long dominated by middle-class individuals of European ancestry. The recruitment of teachers from diverse backgrounds is paramount, but teacher education must also prepare new professionals to meet the needs of students whose backgrounds might be different from their own. Cultural immersion and community-based service learning are two strategies for enhancing multicultural education for preservice teachers.

African-American Women And Welfare: A Qualitative Study Of African-American Women Receiving Public Assistance, Michelle Randolph

Using information obtained from interviews of a sample of fifteen African-American women from two counties in a border state, the overall perceptions of women receiving public assistance and the labels and stigmas (i.e., welfare checks, food stamps, and medical cards) associated with receiving public assistance were examined. Research findings indicate that there is stress associated with receiving public assistance, and the stigmas associated with public assistance influence people in the public domain to brand recipients socially. The findings from the interviews produced results indicating that the perceived differences and mistreatment felt by welfare recipients were, in part, the result of …

Concerned with growing hunger among Massachusetts families eligible for Food Stamps, and the paradoxical decline in the number of program enrollees, Project Bread asked the Center for Social Policy at the John W. Despite a strong economy, the use of private, nonprofit food assistance is increasing. To determine how single parenthood affects the use of both public and private food assistance, a sample of food bank clients and low-income, food-needy non-clients in East Alabama was interviewed. Overall, single-parent food-pantry clients indicated higher levels of food insecurity than other groups, but the non-clients who were not single parents also indicated high levels of need. Although 42 percent of food bank clients were single parents, results showed that married couples with children were more highly represented among the food bank clients than among food-needy individuals …

Southern Rural Family Economic Well-Being In The Context Of Public Assistance, Bonnie Braun, Frances C. Lawrence, Patricia H. Dyk, Maria Vandergriff-Avery

As Congress considers reauthorization of public assistance legislation in 2002, researchers are challenged to provide data about the economic well-being of rural, low-income families. This paper provides findings from three southern states (Kentucky, Louisiana, and Maryland) currently participating in a 15-state, longitudinal study monitoring the economic well-being of rural families in the context of welfare reform of cash and food assistance. Initial findings reveal that even families using assistance to supplement their earned income fall short of self-sufficiency. These families are at-risk of living in economic crisis, or critical hardship, with inadequate earned and unearned income to meet their basic …
