Lead The Way Florida! Raising Nutrition Awareness To Lower Obesity, Bethany M. Brunny
Lead The Way Florida! Raising Nutrition Awareness To Lower Obesity, Bethany M. Brunny
Florida Public Health Review
Rising obesity rates increase the potential for many chronic diseases and lower quality of life. Strong leadership in the practice ofnutrition awareness and knowledge needs to be established to reduce obesity in the state ofFlorida. Most Americans do not eat the recommended daily amounts offruits and vegetables, which partially accounts for increased obesity rates. Interventions that raise nutritional knowledge and awareness may increase fruit and vegetable intake and lower fat intake. Having nutritional knowledge is the first step to living a healthy lifestyle with a healthy weight. Changes in policy like requiring restaurants to report calorie and fat contents offood …

Falk College Research Center
Background: Perfluorinated chemicals (PFCs) have been used widely in consumer products since the 1950s and are currently found at detectable levels in the blood of humans and animals across the globe. In stark contrast to this widespread exposure to PFCs, there is relatively little research on potential adverse health effects of exposure to these chemicals. Objectives: We performed this cross-sectional study to determine if specific blood PFC levels are associated with impaired response inhibition in children. Methods: Blood levels of 11 PFCs were measured in children (N = 83) and 6 PFCs: perfluorooctane sulfonate (PFOS), perfluorohexane sulfate (PFHxS), perfluorooctanoic acid (PFOA), …

BACKGROUND: A number of studies conducted with ethnically diverse, low-income samples have found that parents with indulgent feeding styles had children with a higher weight status. Indulgent parents are those who are responsive to their child's emotional states but have problems setting appropriate boundaries with their child. Because the processes through which styles impact child weight are poorly understood, the aim of this study was to observe differences in the emotional climate created by parents (including affect, tone of voice, and gestures) and behavioral feeding practices among those reporting different feeding styles on the Caregiver's Feeding Styles Questionnaire. A secondary …

Chronic Disease Self-Management Programs: Relevance For Persons With Dementia, Nina M. Silverstein, Alison S. Gottlieb
Gerontology Institute Publications
The context for this study is the work of the Healthy Brain Initiative. The CDC has established a cooperative agreement with the Alzheimer’s Association to develop and implement a multifaceted approach to look at cognitive health as a public health issue. Late in 2010, the Association commissioned a review of the major chronic disease prevention programs from a systems approach to begin to understand the source of findings that Medicare beneficiaries with Alzheimer’s and related disorders are much higher cost than those simply with a single chronic disease and no AD. This led to the conclusion that Chronic Disease Self‐Management …

Relationship Of Vitamin D Levels To Blood Pressure In A Biethnic Cohort, Rosario O. Sakamoto
Relationship Of Vitamin D Levels To Blood Pressure In A Biethnic Cohort, Rosario O. Sakamoto
Loma Linda University Electronic Theses, Dissertations & Projects
Background: Serum hydroxyvitamin D [25(OH)D] has been well-accepted as not an ordinary vitamin but a pro-hormone that has many benefits beyond its well-known effects on bone. Cardiovascular risk factors such as hypertension remain a huge health burden and Blacks have been recognized to have higher prevalence of hypertension compared to non-Hispanic Whites. Despite increasing evidence of the benefits of vitamin D on blood pressure control, there is much more to be learned about the relationship of serum 25(OH)D to blood pressure among different ethnicities.
Purpose: The goal of this study was to determine whether vitamin D serum 25(OH)D levels were …
Predicting Mammography Screening And Breast Self-Examination Among Hispanic And Non-Hispanic White Women In Orange County, California, Sanam Kazemi
Loma Linda University Electronic Theses, Dissertations & Projects
Background and Purpose. Breast cancer is the second leading cause of cancer deaths among Hispanic/Latina women who are one of the fastest growing ethnic groups in the United States. Although Hispanic women have a lower incidence of breast cancer when compared to non-Hispanic White women, they are more likely to develop breast cancer at an advanced stage. In California, Hispanic women have the lowest rate of insurance coverage compared to other ethnic groups.
Method. The study was a cross-sectional observational study among Hispanic/Latino and non-Hispanic White women, ages 30-64 years. I examined intention to obtain a mammogram or breast self-exam …

Background: Community-based participatory research (CBPR) has been recognized as an important approach to develop and execute health interventions among marginalized populations, and a key strategy to translate research into practice to help reduce health disparities. Despite growing interest in the CBPR approach, CBPR initiatives rarely use experimental or other rigorous research designs to evaluate health outcomes. This behavioral study describes the conceptual frameworks, methods, and early findings related to the reach, adoption, implementation, and effectiveness on primary blood pressure outcomes.
Methods: The CBPR, social support, and motivational interviewing frameworks are applied to test treatment effects of a two-phased CBPR walking …

This prospective Irish observational study examined maternal and infant nutritional supplement use. From an initial sample of 539 mothers recruited from the Coombe Women and Infants University Hospital in Dublin (during 2004-2006), 450 eligible mothers werefollowed up at 6 weeks and 6 months postpartum. Only 200 women (44.4%) complied with peri-conceptional folic acid at therecommended time with strong social patterning associated with its uptake. Almost 10% of the sample (n=44) consumed acombined multivitamin and mineral supplement during pregnancy. A vitamin D-containing supplement was provided to only 5 (1.1%)and 15 (3.3%) infants at 6 weeks and 6 months, respectively. A national …

Individualized Healthcare And Health Disparities: An Examination Of Health Disparities Related To Short-Term Response To Food Insecurity In Low-Income, Urban Communities, Valen R. Diaz
Honors Scholar Theses
The U.S. has seen a spike in chronic diseases along with worsening health outcomes. There are many factors at play to create these circumstances, especially regarding the social determinants of health, like socioeconomic status, access to food, and geographic location. Another concern is health disparities, particularly regarding obesity, and the fact that food access and neighborhood food environments contribute to these disparities. This paper gives a broad overview of American food culture and then focuses on the local food environment in urban, low-income communities, regarding both food deserts and food swamps. There is also a discussion about the response of …

For the last two decades, scientists have amassed evidence that bisphenol A (BPA) poses a threat to human health. Although scientists have targeted BPA as a public health concern, plastics industry lobbyists have attempted to thwart the efforts of federal, state, and local authorities to reduce exposure to BPA. This paper reviews the major arguments advanced by the plastics industry and debunks them as “myths” that public health officials must reject. The five topics covered include: the myth of scientific consensus on safety; the myth that only studies complying with “Good Laboratory Practices” guidelines are adequate for making regulatory decisions; …

Bmi Trajectories During The Transition To Older Adulthood: Persistent, Widening, Or Diminishing Disparities By Ethnicity And Education?, Katrina M. Walsemann, Jennifer A. Ailshire
Faculty Publications
Previous research has produced inconsistent results on whether education and ethnic disparities in BMI persist, widen, or diminish over time. We investigate how education and ethnicity, independently and conditionally, influence BMI trajectories during the transition to older adulthood. Employing random coefficient modeling, we analyzed 8 biennial waves of data (1992-2006) from the Health and Retirement Study, a nationally representative longitudinal study of individuals born between 1931 and 1941. After adjusting for health behaviors and health status, education and ethnic disparities in BMI persisted for most groups, but narrowed between high-educated white men and both low-educated Hispanic men and high-educated black …
Exploring Geographic Proximity To Fast-Food Restaurants And Convenience Stores With Dental Caries In Patients At The University Of Nevada Las Vegas School Of Dental Medicine, Charles K. Hill
UNLV Theses, Dissertations, Professional Papers, and Capstones
Dental caries is present worldwide and has afflicted over 90% of all adults in the United States. Biological determinants of the disease are well understood but social determinants and how they interact with biological factors are not. Programs designed to reduce incidence and prevalence of caries often target certain individuals and involve behavioral change. Some programs are more successful when environmental and societal issues are also addressed (Watt, 2002). Biological and behavioral processes leading to caries should include the modification of social factors to enhance results of prevention programs designed to reduce caries in populations. Preventing disease comes not only …

Analysis Of Ghrelin Concentrations In Serum Samples Processed At One, Two, And Three Hours After Collection, Christine E. Prato
UNLV Theses, Dissertations, Professional Papers, and Capstones
Obesity is becoming an epidemic of modern society. While the health-related consequences of obesity have been well studied, scientists continue to search for biological risk factors associated with this disease. Since the 1999 discovery of an appetite-stimulating hormone, ghrelin, researchers have further questioned the physiological interactions that lead to obesity. The fundus of the stomach, as well as the intestines and kidneys produce ghrelin before it circulates throughout the body and attaches to its receptor sites located within the section of the brain responsible for appetite-regulation. The hormone increases and decreases in a circadian rhythm that may dictate the routine …

The Development And Evaluation Of A Safety Skill Intervention For Child Victims Of Neglect, Heather H. Hill
UNLV Theses, Dissertations, Professional Papers, and Capstones
Child neglect is the least studied, yet most frequently indicated, type of child maltreatment. Still, there are few assessment and treatment methods specifically designed for victims of child neglect. Unintentional injuries have long remained the leading cause of death for children in the United States after the first year of life, and research suggests the majority of these child fatalities are actually the result of child neglect. Homes of neglectful families are often inundated with safety hazards but child-focused home safety skill interventions have yet to be developed. Thus, the present study focused on the development and initial evaluation of …

UNLV Theses, Dissertations, Professional Papers, and Capstones
Childhood lead poisoning is a completely preventable condition, yet only a small portion of children in Nevada are screened for elevated blood lead levels. In 2009 only 6.11 percent of children in Nevada were screened for lead indicating that Nevada would benefit from an alternative method of screening for childhood lead exposure. Deciduous teeth are not currently recognized by the Centers for Disease Control and Prevention as diagnostic samples for the measurement for lead exposure. However, this unique and innovative detection method utilizes opportunistic samples that will contribute to the childhood lead poisoning prevention efforts in Nevada.

Calcium is a very important nutrient and as such, it is very important that all humans consume sufficient amounts. However, some calcium supplements have been known to contain small quantities of lead. This research project used a retrospective approach to explore the trade-off between the benefits of calcium vs. the potential lead exposure amongst people who are taking these supplements. A survey consisting of 10 questions was used to try to assess the rate of consumption of specific types of calcium supplements. This research project obtained lead levels in calcium supplements from previous research and applied that data into this …

Identifying And Reducing Lead Exposure Associated With The Use Of Cultural Practices In Southern Nevada Hispanic Communities, Maria Castillo-Couch
UNLV Theses, Dissertations, Professional Papers, and Capstones
Despite large amounts of national data on lead and childhood lead poisoning, the status of childhood lead exposure in Nevada as a result of the use of cultural practices in the Hispanic population is unknown. The influx of immigrant Hispanic populations to Nevada, their low education level, the high number of them who are living in poverty present an increased risk for children to be exposed to lead through the use of imported consumables, home remedies and alternative medicine (i.e., healers/ sobadores).
A 61-question survey collected data from Hispanics over 18 years of age who have or take care …
The Effect Of Low-Cost Incentives On Active Transportation To School Rates Among Elementary School Students, Sheila G.J. Clark
The Effect Of Low-Cost Incentives On Active Transportation To School Rates Among Elementary School Students, Sheila G.J. Clark
UNLV Theses, Dissertations, Professional Papers, and Capstones
This study assessed the effectiveness of a school-based active transportation to school (ATS) encouragement program for elementary school students. ATS shows promise for increasing physical activity and preventing excessive weight gain in children. ATS rates were assessed through frequency counts at the control school (N=697) and intervention school (N=693). The intervention encouraged ATS through the distribution of low-cost incentives on one weekday each week. It also required helmet use for participation and included a Walking School Bus component. Findings from this study suggest that the intervention effectively increased ATS on both intervention and non-intervention days.
