Anthropological interest in human exploitation of resources has increased considerably during the last decade. Archaeological and ethnological literature concerning man's utilization of the world's oceans is relatively abundant and there are now several on-going anthropological research programs, e.g., Aleutian Islands, Pacific Northwest Coast, California, Hawaii, Australia, New Zealand, Peru, Ecuador, Chile, and Southern Africa which focus primarily on maritime adaptations. The effect of nitrogen intake, nitrogen source, calorie intake, body weight, adaptation time, research group and sex on the nitrogen balance of human adults was investigated. Data from studies reported in the literature were combined and analyzed statistically by multiple regression techniques. Analyses were made separately for six sources of nitrogen: egg, beef, rice, corn, wheat and wheat gluten.

Nitrogen intake, caloric intake and body weight exerted significant effects on nitrogen balance (5% level of confidence) for six, three and two of the six nitrogen sources, respectively. Other variables were not significant at the 5% level. Although differences were not …

The purpose of this study was to investigate the possible effects of a calcium and vitamin D supplement on the resorption of alveolar bone following teeth extractions in human subjects. Studies have been cited which indicate a positive relationship between adequacy of calcium intake and maintenance of the bones of the jaw.

In this investigation, patients who received dentures immediately after the extraction of their remaining natural teeth were given a medication to take every day for a year.

The effects of different levels of fluoride in drinking water on different parameters of femurs and incisors of female rats were studied. Rats and their offspring, before and after weaning, were used for the study. Mother rats received 0, 1 and 5 ppm fluoride in drinking water. After weaning, the offspring were given the following treatments: 0-0, 0-1, 0-5, 1-0, 1-1, 1-5, 5-0, 5-1 and 5-5; the first number indicating fluoride level of mother's water during mating, pregnancy and lactation and the second number indicating the fluoride level of water given to the offspring. A Field Study In The Use Of Dietary And Urinary Variables In Determining Osteoporosis In Elderly People, Jane Steger Osborn

Three-day dietary records were analyzed for nutrient content and 24 hour urine samples were analyzed for calcium, phosphorous, total nitrogen, and free alpha-amino nitrogen for 210 elderly people. Dietaries and urine samples were collected twice, October and March at five month intervals, for each subject. Increases were found in both dietary intake and urinary components October to March. Based on a criteria of high dietary protein, low dietary calcium, high urinary nitrogen and low calcium, 23 subjects were selected as osteoporotic and and 25 were selected as non-osteoporotic. This method of prediction was not supported by radiological evaluations.

Weanling male rats were made anemic and fed diets supplemented with 20 ppm iron and/or 2 ppm molybdenum. A decrease in serum iron was observed in the rats supplemented only with iron and a significant decrease in hemoglobin was observed in rats given no supplementation.

In a second experiment, pregnant female rats were also fed diets supplemented with 20 ppm iron and/or 2 ppm molybdenum. An inverse relationship was apparent between iron and copper in both the serum and the liver of the female rats. Milko-Tester Analysis Of Milkfat Content Of Churned And Nonchurned Samples From Jersey And Holstein Dairy Cattle, Kazuko Monobe

Milk samples from three Jersey and three Holstein herds were used to determine if the degree of churning correlated with the initial milkfat assay, and also to determine if the churned milkfat could be measured as accurately as the initial milkfat using the Milko-Tester.

Regression lines for the initial milkfat test versus churned milk- fat test fit polynomial curves. The degree of churning was greater for Jerseys than Holsteins and correlated with the initial milkfat test.

The repeatability of initial milkfat tests vas 0.98 for Jerseys and 0.99 for Holsteins. However, the repeatability of churned milkfat tests was lower for …

For three weeks the plate waste from the students at the Edith Bowen Laboratory School was collected. The students were divided into three units by grade; Unit I, kindergarten and first grade, Unit II, second and third grade; and Unit III, fourth through sixth grade. The total waste of the individual menu items in the three units was weighed to determine the total waste of each food item for the unit. In each unit individual food items from three control trays weighed together, and an average serving portion for the item in each of the three units was obtained.

A behavioral objective based nutrition education program for kindergarten through sixth grade which allowed nutrition education to be integrated into existing classroom programs was developed and evaluated. A nutrient density approach served as the conceptual framework for the program. Nutrient density evaluates the nutrient content of a food in relationship to the caloric content. Materials for student use, teacher use and teacher training were developed.

The program was evaluated in 27 classrooms in nine public elementary schools in Utah and Idaho with 806 student participants. Pre- and post tests as well as classroom evaluations were conducted.

Resorption of alveolar bone, a characteristic observed in periodontal disease, in the totally edentulous mouth and in generalized osteoporosis, is a common world-wide phenomenon in man. Calcium deficiency and calcium-phosphorus imbalance are implicated as plausible factors in all three instances.

A compilation of recent investigations strongly suggests that oral bone loss, whether in periodontal disease or in the residual ridges, is an early manifestation of osteoporosis; and that osteoporosis, in general, is associated with disturbed calcium homeostasis.

The study was undertaken to determine if there is a synergistic effect of alcohol and caffeine on levels of serotonin (5-HT) and 5-hydroxyindoleacetic acid (5-HIAA).

Male weanling rats were given a choice between water and a 10% ethanol solution and were placed on a vitamin deficient diet previously demonstrated to increase appetite for alcohol. After 11 weeks of stabilization they were divided into groups of high, low, and middle drinkers. The high and low drinking groups were maintained on a diet providing coffee equivalent to 9 cups per day in the human. High drinkers had ad lib.access to 10% ethanol. …

The purpose of this study was to analyze the diets of elderly people in southern Utah. Three types of information were used in the analysis: biochemical, dietary, and the subject's analysis of his diet. Four vitamins were studied: vitamin A, ascorbic acid, thiamin, and riboflavin.

Dietary data was obtained on the four vitamins and compared by sex and by age. Thiamin and riboflavin dietary levels were evaluated using the Index of Nutritional Quality (INQ), to determine the quality of the diet according to the total calories consumed. Seasonal differences between fall and spring data were evaluated.

Biochemical composition of blood and urine and estimated nutrient intake were used to evaluate the nutritional status of 187 fasting, ambulatory elderly residents of five southwestern Utah communities in the spring of 1975. Nutritional assessments included 17 biochemical and 23 dietary parameters. Measurements were also taken of height, weight, and blood pressure.

Mean energy intakes were lower than the RDA for both men and women (1965 ± 527 Kcal and 1513 ± 371 Kcal, respectively), although a majority of the participants were above ideal weight. Cholesterol values above 250 mg/lOO ml of blood were found in 38 percent of the …

Over an 18-year period, beginning in 1955, a group of subjects has been studied six times to determine if any relationship exists among serum cholesterol levels, body weight, health status, diet quality and stress or anxiety. For the first four test periods, extending through ages 7 to 16 years, there were 321 subjects. Later, in 1968, 86 of the original 321 subjects, now aged 19-22 years, were able to participate in a follow-up study. The 1974 study was able to involve 30 of the original 321 subjects now aged 26-29 years. Findings show that from approximately the fifteenth year onward …

Fifteen male high risk coronary subjects were fed a lacto-vegetarian diet for 28 days. The diet was calculated with a P:S ratio of 4.0 or greater and the subjects received at least 10 g. of fiber per day. At weekly intervals, the blood was drawn and serum cholesterol and triglyceride determinations were done. As a result of the diet, the men experienced a significant decrease in cholesterol (p>.001). During the 28 days, there was a 29 percent decrease in mean serum cholesterol and a 40 percent decrease in mean serum triglycerides.

For many years the department of agriculture has recommended that pig producers include meat meal or other protein concentrate in pig rations based on cereal grains. However, it is still common for pigs to be raised on cereal grains with little or no protein added.

Recent trials at the Department of Agriculture's Medina Pig Research Station have demonstrated the losses which can result from feeding pigs on low-protein cereal rations.

Only within the past decade has proper nutrition been recognized as making a major contribution to the health and well-being of the elderly. This recognition of the importance of nutrition in the later years has led to the recent establishment of many nutrition programs for the elderly. As nutrition education is seen as an important tool in improving the nutritional status of the elderly, many of these now programs include nutrition education components.

Nitrite at the level found in turkey frankfurter formulations vii did not interfere in the hydrazone test as developed by Andrews (1975). The aldehyde levels of frankfurters made principally from MD turkey meat were, on the average, twice as high as the levels in the raw meat. Aldehyde levels generally increased as the frozen storage time of the raw meat increased. There were some variations from this trend due to variation in the fat content of the raw meat. The Technicon OSCC II was evaluated for application in dairy herd improvement central laboratories. Dilution using a Fisher Autodiluter made sample preparation for assay less time consuming and more convenient and resulted in the same accuracy as with the manual syringe technique.

Sample storage and the presence of a potassium dichromate preservative tablet had little effect on somatic cell count when tested within two days at room temperatures (20-23 C) or within four days at refrigeration temperatures (4-7 C). The preservative tablet caused an average increase of 14,000 cells/ml. The average cell count dropped 26 percent following two days at …

A study on the influence of nutrition education experiences was conducted in the Child Development Preschool Laboratory at Southern Utah State College in Cedar City, Utah, with thirty-two preschool children. Sixteen of the children were exposed to nutrition experiences through food activities and stories.

It was found that the sixteen children who were involved in the fifteen nutrition experiences significantly increased their knowledge of nutrition concepts and further modified their own personal food choices. The control group, which was not exposed to nutrition activities, made no significant change in knowledge of nutrition concepts and no modification of personal food choices. …

Two intermediate wheatgrass seedings with different levels of grass bug infestation were evaluated for herbage production, seedhead production, percent dry matter, crude protein, and cell contents. Study sites were located at different elevations on mountain summer ranges in northern (Site I) and central (Site II) Utah. Study plots at Site I and Site II were infested with 113 and 210 bugs per sweep, respectively. Herbage production appeared to be reduced in early spring on the site with the higher infestation; however, no effect on season-long herbage production could be detected on either site. Forty-nine female rats initially weighing about 95 grams were used in this experiment to determine the effect of contraceptive hormones on body composition in zinc deficient and zinc supplemented rats. Four treatment groups were: 2 ppm of dietary zinc with daily contraceptive steroid injections, or with placebo injection, and 140 ppm of dietary zinc with contraceptive steroid injection or with placebo. The daily injected steroids consisted of 0.1ug of Ethynyl Estradiol and 0.1mg of Medroxyprogesterone in 0.1ml of corn oil. Non-hormone treated groups received 0.1ml of plain corn oil. Seed of lupin varieties now available can be combined with wheat or barley to produce a balanced diet for growing/finishing pigs, and lupin seed has become a popular ingredient of pig rations.

As a protein concentrate, lupin seed is a satisfactory alternative to meatmeal, provided adequate amounts of calcium and phosphorus are added as supplements. Without the addition of these elements to rations of lupin seed and grain, a number of problems are likely to arise.
