There has been insufficient data available for suggesting a recommended dietary allowance for pantothenic acid in the elderly population. The purpose of this study was to determine the average dietary intake of pantothenic acid and correlate it with urinary excretions and the blood levels of this vitamin to assess the pantothenic acid status of the elderly population.

A seven day diet record was obtained from 65 non-institutionalized and 26 institutionalized persons over 65 years of age assessed to be free of chronic diseases. A 24 hour urine specimen and a fasting blood sample was obtained from each study participant. An …

Four batches of pasteurized process cheese were prepared from the same Cheddar cheese by cooking to 82C in the presence of sodium citrate, disodium phosphate, tetrasodium pyrophosphate or sodium aluminum phosphate. Each batch contained the same moisture (40.6%) and emulsifying salt concentration (2.5%). The process cheese was sampled for microstructural and rheological examination after 0, 5, 10, 20 and 40 min in the cooker at 82C.

Even though each emulsifying salt affected the physical properties of the process cheese differently, the cheese generally became firmer, stiffer, more elastic and less meltable as cooking time increased from 0 to 40 min. …

Lamb adipose tissue, representing 4 breeds, 3 sex-types and 3 weight categories, were studied to measure the variation in the flavor profile between individual animals, based on breed, sex- type and carcass weight. The flavor concentrates were prepared by steam distillation, ether extraction and fractionation. Pooled samples were prepared in the same way to measure any variations due to methodology.

Gas chromatographic separation and statistical analysis, based on analysis of variance, indicated that 21 peaks out of 124 peaks showed significant differences (at 5% level or 1% level). Among these 21 peaks, 5 were affected by breed, 4 by sex-type, …

Male weanling rats were placed on a nutritionally adequate casein diet and randomly assigned to one of eight groups. The first four groups were force fed alcohol for 22 days prior to the experimental phase of the study, while the last four groups had access to water only. Upon commencing the experimental phase each group was given one of the following diets: continuation of the casein diet; Cheddar; Limburger; or Roquefort cheese diets, along with the choice of alcohol and/or water. The direct determination of aluminium in aqueous solutions by differential pulse polarography is described. If the pH is carefully controlled to 4.00 ± 0.01, there is a linear relationship between the peak height of the polarographic wave and the aluminium concentration up to 2.5 × 10-5 mol dm-3. The coefficient of variation is about 4% at the 10-5 mol dm-3 level. With increasing aluminium concentrations, the relationship ceases to be linear, and above 9 × 10-5 mol dm-3, the peak splits, probably because of hydrolysis and polymerisation. Na+, NH4 …

Growing chickens were fed three levels of biotin, 0, 20, and 100 micrograms/kg diet, and four different carbohydrates, glucose, dextrin, sucrose, and sorbitol, in order to study the effect of dietary carbohydrates on the level of cecal biotin. Dietary sorbitol was found to enhance the concentration of cecal biotin at suboptimal levels of dietary biotin, while dietary dextrin had the opposite effect. When the dietary requirement of biotin was met, cecal biotin greatly increased in the presence of dietary glucose, sorbitol, and sucrose but remained at a low level when dextrin was the dietary carbohydrate. Sixteen healthy male subjects were randomly divided into four equal groups and fed a nutritionally balanced 30 calories % fat diet, with approximately 2500 calories and less than 15 mg cholesterol/day, for 28 days. Within each group a constant level of linoleic acid was given for the duration of the study--either 2, 6, 14 or 18 % linoleic acid. Rate of changes in total cholesterol, HDL cholesterol and the ratio of total to HDL-cholesterol were subjected to analysis of variance and regression analysis. The results showed changes in total cholesterol and ratio of total to HDL-cholesterol to be significant. The …

Serum, urinary and fecal levels of ten lacto-ovo-vegetarians and nine total vegetarians were assayed using Ochromonas malhamensis. Intakes of vitamin B12 , protein, fat, carbohydrates, fiber and calories were calculated using 7-day diet histories and questionnaires. Correlations between nutrients consumed, years on diet, serum, urinary and fecal B12 levels were also calculated.

Mean serum B12 levels of the lacto-ovo-vegetarians and total vegetarians were 657 pg/ml and 381 pg/ml respectively. There was no significant difference between the two groups. The average daily intake of vitamin B12 was 2.0 ug for lacto-ovo-vegetarians and 0.6 ug for the total …

The development of cheese flavor in ultrafiltered whole milk retentates was investigated. Acidified (pH 5.7) pasteurized whole milk was concentrated to 21% fat, 17% protein and 41% total solids, and then divided into six lots. Each lot was subdivided into three groups of two samples each. Each group was inoculated with one of three lactic cultures -- Streptococcus lactis C6 , commercial mixed concentrated Marschall's MD294S or CCI299S. One sample in each group was treated with rennet and the other sample left rennet free. All samples were incubated at 30 C until the pH reached 5.2-5.1. Each of the …

The purpose of this study was to develop and evaluate nutrition educational lessons and instructional materials based on the Index of Nutritional Quality (INQ). INQ is a graphic, nutrient density concept. The lessons and instructional materials were used in the nutrition education of pregnant women in the WIC Program. Six nutrition lessons were written utilizing the INQ concept. Lesson one emphasized the importance of the WIC supplemental foods and the recommended number of servings from the basic four food groups during pregnancy. Mechanically-deboned beef shank (MDS) and hand-deboned beef shank (HDS) were prepared into thuringer (acid fermented), canned meat (retorted) and bologna (dry-heated). Raw meat and these products were then lyophilized and mixed into balanced diets and fed to weanling male rats for three weeks to evaluate the bioavailability of calcium, iron and fluoride. Bioavailability of calcium from MDS and its processed products was determined by feeding growing male rats with 5.01 to 5.53 g Ca/kg from MDS. The turkey industry is concerned with the effects of added dietary fat on turkey carcass composition. Rations were formulated containing different levels of added dietary fat, both with and without an adjustment in dietary protein level. Orlopp 91 tom turkeys were fed diets containing 2 percent added fat (control), 4 percent added fat (energy/protein ratio constant with the control), 6 percent added fat (energy/protein ratio constant with the control), and a diet containing 6 percent added fat with a higher energy/protein ratio than the control.

Seventy-five processed and prepared foods commonly consumed in the United States were analyzed for pantothenic acid. The foods were analyzed using the traditional microbiological assay for the vitamin and using a new radioimmunoassay (RIA).

The preparation of food sample extracts for both assays was modified. After the food samples underwent enzyme hydrolysis, the food-enzyme mixture was dialyzed to obtain a clear extract for use in the assays. Previously, the food-enzyme mixture was poured through filter paper for clarification.

A very high correlation (r2= .937) between the results from the RIA and the microbiological assay was found. There was …

The study involves two different approaches to increasing cottage cheese yields by the inclusion of whey proteins in the curd. They were the use of high heat treated skim milk and ultrafiltered skim milk retentates for cottage cheese making. Increasing the pasteurization temperature of skim milk from 61.8 to 79.4 C for 30 minutes resulted in 15.6% increase in cultured cottage cheese yields. However, the high heat cheese exhibited variable quality and was generally inferior to the control. Providing consumers with usable nutrition information requires an effective labeling format. The objective of this study, which was conducted in a supermarket setting, was to determine whether consumers could, without previous instruction, make equally effective nutrition decisions using a graphic format based on nutrient density as when using the current labeling format. For comparison with other studies, a demographic, nutrition knowledge and nutrition labeling data base was collected. A dietary nutrient intake study of ninety-five residents of a nursing home in a rural community was conducted. Nutrient intakes were determined for seven consecutive days using the method of weighing food served and weighing food left by subjects. Patients on regular, diabetic, soft and sodium restricted diets were included in the study. Snacks consumed between meals and vitamin and mineral supplements were included in the nutrient intakes.

Height, weight, body mass index, tricept skinfold measurement and serum blood laboratory data were obtained for each subject. Activity levels were also determined.

Three bean varieties, namely, great northern, kidney, and pinto (Phaseolus vulgaris L.), were subjected to several physico-chemical treatments to reduce their cooking time. Soaking in a combination of salt solutions (sodium chloride, 2.5 percent+ sodium bicarbonate, 1.5 percent+ sodium tripolyphosphate, 1.0 percent + sodium carbonate, 0.5 percent) resulted in 80-85 percent reduction in cooking time. Irradiation (Γ-rays) at 500 Krads of soaked and dehydrated beans caused nearly 50 percent reduction in cooking time. High temperatures (37 and 45°C) and pH (9.0) caused greater water imbibation and total solids loss than room temperature (22°C) and pH 7.0. Organoleptic evaluation of beans …

The objectives of this investigation have been to study the acceptability and nutritive value of processed cabbage and to elucidate the effects of chronic administration of cabbage on the activity of a colon tumorigen, 1,2-dimethylhydrazine (DMH). The organoleptic unacceptability of cabbage in spite of its high nutritional and economic values governed the choice of this cruciferous vegetable for this work.

Derivatives of 3-methyl-1-2-benzothiazolinone hydrazone were formed from the oxidation products of three oxidized unsaturated fatty acids. Aeration with oxygen and heat (65C) was used as a means of accelerating deterioration of lipid samples. Formaldehyde was recovered from oxidized pure standards of oleic, linoleic and linolenic acid methyl esters, and identified using gas chromatography. Formaldehyde was also recovered from oxidized lipid extracts of mechanic ally deboned turkey meat and turkey cluster fat. Gas chromatography was used to measure concentrations of unsaturated fatty acids during the oxidation of extracted lipids. Linoleic and linolenic fatty acids significantly decreased (p < .005) in oxidized lipid extracts from turkey cluster fat stored frozen for six months.

The effect of Mg status on the behavior of rats, as determined by nonspecific excitability level and audiogenic seizure susceptibility, was investigated. Also, selected biochemical and neurological mechanisms mediating the chain of events from dietary magnesium deficit to the hyperexcitability symptoms were examined. Weanling rats fed a low magnesium (10 ppm) diet for 14 days had reduced serum, cerebrospinal fluid and brain magnesium concentrations, and increased brain (Na+ K+) -ATPase activity. They exhibited increased NEL and became highly susceptible to audiogenic seizures. The objectives of this investigation have been to characterize black gram (Phaseolus mungo L.) and rice (Oryza sativa L.) proteins and to study changes in their nutritional value due to fermentation. Black gram, the legume chosen for this work, is one of the most important legume crops throughout a large part of the tropics.

The protein content of 60 mesh, dehydrated, defatted black gram meal was 28.5 percent. In south-western Australia all grazing stock face a period of 'inadequate' nutrition each autumn.

The Department of Agriculture's beef production research programme has for some years sought solutions to this problem, and the results from the programme have been used to develop strategies for achieving satisfactory production levels at least cost during autumn.

This article discusses the resulting techniques, and the research on which they are based.
