IMPORTANCE: Metals are established neurotoxicants, but evidence of their association with cognitive performance at low chronic exposure levels is limited.

OBJECTIVE: To investigate the association of urinary metal levels, individually and as a mixture, with cognitive tests and dementia diagnosis, including effect modification by apolipoprotein ε4 allele (APOE4).

DESIGN, SETTING, AND PARTICIPANTS: The multicenter prospective cohort Multi-Ethnic Study of Atherosclerosis (MESA) was started from July 2000 to August 2002, with follow-up through 2018. A total of 6303 MESA participants were included. Data analysis was performed from October 12, 2023, to June 13, 2024.

Belize is a food insecure, developing country. Although Belize has plenty of nutritious food in-country, the exportation of that food to generate income contributed to a distribution issue of that nutritious food. More impoverished areas of Belize do not have access to nutritious food because of the lack of affordability and high export rates. Diets with a lack of food, or lack of balanced, nutritious food can negatively impact growth and cognitive development, especially in children. Of all the attributes that define beef's eating quality, tenderness stands out as one of the most important. Previous studies have shown that consumers are willing to pay a premium for beef that is guaranteed to be more tender and are more likely to purchase that product repeatedly. Yet, due to the influence of numerous internal and external factors, controlling and predicting tenderness remains to be difficult. Most beef cattle in the US are feedlot-finished where intensive feeding of grains is used to increase weight and yield; however, a minority are raised in grass-fed operations that use exclusive pasture, rangeland, and hay for feeding, possibly leading to benefits for the land, soil, ecosystems, forages, and the meat itself. These operations use a variety of methods, and the goal of this was to recognize differences in the soil and forage metrics to help understand the resulting meat fatty acid composition and mineral content. It is well known that children do not eat enough fruits and vegetables. The FIT Game Healthy Eating Program is an interactive, story-board type narrative that has increased fruit and vegetable consumption in elementary school children. While The FIT Game intervention has shown progress in the past, the schools studied had minimal diversity and the intervention was time intensive and costly.

In the quest for healthier and more natural food products, using beneficial lactic acid bacteria to preserve food, known as biopreservation, is becoming increasingly important. This research focused on a strain of beneficial bacteria called Latilactobacillus curvatus and its ability to inhibit fungal growth both in lab settings and in a yogurt system. This has the potential to enhance the safety and quality of dairy products.

We studied a specific strain of this bacteria, named WSU-1, found in dairy. Through detailed analysis, we discovered that this strain could produce substances that may help protect food from harmful microbes. In laboratory …

Introduction This thesis examines the relationship between nutrition-related attitudes and the use of Scrappy’s Cupboard, a campus food pantry, among undergraduate and graduate students at the University of Tennessee at Chattanooga (UTC). This study aims to determine how students’ attitudes toward nutrition influence their likelihood of utilizing campus food resources, highlighting differences between users and non-users of Scrappy’s Cupboard. Background: The LGBTQIA+ population experiences unique barriers to occupation and well being. Anti-LGBTQ legislation encroaches on inclusive and affirming care affecting occupational access. Limited occupational participation and additional exhaustive adaptive strategies to engage in occupations safely have an emotional cost. This research study explores how food or mealtime occupations such as cooking, eating, and hosting can support LGBTQIA+ well-being. This research was made possible by LGBTQIA+ participants that are experts of their lived experience.

Variation is thought to occur in the use of dietary energy for production in dairy cattle. First, variance can be observed when new methane mitigation strategies are fed resulting in increased H2 output potentially resulting in downstream effects on estimates heat production via the Brouwer (1965) equation. Therefore, in chapter 3 a review was created to systematically describe the mathematics and theory behind the Brouwer equation, and rederive a heat production equation to integrate H2 production. This study compared the Peak Health and Performance curriculum (PHP) to the Teen Cuisine curriculum (TC) on improving nutrition, food safety, and physical activity (PA) behaviors among youth. The quasi-experimental study was conducted in Michigan middle and high schools and included 1007 5th- through 12th-grade students, who participated in either the PHP or the TC curriculum. There were 465 students in the PHP group and 495 students in the TC group. Nutrition, food safety, and PA behaviors were surveyed before and after each program. Background: Consumption of tomatoes and tomato carotenoids is associated with a reduced risk of prostate cancer. Prostate tissue accumulates tomato carotenoids, including lycopene, β-carotene, and phytoene. Phytoene accumulation is relatively greater in the prostate than that of lycopene, but the metabolic determinants of tissue carotenoid profiles are poorly understood.

Objectives: The purpose of this study was to determine if differences in stability, cellular uptake, and clearance of phytoene compared with lycopene or β-carotene by prostate and intestinal cells may explain differences in observed tissue carotenoid profiles.

The relationship between dietary fiber intake and human health has gained significant attention due to its potential in preventing chronic diseases and promoting gut health. Grains are a primary source of dietary fiber; however, the health impact of grain fibers is often limited because they are incompletely metabolized by gut bacteria. Objective: Identification of prognostic biomarkers in pediatric diabetes is important for precision medicine. We assessed whether C-peptide and islet autoantibodies are useful to predict the natural history of children with new-onset diabetes.

Methods: We prospectively studied 72 children with new-onset diabetes (median follow-up: 8 months) by applying the Aβ classification system ("A+": islet autoantibody positive, "β+": random serum C-peptide ≥1.3 ng/mL at diagnosis). Beta-cell function was assessed longitudinally with 2 hours postprandial/stimulated urinary C-peptide-to-creatinine ratio (UCPCR) 3-12 weeks (V1) and 6 to 12 months after diagnosis (V2). Adipose thermogenesis has been actively investigated as a therapeutic target for improving metabolic dysfunction in obesity. However, its applicability to middle-aged and older populations, which bear the highest obesity prevalence in the United States (approximately 40%), remains uncertain due to age-related decline in thermogenic responses. In this study, we investigated the effects of chronic thermogenic stimulation using the β3-adrenergic (AR) agonist CL316,243 (CL) on systemic metabolism and adipose function in aged (18-month-old) C57BL/6JN mice. TV viewing is associated with health risks, but existing measures of TV viewing are imprecise due to relying on self-report. We developed the Family Level Assessment of Screen use in the Home (FLASH)-TV, a machine learning pipeline with state-of-the-art computer vision methods to measure children's TV viewing. In three studies, lab pilot (n = 10), lab validation (n = 30), and home validation (n = 20), we tested the validity of FLASH-TV 3.0 in task-based protocols which included video observations of children for 60 min. Stunting and anemia remain the coexisting nutritional problems among Indonesian children. However, evidence of household-level food expenditure and its association with child stunting and anemia is limited. This study aimed to observe the association between household food expenditure typology and child stunting and anemia in Indonesia. Data was obtained from the 2007 and 2014 Indonesia Family Life Survey (IFLS). The household food expenditure, child nutritional status, and anemia were observed in 2007 and 2014. Maternal nutritional needs increase during lactation. However, the energy intake of breastfeeding mothers usually still falls short of the recommended adequacy levels. This study aimed to identify the dominant factor of energy intake in breastfeeding mothers in Sawangan District, Depok City, Indonesia. This quantitative study used a cross-sectional design from July 2022 to February 2023. Energy intake, dietary diversity, and eating frequency were collected using 24-hour food recall. Purpose: The purpose of this research study was to examine the effect of an innovative, online COVID-19 interprofessional educational module among health and allied health professions students.

Face-to-face cooking programs can positively impact food choices, fruit and vegetable intake, and cooking self-efficacy; however, little is known about virtual cooking programs. We studied the perceived acceptability of the virtual SWITCH Cooking School (SCS). Four monthly cooking classes were offered for each participating school. Classes included nutrition education, food safety, and cooking demonstrations. Feedback was collected through post-class surveys and focus groups with parent/guardian and youth participants. Families valued the convenience of the virtual delivery and were interested in participating again. Future considerations for the SCS include incorporating additional variety of culinary skills and modifying registration methods.

Garcia's study looks at how integrating race and cultural-concordant doulas into the birth experience of African American women would impact outcomes. She found similar studies that provided strong evidence to support doula integration. However, most did not select study populations that appropriately reflected the African American women at increased risk of poor outcomes. As a result, Garcia designed a study that looked at race and cultural concordance between doulas and patients from a wide range of SES backgrounds and varying degrees of pregnancy risk.

Objective: This study was conducted to determine the influence a balanced diet has on the outcome of specific dermatologic conditions notably psoriasis, atopic dermatitis, and rosacea. Background: Nutritional status is pivotal in shaping holistic wellness, which extends to skin health. Adequate nutrition can prevent the worsening of inflammatory conditions. Methods: A literature review was conducted to analyze how specific dietary habits for selected chronic inflammatory cutaneous conditions influence the presentation and overall clinical outcome. Background: There is a compelling need to emphasize the importance of deepening the rationale behind functional foods research in molecular biology. Indeed, establishing stringent criteria to evaluate functional food interventions in disease prevention and as adjunctive therapeutic strategies offers significant opportunities for health promotion. Objective: This study investigated the effects of fermented papaya preparation (FPP®) and vitamin E on gene expression in middle-aged/elderly individuals, leveraging FPP’s established antioxidant and immune-regulatory benefits. Methods: Graded Exercise Walking Test was administered twice weekly for 6 months. Total Antioxidant capacity (TAC) and gene expression (Nrf2, NQO1, HO-1) in PBMC were measured monthly.
