A pink color defect is commonly observed in freshly cut surfaces of cooked turkey rolls and fades rapidly upon exposure to air. The non uniform pink color makes the product appear undercooked, and the product must be discounted. The oxidation-reduction potential of the meat is important in development of pink defect. A pink color similar to that of commercial product was observed when the cooked meat was treated with either sodium nitrite or sodium dithionite. Information on human needs for pantothenic acid is limited and no recommended daily allowance has been established; although a safe and adequate level of 4-7 mg/day has been suggested for adults and adolescents. The adolescent population is often at risk for nutritional problems because of unusual eating patterns and major physiological changes which occur at this time. Pantothenic acid levels in urine, whole-blood and erythrocytes were determined in a healthy adolescent population using radioimmunoassay techniques. The effects of dietary calcium and phosphorus levels on audiogenic seizure susceptibility and brain neurotransmitter were investigated in magnesium deficient rats. For 17 days, male weanling rats were fed magnesium deficient diets which also contained deficient (-), adequate (=}, and excess (+) amounts of calcium and/or phosphorus. Reduction of seizure incidence was seen in low calcium and/or low phosphorus diets. High calcium, and high calcium in combination with high phosphorus increased the severity of seizures. High calcium and low phosphorus, and high phosphorus and low calcium diets prevented seizuring. Most magnesium deficient diets resulted in elevation of serum phosphorus, calcium, …

Factors which affect iron bioavailability have been repeatedly and extensively investigated. A model, derived from these studies, has been developed for estimating available iron from meal data. However, many dietary surveys report only average daily intakes of iron, and do not report the iron present in single meals. No model to estimate available iron from daily iron intake has been presented in the literature.

The inorganic forms of Al in the soil solution that decrease plant growth in acid soils have not been clearly identified. Therefore, we examined the effects of Al and its complexes with F- and SO42- on the root elongation of barley (Hordeum vulgare) in nutrient solutions containing 3333 μmol Ca L-1 and 6 μmol B L-1 at pH 4.5. Western Australia's sheep farmers are familiar with the low ovulation rate of Merino ewes and how this limits the lambing performance of ewe flocks.

One way in which ovulation rate and therefore lambing percentage may be increased is to feed seed of sweet lupin (Lupinus augustifolius) to ewes at mating. However, Department of Agriculture research has found that these increases do not show up consistently, and that there is considerable variability between farms.

If improved nutrition is to be a useful way to increasing ovulation rate, the mechanism by which nutrition affects ovulation rate must first be understood. This article …

The staple strength of western Australia's wool has come under scruitiny since additional wool measurements to those of yield, fibre diameter and vegetable matter began throughout the Australian 985-86 wool selling season.

In 1980, the Sale by Additional Measurement Trial conducted on the September-October wool sales at Fremantle showed a range in staple breaking forcesfrom 10 to 70 Newtons per kilotex, with an average breaking force of between 30 and 35 N/ktex, A third of the lots offered for sale had a staple breaking force of less than 26 N/ktex, a value which, according to the Australian Wool Testing Authority, …

Every year Western Australian farmers feed about 759,000 tonnes of cereal grain to livestock, mostly to sheep but also to dairy and beef cattle. These grains are fed as drought feeds, as supplements to augment poor quality or scarce paddock feed or in growth rations to attain higher levels of production. Many grains fed, however, have a low protien content and are therefore used inefficiently by animals.

Several methods of improving the low protien content of feed grains have been tested. They include the addition of lupin seed, spraying oats with urea and gassing oats with ammonia.

Department of Agriculture feeding trials with grazing sheep have consistently shown that the level of supplementation should be set for survival and little more, because beyond that the additional costs of supplementary feeding usually outstrip the benefits from extra production.

Even sheep in the greatest need - autumn lambing ewes in late pregnancy and the early part of lactation before and during the break of season - can be fed less than was thought necessary to achieve acceptable production.

Lean (Fa/?) and obese (fa/fa) Zucker rats were adrenalectomized (ADX) in order to assess the contribution of adrenal hormones to insulin resistance of the obese Zucker rat. Glucose utilization was measured using an insulin suppression test.Sham-operated obese rats gained almost twice as much weight as sham-operated lean littermates. However, body weight gain of ADX animals was comparable in both genotypes. It was significantly less than that of the respective sham-operated controls. Body weight differences can be accounted for almost entirely by a marked loss of adipose tissue.Although insulin resistance may be attributable to obesity in part, steroid hormones are thought …

There is evidence that homocysteine may be a factor in increasing the risk of coronary heart disease (CHD). To explore this relationship further, we assessed the interrelation of dietary vitamins B-6, B-12 and folate, and plasma pyridoxal-5'-phosphate and vitamin B-12 with plasma free and protein-bound homocysteine levels. Fasting blood and three-day dietary records were obtained from nine men low-risk (LR) and five at high-risk (HR) for CHD. The HR mean systolic blood pressure, total cholesterol (TC), and TC/cholesterol ratios were significantly higher than LR levels. Groups were comparable by age, weight, height, skinfolds, exercise, and smoking history. No significant difference …

Forty-eight Holstein cows at Utah State Dairy Farm were blocked statistically according to date of calving, previous milk production, and numbers of lactation at parturition. The cattle were assigned randomly to one of four treatments within blocks. The four treatments included a base ration (control, treatment #1), base ration plus .8% of sodium bicarbonate (treatment #2), base ration plus .4% of magnesium oxide (treatment #3), and base ration plus both .8% of sodium bicarbonate and .4% of magnesium oxide (treatment #4). The effects of whey-based and milk-based starter media, and low concentrations (0.02% each) of citrate, phosphate and calcium upon various milk coagulation properties were measured. Samples inoculated with milk-based starter medium had shorter coagulation times, faster rate of curd formation, and greater final curd firmness than those inoculated with externally neutralized whey-based starter. Starter medium treatment was statistically interacted with calcium for coagulation time and rate of curd formation. Citrate addition caused longer coagulation times, slower rates of curd formation, and weaker final coagula. Citrate interacted with calcium and phosphate for several of the parameters measured. The effects of iron, temperature, and presence of botulinal spores or sodium ascorbate on depletion of nitrite level were determined in meat and model systems. Higher temperature and presence of botulinal spores definitely increased nitrite depletion in a meat system. Added hemoglobin also significantly increased nitrite depletion, while ferrous iron and ferric iron did not significantly decrease nitrite level in a meat system. High temperature and presence of sodium ascorbate increased nitrite depletion in a model system. The purpose of this study was to describe a sample of insulin-dependent diabetic youth in terms of selected anthropometric measurements, level of metabolic control and dietary intake. The 22 subjects (10 males and 12 females) were between the ages of seven to 16 years and, except for one female, regularly attended a multidisciplinary outpatient diabetes clinic.

The study involved cross-sectional observation of height, weight, triceps and subscapular skinfold measurements, mid-arm muscle circumference and weight:height ratios, and comparison of these measurements to national norms derived from non-diabetic controls. Using proteinase negative variants of Streptococcus cremoris UC310 or UC320 to manufacture cottage cheese, theoretical yields were increased 1.97% and 1.56% respectively when compared to the theoretical yields of the proteinase positive parents. Yield differences were strain dependent and differences between positive and negative variants were not manifest with strains of UC73 and UC97. It was necessary to produce bulk culture using pH control and to add sufficient nitrogenous stimulant to provide carry-over stimulant into the cheese milk. The effect of added iron on the growth of Clostridium botulinum type A in a chemically defined medium was studied. Growth of C. botulinum was supported by an iron level of 0.05 ug/ml with maximum growth observed at a level of 3 ug iron/ml.

Electron paramagnetic resonance (EPR) studies were conducted to detect the presence of iron-sulfur centers and iron-nitric oxide complexes in untreated and nitrite treated cell-free extracts of C. botulinum type A. The effects of acidification, low temperature, high oxygen concentration, and rotenone on the color of dark colored beef muscle were determined by use of the Hunter color difference meter. Pre-rigor and dark cutting muscle homogenates bloomed (turned bright red) in the presence of low pH or rotenone. Dark cutting homogenates also bloomed at low temperature. Pre-rigor and dark cutting muscle slices turned bright red at low temperature in an oxygen atmosphere. In dark cutting beef muscle however, low temperature was sufficient to cause the development of bloom. The average ionic strength of 20 West Australian soils was found to be 0.0048. The effects of three electrolytes (deionized water, CaCl2 and KNO3), three ionic strengths (0.03, 0.005 and soil ionic strength at field capacity, Is) and two soil liquid ratios (1:5 and 1:10) on the pH of 15 soils were investigated. pH measurements in solutions of ionic strength 0.005 differed the least from measurements made at Is. The pH and buffer capacity of two soils increased or remained constant after incubation with different amounts of plant material (lucerne cham at field capacity and when air dry. For both soils, the pH changes were greater at field capacity, whereas the buffer capacities were independent of the water treatments. The pH changes observed could be explained in terms of the organic anion concentration of the plant material. The results indicate that the initial soil pH and the anion concentration (i.e. the per cent dissociation of soluble organic acids when released into the soil) determine the acidifying effect of organic …

Part I of this study presents a procedure for standardization of pellet analysis methodologies which improves estimation of prey biomass and determines the number of pellets needed to estimate prey diversity indices. The procedure was developed to provide a simple, easily replicated methodology for the study of pellets which also retains maximal data recorded from pellet analysis. A sample size of ten Long-eared Owl pellets was found adequate to calculate diversity indices with no significant loss of accuracy when compared to total pellets recovered from beneath a roosting site. Levels of lactoferrin, an Fe-binding protein with bacteriostatic properties, were determined in the colostrum and milk of Yorkshire sows during a 21-d lactation. Lactoferrin levels averaged 1,100 to 1,300 μg/ml near the time of farrowing, then declined sharply during the first week of lactation. Concentration of lactoferrin showed considerable variation among sows, but not among teat positions (anterior to posterior). A method for isolating high purity swine lactoferrin is described.

Eight healthy male lacto-ovo-vegetarian subjects averaging 28.0 ± 3.6 years of age (22 to 53 years) were fed a diet rich in α-linolenic acid (18:3 ω 3) for four weeks. Arterial blood pressure and body weight were recorded each week. Plasma 6-keto-prostaglandin F1α (6-keto- PGF1α ), thromboxane B2 (TXB2), total cholesterol, triglyceride, and total phospholipid fatty acid composition were analyzed at 0, 2 and 4 weeks.

Systolic blood pressure increased significantly between weeks 0 and 1 (106.5 ± 2.7 mmHg to 114.0 ± 3.7 mmHg; p < 0.003), but decreased to 107.3 t 2.6 mrHg (p < 0.02) at week 2. There was an insignificant increase in both systolic and diastolic blood pressures after four weeks. There was no significant change in either total cholesterol or triglyceride levels during the four weeks.

A buffered growth medium was developed that sustained a significantly greater concentration of various strains of Streptococcus lactis and Streptococcus cremoris than did milk. The active buffering ingredients of this medium were magnesium hydroxide, ammonium and sodium salts of phosphate and citrate. This medium was entitled Lactic Culture Buffered Growth medium (LABGRO) and possessed about 8 times the buffering strength between pH 6.6 and 5.1.

Significant differences in growth and acid production rates were noted among Prt+ and Prt- lactic strains evaluated. Also noted were significant differences in cellular acid production rates. The two Prt- strains having the slowest growth …

The objective of the study was to ascertain whether some infant formulas provide sufficient amounts of manganese and copper for adequate nutrition, Twelve piglets, within the first week of life, were divided by sex, litter and weight into two treatment groups. Both groups received concentrated Isomil, a soy-based infant formula and distilled water ad libitum. Isomil was analyzed and found to contain 1.05ppm manganese and .98ppm copper. The supplemented group received an additional 30.6mg manganese and 6.76mg copper per can (388ml) of concentrated Isomil. Weight gains were not significantly different.
