The purpose of this research was to determine whether whole wheat and lentils, food staples consumed in the Middle East, will exhibit delayed protein complementation when fed in alternating meals. Lentils are limiting in sulfur containing amino acids, especially methionine, while whole wheat is limiting in lysine, and when these proteins are fed together they supplement one another.

Sixty male, Sprague-Dawley weanling rats were divided into six diet groups with ten in each group as follows: diets fed ad libitum; wheat, lentils, wheat and lentils combined; diets pair-fed; wheat and lentils combined, wheat alternating with lentils, lentils alternating with wheat. …

Fasting and ketogenic diet prevent seizures in epileptic children, magnesium-deficient rats and other animal models of seizure disorders. This effect has been attributed to increased levels of circulating ketone bodies. The purpose of this study was to determine the role of serum ketone bodies, measured as beta-hydroxybutyrate (BHB), in preventing audiogenically-induced seizures in weanling rats fed a magnesium-deficient diet for 17 days.

The effect on seizure susceptibility was investigated by feeding a magnesium-deficient diet to weanling rats for 17 days. Fasting and ketogenic diet (dietary medium chain triglycerides, MCT) markedly decreased seizure incidence that was associated with increased serum BHB …

Milk coagulation consists of four overlapping phases: enzymic hydrolysis, micelle aggregation, gelation and syneresis. The objectives of this study were to determine the effects of added CaCl2 on milk coagulation and the relationship between enzymic hydrolysis and micelle aggregation with substrate at different concentrations.

Addition of CaCl2 to milk is widely practiced in industry and in laboratories. This changes calcium concentration, pH and ionic strength. It is impossible to separate these three variables and investigate each one independently.

Addition of low levels of CaCl2 shortens coagulation time and increases curd firming rate. Low levels of CaCl2 …

Navy beans (Phaseolus vulgaris cv. Gallaroy) were grown with 7 rates of zinc (Zn) in a Zn-deficient gravelly sandy loam in a glasshouse experiment. The plant shoots were harvested 31 days after sowing and the Zn concentration in each of 4 plant parts (YL, young leaf; YOL, young open leaf; YFEL, youngest fully expanded leaf; and whole shoots) was related to the fresh weight of the shoots. The zinc (Zn) content of particle size fractions of 12 mainly Zn deficient soils was measured by extraction with three contrasting extractants. The soils, which ranged from sands to a black earth, were from Western Australia and Queensland and particle size fractions (clay, silt, fine sand, coarse sand) were obtained by sieving and sedimentation after ultrasonification of soil suspended in deionized water. The extractants were concentrated HNO3/H2SO4/HClO4 (acid extractable or AE-Zn), DTPA and 0.002 M CaCl2. Zinc adsorption by a lateritic podzolic soil was measured in the presence of 0 to 3 mmol/litre of acetate, oxalate, citrate, tricarballylate, salicylate, or catechol, or 0 to 3 mmolc/litre of humate. Zinc remaining in solution was measured by atomic absorption spectrometry after shaking the soil for 17 h at a soil/liquid ratio of 1:5 in a 0.003 mol/litre KCl solution containing 0 to 500 μmol/litre Zn and the ligands. Recent research in Western Australia has provided new information on the effects of liveweight and liveweight change on wool production and quality, as well as lamb survival and growth. Liveweight and liveweight change in sheep reflect the animals' nutritional status, and this in turn directly influences their wool production and reproductive performance. The under-nutrition of sheep not only has an immediate effect on the animal's performance, but the research showed that it also produces a significant carry-over effect on wool and lamb production, even if the ewes have returned to good feed. Effect Of Disulfiram On The Urinary Excretion Of 5-Hydroxytryptophol And 5-Hydroxyindoleacetic Acid In Subjects Consuming Serotonin Rich Foods, Amy G. Tordecilla

The effect of disulfiram and/or serotonin rich foods (SRF) on the urinary excretion of 5-hydroxytryptophol (5-HTOL) and 5-hydroxyindoleacetic acid (5-HIAA) in normal male subjects was investigated. Urine collections were obtained on 1) regular serotonin free diet, 2) SRF, 3) serotonin free diet with disulfiram, and 4) SRF with disulfiram. Urinary excretion of 5-HTOL in ug/gm creatinine during disulfiram administration was 112.0 ± 24.1. Five HTOL (ug/gm creatinine) with disulfiram and SRF increased to 1532 ± 352.0 (p < 0.001). Five-HIAA (mg/g creatinine) before and after SRF was 3.4 ± .44 and 33.1 ± 6.1 respectively, p < 0.001. With disulfiram and SRF the excretion of was 24.2 ± 3.2 mg/g creatinine which was significantly greater than when on the regular diet (p < 0.001) than the excretion on SRF alone (p < 0.05)

Concerns have been expressed for the ability of some vegetarian diets to support normal growth of children. Animal protein or meat intake showed a positive relationship to attained height in children from developing countries. In this study, the relationship between meat intake/vegetarian status and physical growth was investigated in children living in California.

Height and weight were collected on 2,272 Caucasian children aged 6-18 years attending Seventh-day Adventist (SDA) or public schools who participated in a two year longitudinal study. Effects of Fe and Se status on GSHPx activity and lipid peroxidation in liver and intestinal mucosa were studied. Rats were Se and Fe supplemented (+Se+Fe), Se-deficient and Fe-supplemented (-Se+Fe), Se supplemented and Fe overloaded (+Se++Fe) by intramuscular injection, or Se deficient and Fe overloaded (-Se++Fe) for 20d. Fe overloaded tissues had more Fe, but hemoglobin was unaffected. Liver and mucosal GSHPx activity was low in Se-deficient rats. Thiobarbituric acid reactive substances (TBARS) were higher in Fe overloaded and -Se++Fe vs +Se++Fe tissues. Mucosal TBARS was higher in -Se++Fe rats gavaged with CBrCl3. Methods currently used to determine iron bioavailability have disadvantages for both the subjects and researchers involved. One safe and simple method that needs further evaluation, the serum iron absorption method, involves an initial blood drawing, dosages of iron, and blood drawings taken at intervals thereafter. Generally, the rise in serum iron or area under the curve is used to determine iron uptake. Genetically enhanced high-carotene Beta III hybrid carrot was compared to a commercial carrot cultivar, Nantes Coreless, for carotene content and macronutrient composition. Beta III contained more than twice the total carotene content of Nantes Coreless, with α-carotene/β-carotene ratios higher in Beta III. Total solids from protein, lipids, and carbohydrate were greater in Beta III than in Nantes Coreless. Beta III contained about five times the amount of sucrose and one-fifth the amount of glucose and fructose than Nantes Coreless or reported literature values.

A Longitudinal Study Of Dietary Intake And Influence Of Iron Status On Infants' And Toddlers' Mental And Motor Development, Steven Matley Wood

Thirty-two non-anemic children were assessed clinically, biochemically and anthropometrically at six months, one year and two years of age to investigate the relationship of iron status to mental and motor development. Using dietary history and dietary record instruments, dietary iron was estimated and compared to the National Food Consumption Survey (1985) and the Recommended Dietary Allowances (RDA) for corresponding age groups. The Bayley Scales of Infant Development (which assess mental and motor development) and the Caldwell Home Inventory (which evaluates the environmental stimuli) were performed and correlated with blood iron parameters, anthropometric measurements and dietary nutrient intakes.

X-ray flourescence (XRF) and atomic absorption spectrophotometry (AAS) measurements for manganese, iron, copper, and zinc were compared for 96 samples of 21 foods from different sources. Correlation coefficients were 0.94 for manganese, 0.99 for iron, 0.93 for copper, and 0.91 for zinc for XRF vs. AAS determinations.

Similiar comparisons were performed on 228 samples of fast foods purchased in Utah retail outlets. Correlation coefficients ranged from 0.91 for copper to 0.97 for iron and zinc. Comparisons of values generated by XRF for manganese, iron, copper, zinc, selenium, arsenic, and aluminum to values certified by the National Bureau of Standards indicated …

The effect of the incubation of zinc (Zn) applied to the soil on Zn uptake and the Zn concentrations in chemical extractants was studied. In a glasshouse experiment using a Zn-deficient gravelly sandy loam, the effect of recently applied Zn was compared with that of Zn incubated with the soil for 15 days at 40°C on growth and Zn uptake by navy beans (Phaseolus vulgaris cv. Gallaroy). At the second harvest (33 days after sowing), the dry weight of shoots of recently applied Zn was consistently higher than that of incubated Zn, except at the highest rate of 1 …

Organisms known to cause bovine mastitis, Enterococcus faecalis ssp. liquefaciens ATCC 27959, Staphylococcus aureus ATCC 29740, Streptococcus agalactiae ATCC 27956, Streptococcus equinus ATCC 27960, Streptococcus dysgalactiae ATCC 27957, Streptococcus uberis ATCC 27958, and the neotype Staphylococcus epidermidis ATCC 14990 were examined for their susceptibility to die small peptide antibiotic, nisin. Using a disc assay, minimum inhibitory concentrations of nisin ranged from 10 to 250 μg/ml among the strains. Examination of die antimicrobial effect of 50 μg/ml nisin in milk showed nisin inhibited all gram-positive pathogens tested.

Relationships between dietary nutrients and plasma and fecal estrone, estradiol-17β, testosterone, and plasma prolactin levels were studied in young Seventh-day Adventist men: 18 nonvegetarians (NV), 20 lacto-ovovegetarians (LOV), and 15 vegans (V). Blood samples and 3 d dietary records were obtained. Contemporaneously collected diet composites and stool samples were analyzed for fiber. The vegetarians consumed significantly more fiber than the omnivores, while NVs and LOVs consumed more saturated fat than the Vs. Although plasma steroid hormone status did not differ, the Vs had significantly higher fecal estrogen levels than the NVs or LOVs. Plasma prolactin levels were significantly higher in …

Three-day food records from a large group of marathon runners were analyzed and compared to various standards of dietary quality. Nutrient intake by the runners exceeded two-thirds the Recommended Dietary Allowance for all nutrients except for vitamin D and zinc in female runners. Energy and nutrient intake levels in the marathon runners were higher than those of the general US population except for fat and zinc in both males and females, and vitamin B12 in females. In general this group of runners consumed diets that would be considered more optimal than those of the general population. However, both caloric intake …
