The distinctive pathological marker of Parkinson’s Disease (PD) is the progressive death of neurons that produce dopamine; however, there are also major alterations in the production of quantities of other neurotransmitters, such as norepinephrine and serotonin that contribute to the signs, symptoms, neuropsychological manifestations of the diseases. PD patients can be divided into classes based on the manifestation of motor symptoms, type A, classified as tremor dominant, and type B PD, classified as akinetic. Background: Whole foods are readily available antioxidant source and provide beneficial macromolecules and phytochemicals, which may contribute to optimal health. However, the approach to examining whole foods rich in antioxidants to play either an equivalent or better role in defending exercise-induced oxidant stress have not yet been taken. Objective: The objective of this study was to compare the effects of 2 isocaloric preexercise beverages: an almond-raisin beverage and a commercial sports beverage in male endurance runners on selected antioxidant status markers.

Nutrient minerals are essential yet potentially toxic, and homeostatic mechanisms are required to regulate their intracellular levels. We describe here a genome-wide screen for genes involved in the homeostasis of minerals in Saccharomyces cerevisiae. Using inductively coupled plasma-atomic emission spectroscopy (ICP-AES), we assayed 4,385 mutant strains for the accumulation of 13 elements (calcium, cobalt, copper, iron, potassium, magnesium, manganese, nickel, phosphorus, selenium, sodium, sulfur, and zinc). We refer to the resulting accumulation profile as the yeast 'ionome'.

Effects Of The Implementation Of A Pilot Nutrition Education Program In A Rural Appalachian County., Leigh A. Davenport

The purpose of the study was to determine if nutrition knowledge would increase, indicated by improvements in pretest and posttest scores, following implementation of a nutrition lesson plan. The subjects included 532 fourth through eighth grade students from Johnson County, a rural county in northeast Tennessee. The lesson plans and pretests and posttests were developed to be appropriate for each grade level, with increased complexity in higher grades. The principal investigator graded the pretests and posttests and analyzed the data using SPSS. The results showed a significant improvement from pretests to posttests for all grades given a p-value of <0.05.

Background: While there is research on the effects of aerobic training on various aspects of mood state and nutrient intake, little is known of the effect of resistance training on these variables.
Purpose: To examine the effects of resistance training (RT) volume and variety on total energy (kcal) and macronutrient intake, and mood states in a healthy, untrained population.

A low melting fraction of milk fat (LMF), with a dropping point (MDP) of 16.7 °C, was encapsulated by freeze-drying emulsions formulated with trehalose or its blends with 30 wt% lactose or sucrose as hydrophilic phase, and with a mixed of 50 wt% of the palmitic sucrose esters (SE) β-170 and β-1670 as emulsifiers. Trehalose or trehalose/sucrose matrices were very efficient to encapsulate LMF (retention values were 82.8%± 3.2% and 90.5%± 3.7%, dry basis, respectively), whereas trehalose/lactose showed a significant decline in initial retention (42.5%± 2.5%, dry basis). There is interest in storing low-moisture foods for long periods of time for uses such as personal preparedness, disaster relief efforts and space travel. Pinto beans in restaurant-sized No. 10 cans are available in the retail market, but work is needed to determine the effects of long-term storage on quality. The objective of this research was to investigate the quality of retail-packaged pinto beans held at ambient temperatures up to 32 years. Fifteen samples of pinto beans packaged in No. 10 cans, which were treated to remove oxygen, were obtained from donors. Samples ranged from <1 to 32 years in age. Prior to cooking, pinto bean samples were soaked in water containing varying levels of baking soda to standardize textural attributes.

Americans do not receive enough n-3 fatty acids (F. A.) in their diets. Walnuts are good source of α-linolenic acid (ALA), while n-3 F.A. enriched eggs provide a dietary source of DHA. Whether ALA and DHA have equivalent effects modifying cardiovascular risk factors is not known. This study compared the changes in blood and erythrocyte membrane lipids in twenty free-living lacto-ovo vegetarians following the consumption of regular eggs (6/wk), n-3 F.A. enriched eggs (6/wk), or walnuts (6 oz/wk) in a triple crossover design.

Background: Caloric consumption in excess leads to weight gain. Consuming nuts, in particular almonds, on a regular basis would likely increase overall caloric intake due to their high fat content, assuming complete digestion and absorption. However, multiple studies report no significant change in body weight when subjects consume nut-rich diets.

The purpose of this study was to determine the effects of long term walnut consumption on plasma levels of tocopherols and the inflammatory mediators interleukin-1β (IL-1β ), interleukin-6 (IL-6), tumor necrosis factor-a (TNF-a) and Creactive protein (CRP) in healthy participants. Ninety participants were recruited into a 12-month randomized crossover intervention study, which consisted of two phases, the walnut supplemented diet and the habitual diet. The purpose of this study was to determine if cardiac nutrition education can affect dietary patterns of subjects participating in Cardiac Rehabilitation. Surveys, a pretest given prior to the first cardiac class and a second identical test, administered following cardiac rehabilitation classes, were conducted. Fifty-five randomly selected participants from the outpatient Cardiac Rehabilitation Program were initially given the posttest. Thirty-three of the 55 surveys were returned. Cardiac health classes offered by various health professionals included cardiac nutrition education, group nutrition classes, guest lectures on nutrition, and cooking demonstrations. The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this study was to determine the needs and relationships of high-risk community members in Cocke County Tennessee to food sources. Cocke County was chosen as the representative county in this pilot study due its high percentage of residents living at or below the poverty level, which can lead to hunger and food insecurities. The purpose of this research was to evaluate whether serum prealbumin levels would serve as a predictor of hospital length of stay for elderly orthopedic patients who underwent hip replacement surgery. The study consisted of a set of 54 patients admitted to a hospital in Bristol, Tennessee. Patients with depleted prealbumin levels, low to low/normal prealbumin levels, or normal prealbumin levels were analyzed. Data collected from a retrospective chart review included: age, length of stay, serum glucose, sodium, potassium, hematocrit, hemoglobin, BUN, creatinine, WBC, prealbumin, and post operative diet consumption. An ultrasonic technique was developed to study the crystallization process of edible fats on-line. A chirp wave was used instead of the conventional pulser signal, thus achieving a higher signal-to-noise ratio. This enabled measurements to be made in concentrated systems [≈20% solid fat content (SFC)] through a 8.11-cm thick sample without significant signal loss. Fat samples were crystallized at 20, 25, and 30°C at a constant agitation rate of 400 rpm for 90 min. The crystallization process was followed by ultrasonic spectroscopy and a low-resolution pulsed nuclear magnetic resonance spectrometer. To determine the effects of a targeted curriculum and dual program involvement on childhood overweight status among low-income preschool children, a nutrition curriculum was developed. Three Special Supplemental Food Program for Women Infants and Children (WIC) clinics participated in the study: the control clinic, a clinic which received the targeted curriculum, and a third clinic which received the targeted curriculum and referred participant families to the Expanded Food and Nutrition lll Education Program (EFNEP). Participants were followed for six months. Data collected included anthropometrics, dietary intake, and parental behaviors.

This study determined antioxidant and sensory effects of cinnamon, cloves, fennel, pepper, and star anise (Chinese 5-spice ingredients) in cooked ground beef. In experiment 1, thiobarbituric acid (TBA) values of cooked samples were measured during refrigerated storage. In experiment 2, trained panelists evaluated cooked samples for rancid, beef, and spice flavor intensity. Total aerobic plate counts were also measured.
Mean TBA values were high (3.4) for control samples. In previous studies, TBA values >1.0 were associated with unacceptably rancid cooked meats. At the lowest spice level of 0.1% of meat weight, all spices except pepper had lower TBA values than …

Approximately 10% of cystic fibrosis (CF) cases remain undiagnosed until age 18 or later and medical professionals are still unclear about the needs of these individuals. Adults with CF must either adapt to life with a chronic disease or transition into adulthood with CF. The purpose of this study was to address the impact of age-at-diagnosis on quality of life in a CF adult population.

The aim of this study is to explore international students’ perceptions of food service at Montclair State University. Twelve international students were recruited to participate in this quick ethnography. Seven of the twelve participants were males and five were females. Students came from a variety of ethnic backgrounds including Asian/Pacific Islander, African, Hispanic and White, non-Hispanic. Inclusion criteria were that the students must be considered international students by the university and must be able to effectively communicate in English.
