Assessment Of Whole Grain Intake And Health Correlates In An Aging Population, Alexis Howard May 2006

Assessment Of Whole Grain Intake And Health Correlates In An Aging Population, Alexis Howard

Senior Honors Projects

Research suggests that whole grain intake may decrease the risk of heart disease, type II diabetes, hypertension, obesity, and many types of cancer. The overall goal of this work is to increase the health status of an older adult population through comprehensive nutrition risk assessment and exposure to tailored nutrition education interventions. This project involved assisting in baseline and post-intervention assessment of the knowledge, attitude, and intake of whole grain foods within a convenience sample of fifty-eight older adults residing in low-income housing sites across Rhode Island. Anthropometry, including height, weight, waist circumference, and blood pressure was measured, along with …

Type 2 Diabetes And The Risk Of Osteoporotic Hip Fracture In Utah Men And Women, Megan Bunch May 2006

Type 2 Diabetes And The Risk Of Osteoporotic Hip Fracture In Utah Men And Women, Megan Bunch

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

Prior studies have unequivocally established a consistent association between osteoporotic hip fracture risk and type 2 diabetes mellitus. One reason this association still remains unclear is primarily due to the limited amount of research conducted in this area. The Utah Study of Nutrition and Bone Health (USNBH) is a case-control study conducted in Utah during the period of 1997-2001 to determine risk factors for osteoporotic hip fracture. All study participants (n = 2590) were determined from Utah residents 50-90 years of age. Cases were determined from 18 Utah hospitals during 1997-2001. Age and gender-matched controls were randomly selected from the …

Milk Intake In Early And Late Adulthood And Risk Of Osteoporotic Hip Fractures In Utah, Melanie Jean Slavens

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

The relationship between milk intake and risk of osteoporotic fractures is uncertain. Associations between milk intake and milk avoidance in relation to osteoporotic hip fracture were examined in the Utah Study of Nutrition and Bone Health (USNBH), a statewide case-control study. Cases were ascertained at Utah hospitals treating 98 percent of hip fractures during 1997-2001 and included 1188 men and women aged 50-89 years. Age- and gender-matched controls were randomly selected from Utah driver's license and Medicare databases (N= 1324). In-person interviews were conducted and participants reported frequency of milk intake per week at age 18 and during pregnancy among …

A Probabilistic Approach To Model The Nonisothermal Nucleation Of Triacylglycerol Melts, Alejandro G. Marangoni, Thomas C. Aurand, Silvana Martini, Michel Ollivon Apr 2006

A Probabilistic Approach To Model The Nonisothermal Nucleation Of Triacylglycerol Melts, Alejandro G. Marangoni, Thomas C. Aurand, Silvana Martini, Michel Ollivon

Nutrition, Dietetics, and Food Sciences Faculty Publications

Crystallization studies are usually performed under isothermal conditions. Kinetic parameters characterizing the isothermal nucleation and growth processes can be obtained using classical nucleation and growth models. However, crystallization regimes found in nature, as well as those used in food and pharmaceutical processing, are rarely isothermal. Focusing on the nucleation stage, the approach followed in this work was to define a new parameter to characterize the driving force of nucleation, the supercooling-time exposure (β), which not only depends on the difference between the melting temperature (Tm) and the onset temperature of nucleation (Tc) ΔTc but also on the induction time of …

The Water Vapor Permeability Of Polycrystalline Fat Barrier Films, Silvana Martini, D. A. Kim, M. Ollivon, A. G. Marangoni

Nutrition, Dietetics, and Food Sciences Faculty Publications

The water vapor permeability of fat barrier films has been associated with structural characteristics such as polymorphism, crystal size, and chemical composition, among others. However, no mechanistic models have been proposed to describe this relationship. In this study, we have determined the effects of processing conditions on the structure and physicochemical characteristics of four fats and their relationship to water vapor permeability. Results suggest that the solids' volume fraction and the domain size of the fat crystals seem to be the most important factors controlling water vapor migration. Moreover, materials with relatively large crystalline domains will yield malleable films with …

Science-Based Organic Farming 2006: Toward Local And Secure Food Systems, Charles A. Francis, Katja Koehler-Cole, Twyla Hansen, Peter Skelton Jan 2006

Science-Based Organic Farming 2006: Toward Local And Secure Food Systems, Charles A. Francis, Katja Koehler-Cole, Twyla Hansen, Peter Skelton

Publications from the Center for Applied Rural Innovation (CARI)

Organic farming includes growing food and fiber—animals, agronomic crops, horticultural fruits and vegetables, related products—as one dynamic and rapidly evolving component of our complex U.S. food system. Even as more farmers are moving toward organic certification and participation in an environmentally sound and economically lucrative market, questions arise about the long-term social impacts and sustainability of a set of practices that has gone from a movement to an industry. Consolidations in the organic trade have brought multinational corporations to the table, as they have observed a grassroots activity that has grown by 20% per year for the past two decades, …

Project Grow: A Plan To Grow An Edible Garden In A Poverty-Affected School To Improve Parent Involvement And Increase Student Knowledge Of Nutrition, Wendy Michelle Wickersham

All Graduate Projects

Growing an edible garden in a poverty-affected school serves multiple purposes. It provides a way to increase parent involvement at the school while increasing student knowledge of nutrition. This comprehensive plan prepares a school to implement a school garden run solely by teacher, students, parents, and community volunteers. The potential results are that parents will get involved at their child's school while the students can learn about nutrition along with their families.

Department of Nutrition and Health Sciences: Faculty Publications

Cirrhosis with ascites is associated with impaired renal function accompanied by sodium and water retention. Although it has been suggested that mediators such as nitric oxide play a role in the development of renal failure in this situation, other mechanisms underlying the process are not well understood. This study examined the role of oxidative stress in mediating renal damage during the development of cirrhosis in order to understand mechanisms involved in the process. It was shown that carbon tetrachloride– or thioacetamide-induced cirrhosis in rats results in oxidative stress in the kidney as seen by increased lipid peroxidation and protein oxidation, …

Department of Nutrition and Health Sciences: Faculty Publications

Spontaneous bacterial peritonitis is a major cause of mortality after liver cirrhosis. Altered permeability of the mucosa and deficiencies in host immune defenses through bacterial translocation from the intestine due to intestinal bacterial overgrowth have been implicated in the development of this complication. Molecular mechanisms underlying the process are not well known. In order to understand mechanisms involved in translocation of bacteria, this study explored the role of oxidative stress in mediating changes in intestinal mucosal glycosylation and luminal bacterial content during cirrhosis. CCl4-induced cirrhosis in rats led to prolonged oxidative stress in the intestine, accompanied by increased …

Enhanced Nutty Flavor Formation In Cheddar Cheese Made With Malty Lactococcus Lactis Adjunct Culture, M. E. Carunchia Whetstine, M. A. Drake, Jeff Broadbent, Donald J. Mcmahon Jan 2006

Enhanced Nutty Flavor Formation In Cheddar Cheese Made With Malty Lactococcus Lactis Adjunct Culture, M. E. Carunchia Whetstine, M. A. Drake, Jeff Broadbent, Donald J. Mcmahon

Nutrition, Dietetics, and Food Sciences Faculty Publications

Nutty flavor in Cheddar cheese is desirable, and recent research demonstrated that 2- and 3-methyl butanal and 2-methyl propanal were primary sources of nutty flavors in Cheddar. Because malty strains of Lac-tococcus lactis (formerly Streptococcus lactis var. malti-genes) are characterized by the efficient production of these and other Strecker aldehydes during growth, this study investigated the influence of a malty L. lactis adjunct culture on nutty flavor development in Cheddar cheese. Cheeses made with different adjunct levels (0, 10(4) cfu/mL, and 10(5) cfu/mL) were ripened at 5 or 13 degrees C and analyzed after 1 wk, 4 mo, and 8 …

Mechanomyographic Amplitude And Frequency Responses During Dynamic Muscle Actions: A Comprehensive Review, Travis W. Beck, Terry J. Housh, Joel T. Cramer, Joseph P. Weir, Glen O. Johnson, Jared W. Coburn, Moh H. Malek, Michelle Mielke Dec 2005

Mechanomyographic Amplitude And Frequency Responses During Dynamic Muscle Actions: A Comprehensive Review, Travis W. Beck, Terry J. Housh, Joel T. Cramer, Joseph P. Weir, Glen O. Johnson, Jared W. Coburn, Moh H. Malek, Michelle Mielke

Department of Nutrition and Health Sciences: Faculty Publications

The purpose of this review is to examine the literature that has investigated mechanomyographic (MMG) amplitude and frequency responses during dynamic muscle actions. To date, the majority of MMG research has focused on isometric muscle actions. Recent studies, however, have examined the MMG time and/or frequency domain responses during various types of dynamic activities, including dynamic constant external resistance (DCER) and isokinetic muscle actions, as well as cycle ergometry. Despite the potential influences of factors such as changes in muscle length and the thickness of the tissue between the muscle and the MMG sensor, there is convincing evidence that during …
