Based on a case study administered by Dr. Charlotte Gerson, an IDDM patient referred to as R.H. reversed hyperglycemic symptoms within ten weeks while adhering to a diet of mainly vegetables and some low-glycemic index fruits. R.H. also ingested mineral supplements and underwent multiple coffee enemas each day (Gerson & Bishop, 2007, p. 56). This self-study hypothesizes that diet alone has a positive correlation coefficient with hyperglycemic blood glucose levels in type-1 diabetics (IDDM). Due to their relative chemical stability and ubiquity in the environment, chlorinated organic contaminants such as polychlorinated biphenyls (PCBs) pose significant health risks and enduring remediation challenges. Engineered nanoparticles (NPs) provide a novel platform for sensing/remediation of these toxicants, in addition to the growing use of NPs in many industrial and biomedical applications, but there remains concern for their potential long-term health effects. This laboratory study examined the effects of acetaminophen overdose in normal fed and high-fat fed female mice. Forty female mice were placed on normal and high-fat diets at 4 weeks old. When the mice were significantly different in weight (between 6 and 9 months old), half the mice were dosed with acetaminophen. These mice were daily given an overdose of acetaminophen for 14 days. The dose used was 300 mg/kg mouse (LD50 = 338 mg/kg). The control group was given 10 µl water/g mouse. Levels of serum glutamate dehydrogenase (GDH) were measured to indicate liver damage. Vitamin D deficiency in the Unites States has become more prevalent in recent years. Research has shown that environmental chemicals such as flame-retardants induce hepatic enzymes in the cytochrome P450 family such as CYP24 and CYP3A that are important in vitamin D metabolism. To determine if exposure to one class of flame-retardants known as polybrominated diethyl ethers (PBDEs) promotes vitamin D deficiency, 15 rats consumed a diet marginally deficient in Vitamin D - 85 IU Vitamin D/kg diet - for 56 days. Despite the increasing use of dietary patterns (DP) to study diet and health outcomes, relatively few studies have examined the reliability of DP using different dietary assessment methods. Reduced-rank regression (RRR) is an emerging statistical method that incorporates a priori information to characterise DP related to specific outcomes of interest. Almost all previous studies examining the associations between glycaemic load (GL) and metabolic syndrome risk have used a daily GL value. The daily value does not distinguish between peaks of GL intake over the day, which may be more closely associated with the risk of the metabolic syndrome. The aim of the present study was to investigate the cross-sectional associations between daily and mealtime measures of GL and metabolic syndrome risk, including metabolic syndrome components, in adolescents. Children’s dietary exposure to metals has received limited attention in Australia. This study undertook a market basket survey and analysed 253 food and beverages for metals. These data were used in conjunction with recent average diet data for children in Western Australia to model dietary metals exposure, with mean metals intakes calculated for boys and girls aged 8, 12, 13 and 16 years. Results show that for some metals, including cadmium, nickel and manganese, dietary intake guidelines have been exceeded in younger children. Alzheimer’s disease (AD), the most common form of senile dementia, currently affects over 35 million people worldwide. While there is no cure or effective treatment, early intervention programs hold considerable promise. Following particular dietary patterns represents one potential intervention strategy accessible to all.
Results from previous studies investigating the association of diet, cognition and biomarkers of AD are inconsistent: Positive results have been reported (1-7), whilst others have shown no associations. Dietary flavanols have been associated with reduced oxidative stress, however their efficacy in promoting recovery after exercise induced muscle damage is unclear. This study examined the effectiveness of acute consumption of cocoa-flavanols on indices of muscle recovery including: subsequent exercise performance, creatine kinase, muscle tenderness, force, and self-perceived muscle soreness. Eight endurance-trained athletes (VO2max 64.4 ± 7.6 mL/kg/min) completed a downhill running protocol to induce muscle soreness, and 48-h later completed a 5-K (kilometer) time trial. Controlling blood lipids is a major public health challenge of our time. The pleiotropic hormone-like polypeptide fibroblast growth factor 21 (FGF21) was recently recognized as a potent modulator of lipid and glucose metabolism and a promising treatment strategy for obesity related metabolic disorders, including dyslipidemia. A cost effective and practical alternative to the administration of recombinant FGF21 is to stimulate endogenous FGF21 production through diet. Our research identified (R)-a-lipoic acid (LA), a naturally occurring enzyme cofactor and dietary molecule found in green leafy vegetable and red meat, as an inducer of FGF21 expression. Biotin feeding in a Balb/c mouse model of breast cancer suggest that the tumor load is ~100% greater in biotin-deficient mice compared with biotin-sufficient controls, and that the increase is associated with metastasis rather than new tumors. The oncogenes c-Myc and COX-2 are implicated in cancer metastasis, and their expressions are repressed by binding of MBP-1 to the promoter. Mass spectrometry studies, designed to discover novel biotin-containing proteins, suggest that lysine residues K10 and K12 in the c-Myc promoter binding protein (MBP-1) contains covalently bound biotin (MBP-1bio). Adenocarcinoma of pancreas is recognized for its poor prognosis, as it progresses asymptomatically and is rarely diagnosed at early stage. According to American cancer society pancreatic cancer, it has lowest survival rate in all cancer types, with less than 6% five year survival rate. Surgical resection is only possible for 20% of diagnosed cases and current chemotherapy has only 15% response rate. Even the most favored drug, Gemcitabine, increases survival time only by a few months, depending on the stage at diagnosis. This research focuses on the health impacts of participation in the National School Lunch Program, a program providing free and reduced-cost lunches for income-eligible students and minimally subsidizing lunches for income-ineligible students. In the past decade, increasing incidence of childhood obesity, particularly among low-income individuals has drawn scrutiny over the NSLP's role in the health of student-aged children.

The amount and type of antioxidants present in raspberries is dependent upon cultivar, ripeness, and growing conditions. Previous research on raspberry jam has reported some color, antioxidant, and flavor loss after processing and storage, though it is unknown to what extent similar changes will occur in raspberries grown in Utah. The purpose of this study was to develop and implement a culturally appropriate food safety educational program using the conceptual change teaching method while preparing a meal. The food safety educational program was based on the FightBac!™ concepts (CLEAN, SEPARATE, COOK AND CHILL). Quantitative and qualitative date were collected, compared, and analyzed. Two pilot studies were conducted with Native American participants on non-reservation sites in Omaha and Lincoln. INTRODUCTION: In general, most college-aged students live highly, and newly, independent lives. Although campuses offer wide varieties of food choices, most choices do not meet the standards set by the RDA or DRIs, per NHANES 1999-2000.
METHODS: In order to document these eating patterns, 1001 male (n=379) and female (n=622) college-aged students quantified dietary intake for three consecutive days using the food log method. Purpose: The purposes of this study were first to assess the vitamin D status and bone mineral density (BMD) in male and triathletes (N=15), female triathletes (N=13), and non-athletes (N=14), and to determine if circulating vitamin D was correlated with body composition, BMD, dietary calcium and vitamin D intake in triathletes. The second purpose was to determine if triathletes have a different level of serum vitamin D, body composition, BMD, dietary calcium and vitamin D intake then non-athletes. Research indicates that obesity is linked to socio-economic factors and genetics. Both have an impact on whether a person is or becomes obese. The paper focuses on the impact of the change in food supply along with socio-economic factors, specifically access, time, and cost, and how these factors have affected the American obesity epidemic. Background: Increasing evidence suggests that oral microbiota play a pivotal role in chronic diseases, in addition to the well-established role in periodontal disease. Moreover, recent studies suggest that oral bacteria may also be involved in carcinogenesis; periodontal disease has been linked several cancers. In this study, we examined whether lifestyle factors have an impact on antibody levels to oral bacteria.

We estimated the vulnerability of juvenile June suckers to predation by a growing cohort of juvenile white bass. Also, habitat preference of juvenile white bass (open versus vegetated habitats) in the presence and absence of adult white bass was determined experimentally. Juvenile white bass preferred vegetated habitats similar to juvenile June suckers. June suckers are most vulnerable to juvenile white bass immediately after they hatch and move downstream into Utah Lake. Vulnerability decreases during the summer until by the end of the growing season. Only a small fraction of the juvenile June sucker population is potentially vulnerable to juvenile white …
