Purpose: It has been reported that youth who engaged in more screen time had lower quality of life scores compared to those that were more physically active. Furthermore, increased sedentary behavior increases health risks particularly the risk for obesity. A cross-sectional analysis was completed to examine the relationship between healthrelated quality-of-life (HRQOL) and accelerometer-measured sedentary time (ST) and physical activity (PA) in 9-10-yearold youth who were recruited for the family-based, childhood obesity intervention, iCook 4-H. It was hypothesized that objectively measured ST would be negatively correlated and PA would be positively correlated with HRQOL.

For the past two years, this author has been the program director for a volunteer group called Food Recovery. Food Recovery collaborates with UConn Dining Services to collect unsold food items from UC Cafes on campus, and donates them to the Covenant Soup Kitchen in Willimantic, CT. The majority of the donations provided by Food Recovery are pre-packaged sandwiches and salads, that are made fresh daily by Dining Services staff and are sold in UC Cafes to the UConn community. The Covenant Soup Kitchen supports people experiencing food insecurity in Willimantic, by providing multiple hot meals throughout the week.

Individuals with intellectual and developmental disabilities (IDD) are prone to certain diseases in their lifetime, such as osteoporosis. Absorption of calcium is essential to maintaining good bone health and preventing osteoporosis. This study examined primary care providers’ (PCPs) choice of calcium supplementation, as well as type of calcium supplementation, and the relationship between variables in the IDD population. Ten PCPs were asked to complete a 14-question web-based survey, with five surveys completed. Calcium citrate was the preferred supplement among respondents at 50%. Public health researchers have proven how crucial medically tailored meals are to those fighting such chronic diseases. Open Arms is a local nonprofit that started in 1986. They make and deliver meals, free of charge, to people with life-threatening illnesses.

The process of partial hydrogenation produces trans fats and the fats that undergo this process are called partially hydrogenated fats (PHF). Clinical studies have shown a strong association between PHF and coronary heart diseases. In 2015 The U.S. Food and Drug Administration removed the Generally recognized as safe or "GRAS" status of PHF. These fats were used in confectionary, margarines, shortenings, doughnuts, cookies, cakes, etc. The PHF serve a function in food by providing a higher shelf life and a desired harder structure due to their higher melting point. Food pantry clients are at an increased risk of poor diet quality which can lead to a variety of chronic diseases. Identifying nutrition interventions that help improve the dietary intake of this vulnerable population is important to help improve health outcomes. People often base their behaviors on social norms—what they think others do or approve of. This is likely true of fruit and vegetable (FV) intake as well. College students typically don’t get enough FV. We attempted to encourage FV eating by providing students with messages or demonstrations that eating FV is normal. First, we tried to encourage FV intake by providing students with messages regarding the average skin carotenoid concentration and where they fit within their peers (Chapter II). Neurovascular integrity, including cerebral blood flow (CBF) and blood-brain barrier (BBB) function, plays a major role in determining cognitive capability. Recent studies suggest that neurovascular integrity could be regulated by the gut microbiome. The purpose of the study was to identify if ketogenic diet (KD) intervention would alter gut microbiome and enhance neurovascular functions, and thus reduce risk for neurodegeneration in young healthy mice (12–14 weeks old). Here we show that with 16 weeks of KD, mice had significant increases in CBF and P-glycoprotein transports on BBB to facilitate clearance of amyloid-beta, a hallmark of Alzheimer’s disease (AD). Video-based food education and demonstration is increasingly popular as a method of reaching audiences. Meanwhile, members of Community Supported Agriculture (CSA) programs often seek help with utilizing the produce in their shares and could potentially benefit from visual food demonstration. The goal of this pilot study was to determine the effectiveness and utilization of visual food demonstrations by CSA members in St. Joseph, Minnesota. An initial online survey gauged participant interest in demonstration videos. Background A majority of the population struggles with body image everyday. However, college students/young adults seem to struggle the most. In a recent Psychology Today Body Image Survey, 56% of college-aged women and 43% of college-aged men were dissatisfied with their overall appearance. Objective To assess how accurate college-aged males and females are in estimating own body images by measuring perceived vs. actual BMI and to analyze if a participant’s nutritional background knowledge affects the accuracy of BMI prediction. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

Feeding practices over the first several years of a child’s life can critically influence development. The purpose of this study was to examine associations between feeding practices and growth and neurodevelopmental outcomes at 36 months of age among children from low- and low-middle-income countries (LMIC).

The aim of this study is to assess the nutrition situation in terms of knowledge, attitude and practices (KAP) among recently delivered Syrian refugee women and to identify nutrition related KAP problems of this vulnerable population. An analytical descriptive cross-sectional study was conducted on a non-randomized sample of one hundred recently delivered Syrian women from refugee background aged 18 years old and above who were admitted for delivery to the obstetric unit of a governmental hospital located in Beirut, Lebanon. Introduction:
Food insecurity prevalence in Washington County, TN is 14.3% yet 61% of SNAP eligible residents are food insecure. Food insecurity is associated with inadequate consumption of fruits and vegetables, as well as increased risk of chronic disease. Tennessee ranks 47th in the Nation with only 6.7% consuming the recommended fruits and vegetable intake. The Farmacy Pilot Program was developed to encourage increased consumption of produce and to reduce food insecurity among SNAP recipients.

Ulcerative colitis (UC) is a disabling inflammatory bowel disease. UC is characterized by chronic, relapsing inflammation of the colon and rectum. Current treatments such as monoclonal antibodies against TNF-α, IL-6, IL-12/p40, adhesion molecules, Janus kinases (JAK) inhibitors have side effects or lose their effects over time. Alternative approaches with fewer side effects for patients are needed. Montmorency tart cherries (Prunus cerasus) are a good source of anti-inflammatory flavonoids. The purpose of this study was to determine if the Female Athlete Screening Tool (FAST) is a valid indicator of the three physical components of Female Athlete Triad (FAT), malnutrition, amenorrhea, and low bone mineral density, and if administration of the FAST can be used as a time- and cost-effective way to identify FAT. Participants completed the FAST, the Menstrual Status Questionnaire, and had a blood sample drawn. Interpretation of the total FAST score placed participants in one of three conditions: normal, subclinical disordered eating, or clinical eating disorder. Background. Role models can have a profound impact on an individual’s development and lifelong behaviors. However, there are gaps in research when it comes to the impact of role models among young adults, particularly related to health behaviors. Previous research has primarily focused on youth, leaving a gap of knowledge surrounding the developmental life stage of young adulthood. Physical activity (PA) and exercise aid in prevention and treatment of obesity and its comorbidities. Previous research has demonstrated a J-shaped curve between activity level and food intake, but minimal research examines whether PA and exercise affect food choices. As such, the aim of this study was to determine the relationship between habitual PA and exercise with food choices. 174 participants completed an electronic survey involving a series of binary choices among food options (aided by visual food cues) with varying reward values and time points. The range of different contexts in which children learn and develop dietary and physical activity habits varies greatly, yet there is limited research on the role of the family structure and parenting style in the development of childhood obesity. CHAMPS (Child Health and Methods of Parenting Study), was designed to explore the relationships between parenting style, family structure, and child health status through a new lens and novel application of the Unified Theory of Behavior model. Not So Bizarre Foods is a summer-term program designed for upper-level Culinary Arts students from Johnson and Wales University, Providence. Unlike other programs serving students in the Culinary Arts, this unique model includes multiple locations and an internship. The proposed program features three month-long modules based in Lyon, France; Munich, Germany; and Naples, Italy allow for comparison across locations. Drawing from the theoretical frameworks of Kolb, Vygotsky, and Mezirow, the experiential, transformative curricular design combines an academic seminar, a practical seminar, and an internship placement, emphasizing the interplay between history, culture, and culinary tradition, a concept inspired by the popular …
